8 ounces mozzarella cheese, shredded
1/3 cup butter, softened
2 cloves garlic, minced
1 teaspoon dried oregano
1/4 teaspoon black pepper

Steps:

  • Mix all ingredients except bread.
  • Slice bread partially at 1 inch intervals; be careful to not cut all the way through loaf.
  • Spread 1 side of each slice with the cheese mixture.
  • Wrap in foil.
  • Bake at 425F for 25 minutes; serve hot.
  • You may also use 2 TB of chopped fresh parsley instead of oregano.

2 cups flour
2 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 egg
1/4 cup melted butter
1 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Steps:

  • Preheat your oven to 350 degrees.
  • In a bowl whisk together the flour, baking powder, baking soda, sugar and salt.
  • In a separate bowl, whisk together the buttermilk and egg.
  • Whisk the melted butter into the buttermilk mixture.
  • Add the buttermilk mixture to the flour mix, and gently combine. Don't over mix the batter.
  • Stir in the shredded and parmesan cheeses.
  • Line a 9 x 5 baking tin with parchment paper and bake for 1 hour, or until a toothpick inserted in the centre of the bread comes out clean.

1 teaspoon garlic salt
¼ teaspoon dried rosemary
⅛ teaspoon dried basil
⅛ teaspoon dried thyme
⅛ teaspoon garlic powder
1 tablespoon grated Parmesan cheese
1 (1 pound) loaf French bread, halved lengthwise

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
  • Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
  • Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

1-1/2 cups warm water (110° to 115°)
1/2 cup warm 2% milk (110° to 115°)

3 tablespoons plus 1/4 cup butter, softened, divided
1 teaspoon salt
4-1/2 to 5-1/2 cups all-purpose flour
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic salt

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, 3 tablespoons butter, salt and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. I made this bread last weekend to serve with homemade lasagna because garlic bread with cheese was $2.69 per loaf! I decided that was rather ridiculous and it's not that tasty, so I decided to make my own. This is what I came up with and it's very simple, but one of the best breads I've served. Add more or less garlic to suit your own tastes.

1 loaf sourdough bread, split lengthwise
1/2 cup butter
1/2 teaspoon minced garlic
1 cup mozzarella cheese, shredded
1 teaspoon parsley flakes, fresh or dried
4 tablespoons parmesan cheese

Steps:

  • Combine butter and garlic and melt in microwave.
  • Add the parsley to the butter and using a pastry brush, liberally brush both sides of the bread.
  • Sprinkle the parmesan cheese on the bread and then sprinkle the mozzarella cheese on top.
  • Bake under the broiler for approximately 2-3 minutes or until golden brown and bubbly.
