1 tablespoon scallions or 1 tablespoon shallot, minced
2 teaspoons Dijon mustard
2 tablespoons fresh lemon juice
1/2 cup olive oil
salt
pepper

Steps:

  • Combine all ingredients with a whisk in a measuring cup.
  • Use immediately.

A classic Mediterranean salad dressing that's simple and so good - makes a great marinade for grilled chicken, too.

1 tablespoon sea salt
3 garlic cloves, minced
1/2 cup fresh lemon juice
1/2 cup high-quality extra virgin olive oil
1/2 cup freshly grated parmesan cheese (optional)
1 grated lemon, zest of (optional)

Steps:

  • With a mortar & pestle, make a paste of the salt and minced garlic.
  • Mix together lemon juice and olive oil. Add the salt and garlic mixture to the lemon juice and olive oil in a tightly closed container.
  • Shake well. Sprinkle optional grated Parmesan or lemon zest on top of salad before tossing.

1 tbsp Djion mustard
100ml olive oil
2 tbsp white wine vinegar
small pinch sugar

Steps:

  • Spoon the mustard into a bowl and slowly whisk in the oil with a small whisk. Gradually add the vinegar and 1 tsp of water to make a creamy looking dressing. Season with the sugar and a generous pinch of salt. Will keep in a sealed jar for up to a month, but must be whisked again before serving.

From the August 2005 Cooking Light issue. The walnuts are my addition. Now that apple season is about upon us, it's time to sample different varieties. This salad recipe is a good start.

6 cups mixed greens, rinsed
1 cup braeburn apple, julienned, cut 2-inches long (can substitute similar apple such as Honey Crisp, etc.)
2 tablespoons apple cider vinegar
2 tablespoons maple syrup (NOT imitation)
2 teaspoons brown mustard (or Dijon)
2 1/2 teaspoons walnut oil
1/8 teaspoon salt
1/8 teaspoon cayenne
1/2 cup walnuts, toasted and chopped

Steps:

  • In small glass bowl, prepare salad dressing first and set aside.
  • Use salad spinner to remove excess moisture from the greens.
  • *In large non-reactive serving bowl place the sliced apples and toss them with a little bit of apple cider to halt oxidizing.
  • Next, add the salad greens, a few tablespoons of the salad dressing and toss gently again with tongs to mix.
  • Serve remaining salad dressing on side along with the toasted walnuts if using.
  • *For best results, cut up apples and toss with the vinegar right before serving.

CHERRY TOMATOES IN LEMON OIL DRESSING

2 cups cherry tomatoes
1/2 cup fresh lemon juice
1/4 cup snipped fresh basil leaf
3/4 cup extra virgin olive oil
salt
fresh ground black pepper

Steps:

  • Prick each tomato all over with a toothpick.
  • Mix lemon juice and basil. Pour oil over mixture, whisking until liquids are completely blended. Season to taste with salt and pepper.
  • Place tomatoes in a shallow glass dish and cover with lemon oil dressing. Chill for several hours, tossing occasionally. Enjoy!
