A wonderfully aromatic North African lamb casserole with a citrus tang - great for dinner parties

3 onions , peeled
500g minced lamb
zest and juice 1 unwaxed lemon , quartered
1 tsp ground cumin
1 tsp ground cinnamon
pinch cayenne pepper
small bunch flat-leaf parsley , chopped
2 tbsp olive oil
thumb-sized piece ginger , peeled and grated
1 red chilli , deseeded and finely chopped
pinch saffron strands
250ml lamb stock
1 tbsp tomato purée
100g pitted black kalamata olive
small bunch coriander , chopped
couscous or fresh crusty bread, to serve

Steps:

  • Put the onions in a food processor and blitz until finely chopped. Put the lamb, lemon zest, spices, parsley and half the onions in a large bowl, and season. Using your hands, mix until well combined, then shape into walnut-sized balls.
  • Heat the oil in a large flameproof dish, or tagine with a lid, then add the remaining onions, ginger, chilli and saffron. Cook for 5 mins until the onion is softened and starting to colour. Add the lemon juice, stock, tomato purée and olives, then bring to the boil. Add the meatballs, one at a time, then reduce the heat, cover with the lid and cook for 20 mins, turning the meatballs a couple of times.
  • Remove lid, then add the coriander and lemon wedges, tucking them in between the meatballs. Cook, uncovered, for a further 10 mins until the liquid has reduced and thickened slightly. Serve hot with couscous or fresh crusty bread.

1 gallon tomato sauce
1/2 cup chopped fresh cilantro
1/4 cup ground cumin
1/4 cup harissa
3 tablespoons smoked paprika
1 tablespoon ground cinnamon
1 gallon bread cubes, day-old, no crust
5 cups minced yellow onions
3/4 cup minced garlic
5 pounds ground chuck
5 pounds ground pork
3/4 cup finely chopped fresh cilantro
3/4 cup finely chopped fresh parsley
1/4 cup cumin seeds, ground
1/4 cup smoked paprika
1/4 cup black peppercorns, ground
1/4 cup salt
4 teaspoons ancho chile powder
1 tablespoon ground ginger
10 eggs, whipped before adding
Vegetable oil

Steps:

  • For the sauce: Mix together the tomato sauce, cilantro, cumin, harissa, paprika and cinnamon.
  • For the meatballs: Preheat the oven to 500 degrees F. Soak the bread in just enough water to cover for 1 minute. Pour into a colander and let sit for 10 minutes. Squeeze all the excess water out.
  • Meanwhile, gently cook the onions and garlic until translucent. Let cool, then transfer to a bowl. Add the chuck, pork, cilantro, parsley, cumin, paprika, pepper, salt, chile powder, ginger and eggs and mix thoroughly.
  • Portion and shape the mixture into 3 1/2-ounce balls. Heat oil over medium-high heat in a large saute pan and brown the meatballs on all sides.
  • Transfer to a large baking dish, cover with the meatball sauce and wrap with aluminum foil. Braise the meatballs in the oven until cooked through but not dry, 20 minutes.
  • Let cool slightly, then serve.

1 small slice of bread, toasted and soaked in water or milk until soft
1 1/4 lb lean ground beef or ground lamb (or a mixture of beef and lamb)
1 small red onion, grated
2 garlic cloves, minced
Small handful fresh cilantro, chopped
2 1/2 to 3 tsp Ras El Hanout spice blend (about 5 to 6 g)
1/2 tsp ground ginger (about .87 g)
1/2 tsp cayenne, more if you enjoy spicy (about .88 g)
Salt and pepper
3 tbsp (about 42 ml) extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil.)
4 carrots, peeled (I used rainbow carrots of different colors, but any carrots work here)
3 tbsp (about 48 ml) orange juice
Extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
Salt and pepper
Handful fresh mint leaves, torn (about 5 or 6 large leaves)
Cherry tomatoes, halved
shallots or onions, thinly sliced
Fresh parsley
Marinated olives
Tztaziki Sauce or plain Greek yogurt
Pita pockets or flatbread of your choice

Steps:

  • Make the shaved carrot salad first. Using a peeler, go ahead and peel the carrots into ribbons (or you can slice the carrots very thin sticks.) Place carrots and the remaining carrot salad ingredients into a bowl. Toss by hand to combine. Set aside or in the fridge for now.
  • If making other fresh sides to serve along, prepare those as well and save in the fridge. Toss the cherry tomatoes and onions with a little olive oil and lemon juice, if you like, and season with salt and pepper. Save in the fridge.
  • If using, prepare Tzatziki sauce per this recipe; plain Greek yogurt is fine too. Save in fridge for later.
  • Prepare meatball mixture. Squeeze any liquid out of the bread and place in a large mixing bowl. Add the meat, onions, garlic, cilantro, Ras El Hanout, ground ginger, and cayenne. Sprinkle a generous pinch of kosher salt and black pepper. Using clean hands, mix/knead until meat mixture is well combined.
  • Divide the meat mixture into small meatballs (mine were about 1 tbsp each). The size here is relative, but they're meant to be small bite-sized meatballs. Arrange the meatballs on a tray and cover. Refrigerate for 30 minutes (if you really don't have the time, you can skip this part. See notes.)
  • When you're ready, heat a cast iron skillet (or a frying skillet) over medium heat. Drizzle the meatballs with some extra virgin olive oil and cook in your hot skillet over medium heat for about 7 minutes or so, turning occasionally, until cooked through and charred. Do this in batches if needed.
  • Serve meatballs hot in pita pockets. Add the carrot salad and other prepared toppings in. Or, leave meatballs in skillet with the shaved carrot salad and other items on the side, let everyone decide how they'd like to enjoy them!

1/2 onion, roughly chopped
3 tablespoons Italian parsley, roughly chopped
2 slices white bread, crusts removed
1 egg
18 ounces ground lamb or 18 ounces ground beef
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon fresh ground black pepper
4 teaspoons butter or 4 teaspoons oil
1/2 onion, finely chopped
1/2 teaspoon paprika
1/2 teaspoon ground turmeric
1/4 teaspoon ground cumin
1 red chili peppers, seeded and sliced or 1/4 teaspoon cayenne pepper
1 1/2 cups chicken stock
3 tablespoons fresh cilantro, chopped
3 tablespoons Italian parsley, chopped
3 tablespoons lemon juice
1/2 preserved lemon, pulp removed and rind cut into strips (optional)

Steps:

  • Prepare the meatballs: put the onion and parsley in a food processor and process until finely chopped.
  • Tear the bread into pieces, add to the onion, along with the egg, and process briefly.
  • Add the meat, cumin, paprika, pepper and 1 teaspoons salt and process to a thick paste, scraping down the side of the bowl occasionally.
  • Alternative preparation: grate the onion, chop the parsley, crumb the bread, and add to the meat in a bowl with the remaining ingredients. Knead until the mixture is paste like in consistency.
  • With moistened hands, shape the mixture into walnut-sized balls and place them on a tray. Cover and refrigerate until required.
  • Prepare the sauce: heat the butter or oil in a saucepan and add the onion. Cook over low heat until softened and golden.
  • Add the paprika, turmeric, cumin and chili or cayenne pepper, and cook for 1 minute, stirring.
  • Add the chicken stock and cilantro and bring to a boil.
  • Add the meatballs to the pan, shaking so that they settle into the sauce. Cover and simmer for 45 minutes.
  • Add most of the parsley and the lemon juice and season, if necessary. Return to a boil and simmer for 2 minutes.
  • If using preserved lemon, add now.
  • Transfer to a tagine or bowl, and sprinkle with remaining parsley.
  • Note 1: author suggests serving with crusty bread. I also suggest rice or couscous.
  • Note 2: I substituted a yellow curry powder for the turmeric, as turmeric is a principal ingredient in curry powder.
  • Note 3: I sometimes need to add a little additional stock for the sauce, depending on the pot I use.

1/2 small onion, chopped
1 garlic clove, smashed
1 lb ground lamb
1/2 cup cooked couscous
1 egg, beaten
2 tablespoons chopped fresh parsley
1/2 teaspoon turmeric
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Steps:

  • Preheat oven to 350°F.
  • In a small nonstick frypan, heat oil over medium heat.
  • Saute onion and garlic for 3 minutes or until browned.
  • In a medium bowl, combine ground lamb, couscous, egg, parsley, turmeric, cinnamon and ginger.
  • Add sauteed onion and garlic.
  • Mix well, form into 1 and 1/2 inch meatballs.
  • Place on a prepared baking sheet.

1 tbsp olive oil
350g pack ready-made beef or chicken meatballs (approx 16)
1 large onion , sliced
100g dried apricot , halved
1 small cinnamon stick
400g tin chopped tomato with garlic
25g toasted flaked almond
handful coriander , roughly chopped

Steps:

  • Heat the oil in a large deep frying pan, then fry the meatballs for 10 mins, turning occasionally until cooked through. Scoop out of the pan and set aside, then cook the onion for 5 mins, until softened.
  • Add the dried apricots, cinnamon stick, tomatoes and half a can of water to the pan, then bring to the boil and simmer for 10 mins. Remove the cinnamon stick. Return the meatballs to the pan and coat well with the tomato sauce. Serve sprinkled with the almonds and coriander.

SAUCE MIXTURE:
2 tablespoons butter
4 tablespoons extra virgin olive oil
2 tablespoons shallots, minced
1 tablespoon garlic, minced
1/2 cup red wine
5 tablespoons concentrated tomato paste
1/4 cup pureed Dole pineapple (drained chunks)
1 jar (24 ounce) jar Tomato & Herb Pasta Sauce
Ally Note~~You can substitute a really good brand of canned (28 oz.) crushed tomatoes + 1 tablespoon harissa, 1 teaspoon ground cumin, 1 teaspoon red chili flakes, 1 tsp sea salt, 1 tablespoon lemon zest
Pasta:
16 ounces packaged pasta (your choice)
1/4 cup cooked sauce mixture
2 packed cups chopped arugula (chop in small size pieces)
Garnish:
Microgreens
Preserved lemon very thin sliver slices
Finishing sea salt

Steps:

  • MEATBALLS: In a large mixing bowl, combine the meats/pepperoni and blend together with your hands. Sprinkle on harissa, salt and pepper and work into meat blending well. Add the ingredients eggs, yogurt and pineapple and blend together well. Add the bread crumbs, parsley and lemon zest and blend well. Using a spring scoop (small-not ice cream size), portion out about 18 dollops, roll into meatballs placing on a parchment-paper lined cookie sheet. In a heavy skillet (about 10-12") heat the canola oil on medium high. Place 9 meatballs in and brown on all sides. Using tongs, gently remove and place on the parchment paper lined cookie sheet. Repeat with the remaining meatballs. Bake in a preheated 400 oven about 9-12 minutes. When done remove. Meatballs will be added to sauce, coated, covered with a lid, and simmered on low for about 30 minutes. (Note: Be sure to use the rubber spatula to scrape all the good stuff off the parchment paper and into the sauce.) SAUCE: In a 10-12" heavy skillet on medium heat, melt butter and add olive oil. Add shallots and garlic and sauté until translucent. Add wine and let it sizzle/cook about 5 minutes burning off some of the alcohol. Add the concentrated tomato paste and whisk together well. Add the pineapple and blend in. Let this simmer about 3 minutes. Reduce heat to medium low and add basting sauce and blend well. Let this simmer on low for about 20 minutes stirring occasionally. Add meatballs and coat with sauce. Cover with a lid and let simmer on low until ready to serve. PASTA: Choose any pasta you like & cook according to package directions~~if you can't find lemon pepper pasta, then make your own~~after you're cooked the pasta al dente, just squeeze on the juice of 1/2 lemon and 1/2 tsp of freshly ground cracked pepper. Toss and blend, the coat the noodles with some of the sauce. Adding the chopped arugula gives the pasta a prissy flair!

1 large onion , ½ grated, ½ finely chopped
3 garlic cloves , crushed
400g beef mince
50g fresh breadcrumbs
3 tbsp milk
25g parmesan , finely grated
½ small bunch of parsley , finely chopped
3 tbsp olive oil
2 x 400g cans chopped tomatoes
350g undefined
2 x 125g balls mozzarella , drained and cut into cubes

Steps:

  • Mix the grated onion, 1 crushed garlic clove, mince, breadcrumbs, milk, parmesan and parsley in a large bowl. Season well with salt and pepper. Mash the mixture together with your hands until combined. Mould the mix into small balls (about walnut-sized) with damp hands. There will be about 20 meatballs.
  • Heat 2 tbsp olive oil in a deep frying pan and fry the meatballs for 6-8 mins until golden brown all over. Fry in batches if you need to - they don't need to be cooked through, just browned on the outside. Set aside on a plate.
  • Heat the remaining 1 tbsp olive oil in the pan and fry the chopped onion for 5 mins until softened. Add the remaining garlic, fry for another minute, then add the chopped tomatoes and simmer for 10 mins until thickened and the tomatoes have broken down. Season well with salt and pepper.
  • Meanwhile, cook the pasta for 5 mins less than the pack instructions state, in boiling salted water. Heat the oven to 200C/180C fan/gas 6.
  • Stir the meatballs into the tomato sauce, adding a splash of water if too thick, and bring to a simmer. Drain the pasta and tip into an ovenproof dish. Pour over the sauce and meatballs and mix well. Stir in most of the mozzarella, then scatter the remaining over the top. Bake for 15-20 mins until the cheese is golden and bubbling, and the top is slightly crisp.

Chicken meatballs may not be a traditionally Moroccan dish, but they work beautifully when spiced with paprika, cumin, cinnamon, ginger and garlic, which are commonly found in the country's cuisine. Whole-milk yogurt does double duty here: It's used to make the meatballs moist and tender, and makes for a speedy sauce to serve with them. Don't use ground chicken made with ultralean breasts; look for labels that show a mix of white and dark meat. (Or if you're feeling ambitious, grind your own boneless, skinless chicken thighs in the food processor.) Serve the meatballs with couscous and a green vegetable for a flavorful weeknight dinner that's well worth the effort.

  • Make the meatballs: In a large bowl, combine the remaining 1/3 cup yogurt, remaining 1 tablespoon garlic, chicken, panko, egg, parsley, olive oil, sugar, paprika, cumin, ginger, cinnamon, 1 1/2 teaspoons salt and a few generous grinds of black pepper.   • In a large skillet, heat 1/8-inch olive oil over medium-high heat. When the oil is hot, fry the meatballs in batches, flipping occasionally, until browned all over and cooked through, 4 to 5 minutes. (If the meatballs begin browning too quickly or the oil begins smoking, lower the heat.) Transfer the cooked meatballs to a paper towel-lined plate.
