CUMIN-FLAVORED SALT



Cumin-Flavored Salt image

This easy-to-make cumin-flavored salt is traditionally served with Moroccan roast lamb, but it's good on just about everything, even fried eggs. It tastes best freshly made, but will keep for about a month in a closed container.

1 teaspoon cumin seeds
1/4 cup medium-coarse or flaky sea salt
Pinch red pepper flakes (optional)
Pinch cayenne or hot paprika (optional)

Steps:

  • Toast cumin seeds in a dry skillet over medium-high heat until fragrant and lightly colored, about 1 minute. Grind very coarsely in a mortar or spice mill. Combine in a bowl with salt and stir together. Add red pepper flakes or cayenne, if using.

600 g ripe tomatoes
4 tablespoons olive oil
6 green onions
4 garlic cloves, sliced
1 teaspoon cumin seed, roughly ground
1 pinch cayenne pepper
1 teaspoon sugar
4 eggs

Steps:

  • Blanch the tomatoes in boiling water and peel off the skins carefully. Cut them into quarters and de-seed them.
  • Heat the garlic, green onions|spring onion and cumin in a frying pan with hot oil. Stir for a few minutes until they start to brown.
  • Add the tomatoes, cayenne, salt, pepper and granulated sugar|sugar and simmer for 15 minutes, less if the tomatoes start to fall apart.
  • Crack an egg in each quarter of the pan, spreading the whites carefully with a fork so they cover the surface of the tomato mixture.
  • Simmer for a further 2 minutes, or until the eggs are cooked how you like them.

Steps:

  • Heat the oil in a frying pan over medium heat.
  • Add the eggs, break the yolks with a spatula, and allow the eggs to set. Occasionally lift the edges of the eggs to let the uncooked egg run underneath.
  • This allows more egg to make contact with the pan for faster cooking.
  • When the eggs have cooked, sprinkle with salt and cumin, and serve.

olive oil, for frying
2 eggs
1/4 fresh red chile, deseeded and finely sliced
1/4 teaspoon cumin seed
1/2 garlic clove, chopped
1 -2 slice bread, toasted
1/2 teaspoon balsamic vinegar
coarse sea salt
chopped coriander

Steps:

  • Pour enough olive oil in to a heavy frying pan to cover the base. Place over a moderate heat and then carefully break the eggs into it. Fry as usual, spooning hot oil over the eggs to help them set.
  • When they are almost half-cooked, add the chilli, cumin and garlic to the pan and continue cooking until the white is set.
  • Lift the eggs out on to the bread, together with the bits of chilli and garlic, and then spoon over a little of the oil. Drizzle over the balsamic vinegar, season with salt and scatter over lots of chopped coriander. Eat immediately.

1 medium head of cauliflower
2 eggs
1/4 cup(s) water
1 cup(s) flour
3 clove(s) garlic, pressed
2 tablespoon(s) parsley, fresh chopped

salt and pepper to taste
1 teaspoon(s) cayenne pepper (or chili powder for wimps)
1/4 teaspoon(s) turmeric
1/2 cup(s) vegetablel oil

Steps:

  • Break the head of cauliflower into bite-sized florets. Steam (covered) for two to three minutes. Be careful not to overcook-you want the cauliflower to still be firm with a crisp-tender bite. Drain.
  • In a large bowl, beat the eggs. Whisk in the water and then whisk in the flour until smooth.
  • Add the garlic, parsley, cumin, paprika, salt, and cayenne pepper. Whisk to blend in smoothly.
  • Transfer the cauliflower florets to the bowl. Toss (simply pick up the bowl and shake carefully) or stir gently until the cauliflower florets are evenly coated with batter.
  • Heat about 1/4 inch/.5 cm of vegetable oil in a large skillet over medium heat until hot. Transfer some of the coated cauliflower florets to the hot oil; do not crowd.
  • Cook for several minutes then turn over with spoons or forks to cook the other side, again for several minutes, until deep golden. Remove the cooked cauliflower with a slotted spoon to the paper-towel-lined pan to drain. Repeat with the remaining cauliflower.
  • Serve the fried cauliflower as-is or with a dipping sauce, or with mayonnaise and lemon wedges on the side.
