2 medium narrow eggplants
2 eggs, lightly beaten
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
vegetable oil (for frying)

Steps:

  • Wash the eggplants and cut off the ends.
  • Pare the skin off of the eggplants in strips to leave a striped effect.
  • Cut each eggplant into 1/4" slices and set aside.
  • In a mixing bowl, blend the beaten eggs with the spices. Add the eggplant and mix well so the eggplant slices are coated.
  • In a large frying pan, pour enough oil to coat the bottom.
  • Heat the oil for several minutes over medium heat. Once the oil is hot, cook the eggplant in batches, turning over several times, until golden brown.
  • Transfer to a plate lined with paper towels to drain.
  • Serve warm or at room temperature.

Scant teaspoon cumin seeds
1 pound firm eggplant
1 small red onion, chopped (1/4 cup)
2 teaspoons red-wine vinegar
1 teaspoon sugar
2 tablespoons extra-virgin olive oil, divided
2 tablespoons chopped flat-leaf parsley, divided
Equipment:
an electric coffee/spice grinder
Accompaniment:
toasted pita

Steps:

  • Toast cumin in a dry 10-inch heavy skillet (preferably cast-iron) over medium heat, stirring occasionally, until fragrant and dark brown (be careful not to burn). Cool, then grind to a powder in grinder.
  • Pan-roast whole eggplant in skillet over medium heat, turning frequently with tongs, until blackened and tender, 20 to 30 minutes.
  • Transfer to a cutting board and cut off and discard stem. Scrape flesh from skin and coarsely chop. Toss with onion, vinegar, sugar, 1 tablespoon oil, 1 tablespoon parsley, 1/2 teaspoon toasted cumin, and 1/2 teaspoon salt.
  • Serve in a shallow bowl drizzled with remaining tablespoon oil and sprinkled with remaining tablespoon parsley and toasted cumin.

1 tablespoon vegetable broth
1 large onion, sliced thin
5 garlic cloves, pressed
1 medium red bell pepper, cut in 1-inch squares
1 medium eggplant, cubed
1 pinch red pepper flakes
2 teaspoons turmeric
1/2 teaspoon garam masala
1 (15 ounce) can garbanzo beans
1 (15 ounce) can lentils, drained
1/2 cup tomato sauce
1 1/4 cups vegetable broth
1/2 cup raisins
salt and pepper
1 tablespoon cilantro, chopped

Steps:

  • Heat 1 TBS broth in a 10-12 inch skillet. Sauté onion in broth over medium heat for 5 minutes stirring frequently.
  • Add garlic, red bell pepper, eggplant, garam masala, and turmeric.
  • Stir to mix well for a minute, and add broth and tomato sauce.
  • Stir again to mix.
  • Cover, and cook over medium low heat for 15 minutes, stirring occasionally, or until peppers and eggplant are tender.
  • Add garbanzo beans, lentils, red chili flakes, and raisins.
  • Simmer for another 5 minutes.
  • Season with salt and pepper.
  • Serve sprinkled with chopped cilantro.

This was my first time boiling eggplant and it turned out very good! Boiling it with the garlic makes it extra special...we were eating it plain as it was cooling. I found this recipe to be very simple and tasty. We ate it with white rice.

1 large eggplant, unpeeled and cut into 1-inch cubes
3 garlic cloves, minced
5 cups water
salt, to taste
1 teaspoon ground cumin
1 teaspoon paprika (I used hot Hungarian)
1 -2 tablespoon fresh lemon juice
2 teaspoons olive oil

Steps:

  • Place eggplant, garlic, water and salt in a pot and bring to a boil.
  • Cover and cook over medium heat for 8-10 minutes, or until eggplant cubes are cooked but still firm.
  • Drain in a strainer and allow to cool.
  • Place cooled eggplant in a bowl and toss gently with the remaining ingredients.
  • Very nice served at room temperature.

  • Clean eggplants and cut into cubes for faster cooking. Place in a large bowl and lightly salt to remove some of the excess water.
  • Add a few tbsp oil to a frying pan. Once it heats up add the garlic and onion and cook until softened (3-5 minutes). Add half of each of the spices.
  • Next include the tomatoes and eggplant. If you want you can add about 1/4 c of tomato sauce to make it smoother.
  • Add the rest of the oil and cook as the tomato and eggplant soften. Mash as this occurs. Add the rest of the spices at this point. The final result should not be too chunky, as you should cook until they are relatively soft. Some chunks are ok. Top with a squirt of lemon juice and cilantro

  • Cut the eggplant into 3/4-inch slices. Add a little salt to disgorge. Fry the eggplant slices in some hot avocado oil until both sides are golden.
  • Put the red pepper in the oven on broil for ten minutes, or over an open flame on the stove-top tossing for a few minutes until the skin blackens. Place in a bowl and cover with plastic wrap and let steam for a few minutes. Peel the pepper to remove the skin and keep only the flesh. Finely chop the pepper.
  • In a bowl, grate the garlic, chop the parsley and cilantro very finely, add the olive oil, lemon juice and spices, chopped peppers and marinate.
