Moose stroganoff in a creamy mushroom sauce with egg noodlesThis recipe for moose stroganoff is so delicious you will look at cooking moose more often. Bottle moose rinsed in hot water to remove any sauce off the meat then fried on a medium heat with butter and olive oil for about twenty minutes or until golden brown. Then cover with a creamy mushroom sauce with a side of egg noodles. Making this dish with bottled moose you don't have to tenderize the meat first, if you make it with fresh moose meat you will have to cook the meat for a longer time.

Steps:

  • Moose stroganoff in a creamy mushroom sauce with egg noodles.1 - In a large saucepan add butter, chopped onions and mushrooms fry until golden brown on a medium heat that's about 10 minutes , after remove from pan to a bowl then place pan back on the heat. 2 - Take moose meat out of bottle and cut in small pieces, place in a strainer then rinse all the sauce off. 3 - Then toss moose meat in flour; season with salt and pepper then put in frying pan start to fry on medium heat with some butter and olive oil until golden brown that's about 15 minutes. 4 - Toss mushrooms and onions back in the frying pan then add chopped garlic and mix together. 5 - Then add beef broth, Worcestershire sauce, and mushroom soup mix together then cover. 6 - Turn heat to low continue cooking for about 10 minutes. 7 - Start the boil on a medium pot of water, add your noodles boil until noodles are tender about 5 to 10 minutes. Then drain water off and add them to your saucepan with moose meat and sauce. 8 - Remove from stove top and start plating. Top your dish with fresh herbs and more pepper then serve.

¼ cup dry sherry
4 cups low sodium beef broth
1 ½ teaspoons salt
½ teaspoon pepper
4 cups dry egg noodle
½ cup sour cream
2 tablespoons fresh parsley, chopped

Steps:

  • Add olive to a large pan over medium heat. Once the oil begins to shimmer, add the mushrooms and cook until tender, 5 to 6 minutes. Transfer the mushrooms to a plate.
  • In the same pan, add the butter. Add the onion, ground beef, and garlic powder. Stir until the meat is browned, breaking it up as you stir.
  • Drain any excess fat and return the pan to the stove.
  • Add the flour and paprika. Stir until thick, about 1 to 2 minutes.
  • Add the sherry, and stir, scraping up any brown bits from the bottom of the pan.
  • Add the beef broth and bring the mixture to a boil.
  • Add the egg noodles, salt, and pepper. Reduce the heat to simmer. Cover the pan with a lid.
  • Stir often, until the noodles are tender, about 8 to 10 minutes.
  • Return the mushrooms to the pan and stir to combine.
  • Add the sour cream and stir. Top with chopped parsley.
  • Enjoy!

2 tablespoons olive oil, divided
1 medium yellow onion, diced
12 oz cremini mushroom, sliced
3 cloves garlic
½ teaspoon dried thyme
¼ teaspoon pepper
½ teaspoon salt
¼ cup dry white wine
½ tablespoon vegan worcestershire
¼ cup flour
2 cups vegetable broth
1 ½ cups almond milk
8 oz fusilli pasta, uncooked
fresh parsley, chopped, for serving, garnish

Steps:

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent.
  • Add the mushrooms and cook until most of the juices have evaporated.
  • With your spoon, make a space in the center of the pot. Drizzle in the remaining tablespoon of olive oil and add the garlic, thyme, pepper, and salt.
  • Cook for 2-3 minutes, until fragrant. Then, add the white wine and vegan Worcestershire sauce and stir until incorporated.
  • Add flour and stir until fully combined. Then add the vegetable broth, almond milk, and pasta, and stir until well-combined.
  • Cover and increase the heat to medium-high. Let cook for 10-15 minutes, or until the liquid is creamy and pasta is cooked.
  • Serve immediately, garnished with parsley.

1/2 cup flour, plus
2 tablespoons flour
1 teaspoon salt
1/2 lb mushroom, chopped
2 small onions, chopped
1 clove garlic
3 tablespoons oil
1 tablespoon Worcestershire sauce
1 cup beef broth
1 cup sour cream

Steps:

  • Roll meat in 1/4 cup flour and salt.
  • Saute garlic, onions and mushrooms in oil for 5 minutes.
  • Add meat and brown.
  • Remove meat, mushrooms and onions from pan.
  • Add remaining flour to drippings in pan.
  • Add Worcestershire and broth.
  • Cook until thickened.
  • Add sour cream.
  • Heat until gravy simmers.
  • Add cooked moose and vegetables and reheat.
  • Serve over noodles or rice.

½ teaspoon kosher salt, plus more for the pasta cooking water
1 pound (455 g) wide egg noodles
8 tablespoons (1 stick; 115 g) unsalted butter
1 pound (455 g) cremini mushrooms, sliced
¼ teaspoon coarsely ground black pepper
1 large shallot, minced
3 tablespoons all-purpose flour
1½ cups (355 ml) vegetable broth, or as needed
1 cup (235 ml) white wine
½ cup (120 ml) sour cream
Parsley for garnish

Steps:

  • Bring a large pot of heavily salted water to a boil. Add the noodles and cook for 1 minute shy of the package directions. Drain and set aside.
  • Melt the butter in a large skillet over medium-high heat. Add the mushrooms, salt, and pepper and cook for 2 to 3 minutes without stirring, allowing the mushrooms to brown slightly. Stir, then cook for another 2 to 3 minutes without stirring to brown them well. Stir the mushrooms, add the shallot, and cook for another minute.
  • Add the flour and stir well to combine, then add the vegetable broth and white wine, bring to a simmer, and cook for 6 to 8 minutes, until reduced by about half. Add the sour cream, stirring until fully combined, then add the noodles and stir to coat with the sauce. If the sauce seems too thick, thin with a little additional vegetable stock.

1 bay leaf

1 cup dry red wine
1 large onion, diced
3 carrots, sliced
18 small whole white onions
12 small new potatoes, peeled
2 tablespoons butter
2 tablespoons flour

Steps:

  • Saute meat cubes in shortening until brown on all sides.
  • Add pepper, paprika, bay leaf, salt, beef broth, red wine, onion, and carrots.
  • Cover and simmer until meat is tender, about 2 hours.
  • Add whole onions and potatoes; cover and simmer for an additional 15 minutes, or until the vegetables are barely tender.
  • Mix butter and flour into a paste.
  • Drop into simmering stew.
  • Cook, stirring, until stew bubbles and thickens.
  • Serve with rice or polenta.

1 lb top round beef (can use game meat)
4 garlic cloves, minced
2 tablespoons oil
1 (10 1/2 ounce) can cream of mushroom soup
1 pint sour cream (can use light)
1/4 cup cream or 1/4 cup dry sherry
3 tablespoons minced parsley
1/2 teaspoon salt (to taste)
1 (13 -16 ounce) bag wide egg noodles

Steps:

  • Slice meat against grain into thin strips.
  • Heat oil in 12" pan.
  • Sear meat in pan.
  • add garlic and cook 1-2 minutes.
  • add mushroom soup undiluted.
  • add sour cream and mix together well.
  • add sherry, salt, turn down and let simmer on low.
  • meanwhile, bring a pot of water to boil and cook pasta according to directions. Strain and put in a nice pasta bowl. Then pour stroganoff over and mix. Add parsley and toss to together. Serve.

1 cup sour cream
2 tablespoons dry sherry

  • Heat 1 tablespoon butter in a large skillet over medium-high heat. Stir in the mushrooms, and cook until golden. With a slotted spoon, remove mushrooms, and set aside.
