2 tablespoons chopped green bell peppers
2 tablespoons ketchup
1 tablespoon prepared horseradish
1 tablespoon prepared mustard
salt and pepper
1 lb ground beef
4 slices smoked mozzarella cheese or 4 slices regular mozzarella cheese
4 whole wheat hamburger buns, toasted
fresh basil leaf
1/2 cup purchased roasted red pepper, strips
1 tablespoon finely chopped pitted olive
2 teaspoons olive oil
1/2 teaspoon dried thyme
1/4 teaspoon black pepper

Steps:

  • To make relish: add the relish ingredients to the container of a food processor; cover and pulse until coarsely chopped; cover and chill for 2-3 hours.
  • To make burgers: stir together the onion, bread crumbs, and bell pepper in a mixing bowl.
  • Add the ketchup, horseradish, mustard, salt and pepper to taste; stir to mix.
  • Add the ground beef; stir to mix.
  • Shape mixture into 4 patties.
  • Grill patties over medium heat for 7 minutes; turn and grill 7-11 more minutes or until done.
  • Top patties with a slice of cheese during the last 2 minutes or grilling time.
  • Serve patties on toasted whole wheat buns with red sweet pepper relish and fresh basil leaves.

1 1/4 pounds ground beef (80-percent lean)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1/4 cup shredded mozzarella
4 English muffins, halved horizontally and toasted
1 tomato, sliced and lightly salted
Perfect Basil Sauce, recipe follows
2 tablespoons grated Parmesan
1 green onion, chopped
3 tablespoons roughly chopped fresh basil
1 large clove garlic, minced
1/2 cup prepared mayonnaise
3 tablespoons sour cream
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper

Steps:

  • Quarter the beef into even portions. Form into burgers, indenting the middle slightly with your thumb. Season with salt and pepper, and brush lightly with vegetable oil. Cook on a hot grill until charred on the outside and pink on the inside, about 4 minutes per side. Two minutes before removing the burgers, top the burgers with the mozzarella cheese.
  • Place the toasted muffins on a serving platter. Place the tomato slices on the bottom, and top each with cooked patties. Spread a tablespoon or two of the basil sauce on each bun top and sprinkle with a little Parmesan cheese. Serve extra basil sauce on the side for dipping.
  • Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.

1 cup fresh or store-bought pesto, recipe follows
1/4 cup grated Parmesan
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
One 7 to 8-ounce ball fresh mozzarella, sliced into eight 1/4-inch-thick slices, patted dry with paper towels
1/2 cup mayonnaise
1/4 cup fresh or store-bought pesto
Extra-virgin olive oil for drizzling
Eight 3-inch-square pieces of tomato or plain focaccia bread, halved, or 8 hamburger buns, halved
4 medium tomatoes, sliced into 1/4-inch-thick rounds (16 slices)
2 packed cups fresh basil leaves
1 cup grated Parmesan
1/4 cup pine nuts, toasted
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 cloves garlic, smashed
1/4 cup extra-virgin olive oil

Steps:

  • For the burgers: Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Combine the beef, pesto, Parmesan, salt and pepper in a large bowl. Form the mixture into eight 4-inch-diameter patties, each about 3/4-inch thick. Grill for 5 minutes. Turn the burgers over and place a slice of mozzarella on top. Cook for about 5 minutes longer until the burgers are cooked through and the cheese is slightly melted. Allow the burgers to rest for 5 minutes.
  • For the pesto mayonnaise: In a small bowl, combine the mayonnaise and pesto until smooth.
  • To assemble the burgers: Drizzle the cut side of the bread with olive oil and grill until lightly toasted, 1 to 2 minutes. Spread the pesto mayonnaise over the bottom halves of the grilled bread. Place the burgers on top and add 2 tomato slices. Add the top halves of the bread and serve.
  • Bake in a preheated 350 degrees F oven until lightly toasted, 6 to 8 minutes. Cool completely before using. Combine the basil, Parmesan, pine nuts, salt, pepper and garlic in a food processor. Pulse until finely chopped. With the machine running, gradually add the olive oil until the mixture forms a smooth paste.

4 thick slices tomato

This recipe is a great twist on the classic recipe for hamburgers, and they smell great on the grill. These burgers could also be made on the stove or on a small indoor grill. I got this recipe out of the local newspaper. My boyfriend loves hamburgers so this caught my eye. This recipe is so easy and dinner is ready in about 10 minutes. We were very pleased with the flavor and juiciness the burgers had. I'd call it the burger's sophisticated older brother! For a quick, inexpensive meal using staple ingredients, this is a nice change from a regular hamburger.

1/4 cup red onion, minced
1/4 cup Italian seasoned breadcrumbs
1/4 cup dry red wine

8 slices monterey jack cheese (optional)
8 hamburger buns, split

Steps:

  • In a large bowl, combine the basil, onion, bread crumbs, wine and garlic salt. Crumble beef over mixture and mix well. Shape into eight patties.

  • In a food processor, combine the basil with the almonds and garlic and pulse until the almonds are finely chopped. Add the 1/2 cup of olive oil and process to a paste. Add the grated Pecorino and pulse to combine. Season the pesto with salt and pepper. You should have about 1 cup.
  • Transfer 1/4 cup of the pesto to a bowl. Add the ground chuck and ground sirloin and a pinch of salt and gently knead to blend. Form the mixture into six 4-inch patties, about 3/4 inch thick. Brush the burger patties lightly with olive oil.
  • Light a grill and oil the grates. Grill the burgers over moderately high heat for 3 minutes. Flip the burgers, top them with the mozzarella slices and close the grill. Cook for 3 minutes longer for medium-rare burgers. Grill the buns until lightly toasted, then spread some of the pesto on the bottoms. Top with the burgers, the tomatoes and the remaining pesto.
