2 cups purple cauliflower florets
1 bunch fresh broccolini (6 oz)
8 fresh cremini mushrooms, halved
6 green onions, cut into 2-inch pieces
1 tablespoon canola oil
1/2 cup P.F. Chang's® Home Menu Mongolian Style BBQ Sauce

Steps:

  • Spray 2 baking sheets with canola oil spray. Adjust oven racks to upper third and lower third of oven. Place 1 sheet pan on top oven rack. Preheat oven to 425°F. Season chicken on both sides with 1 teaspoon salt and 1/4 teaspoon pepper. When oven is preheated, place chicken skin-side down on hot sheet pan. Bake 10 minutes.
  • Meanwhile, place cauliflower, broccolini, mushrooms, green onion, canola oil and remaining ½ teaspoon salt and ¼ teaspoon pepper in large bowl; toss until well combined. Pour vegetables onto second baking sheet.
  • Remove chicken from oven and turn so that it's skin-side up. Place chicken pan on upper oven rack and vegetables on lower oven rack; bake 20 minutes. Brush chicken with Mongolian BBQ sauce. Continue baking 5 minutes until chicken is cooked through (165°F) and vegetables are browned and tender.

6 oz cabbage ((about 1/6 of a larage cabbage))
5 oz bean sprouts
1 onion ((thinly sliced))
1 large carrot ((sliced to thin strips))
1 zucchini ((sliced to thin half rounds))
1 tablespoon vegetable oil ((plus extra for adding to the noodles to prevent sticking))
8 oz Asian noodles ((or spaghetti))
salt and pepper ((to taste))
other optional vegetables include mushrooms, broccoli, bok choy, bell peppers, etc.
1/2 cup soy sauce
3 tablespoons sugar
3 tablespoons water
1 teaspoon grated ginger ((it's best to use fresh ginger))
2 cloves garlic ((minced))
2 teaspoons sesame oil
2 teaspoons white sesame seeds

Steps:

  • Gather all the ingredients. Note that this sauce recipe can serve 4 people, and you'll need to adjust accordingly if you are serving a larger crowd.
  • In a small saucepan over medium-low heat, combine soy sauce, sugar, and water. Stir until the sugar is completely dissolved.
  • Add grated ginger, garlic, sesame seeds, and sesame oil. Mix well.
  • Turn off the heat, and your sauce is ready. Pour it into a mason jar. (You can also make it a day ahead and store it in an airtight container in the refrigerator.)
  • Cook the noodles according to package instructions until al dente. Then drain the noodles and rinse with cold water. Add some oil and mix well to prevent sticking.
  • In the mean time, gather all the other ingredients.
  • Slice the meat meat into 1/8-inch thick pieces and keep them refrigerated until you're ready to cook. (Tip: You can freeze the meat for about 1 hour before cutting for easy slicing.)
  • Prepare the vegetables: Remove the hard core of the cabbage, and cut the leaves into thin strips; Wash the bean sprouts and dry them properly; Peel the onion and carrot and cut them into thin slices, Slice zuccini into thin half rounds.
  • Preheat the electric griddle to 400 ºF (204 ºC) and grease the surface with oil.
  • Add vegetables and meat to the griddle. It's best to divide the surface into several sections where you cook different types of food.
  • Lightly season your vegetables with salt and pepper, and keep the meat unseasoned.
  • The meat usually takes less than a minute to be fully cooked. Cook the vegetables until softened. Bean sprouts also takes less than a minute to cook.
  • Each person should have a small bowl of Mongolian BBQ sauce. You can dip the food in the homemade Mongolian sauce directly once it's cooked.

Number Of Ingredients 11

12 ounces boneless skinless chicken breast or thighs ((340g, pat dry with paper towels and cut into ¼-inch thick slices))
1 tablespoon vegetable oil ((plus ⅓ cup for frying))
1/4 cup cornstarch
1 teaspoon ginger ((julienned or minced))
5 dried red chili peppers ((optional))
2 cloves garlic ((chopped))
3 scallions ((cut on a diagonal into 1-inch slices))
2 1/2 tablespoons soy sauce
2 tablespoons brown sugar
¼ cup hot water or low sodium chicken stock
2 tablespoons cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Mix the sliced chicken with 1 tablespoon of oil, until the pieces are evenly coated. Dredge all of the chicken in the cornstarch, shaking off the excess until the chicken is just lightly coated.
  • Heat ⅓ cup oil in a wok over high heat. At this point, if the chicken has absorbed the cornstarch and gets moist again, dredge the pieces again before frying. Just before the oil starts to smoke, spread the chicken pieces evenly in the wok, and fry for 1 minute, or until browned and crispy.
  • Turn the chicken, and let the other side fry for another 30 seconds or until browned and crispy. Transfer to a sheet pan or plate lined with paper towels. The chicken should be fried on all sides with a crusty coating.
  • Drain the oil from the wok, leaving 1 tablespoon behind, and set over medium high heat. Add the ginger fry for 20 seconds, until fragrant. Add the dried chili peppers, if using, the garlic, and the white portions of the scallions. Stir fry for another 15 seconds, and add the soy sauce, brown sugar, and chicken stock (or water). Bring the sauce to a simmer, and stir constantly until the brown sugar is completely dissolved.
  • Let the sauce simmer for another 2 minutes, and slowly stir in the cornstarch-water mixture until the sauce coats the back of a spoon. Add the chicken and the green portions of the scallions. Toss everything together for another 10 seconds.
  • There should be almost no liquid--the sauce should cling to the chicken. If you still have excess sauce, add more of the cornstarch slurry, and increase the heat slightly. Stir until thickened.

250g baby new potatoes, thinly sliced
1 large courgette, diagonally sliced
1 red onion, cut into wedges
1 yellow pepper, seeded and cut into chunks
6 firm plum tomatoes, halved
12 black olives, pitted
2 skinless boneless chicken breast fillets, about 150g/5oz each
3 tbsp olive oil
1 rounded tbsp green pesto

Steps:

  • Preheat the oven to 200C/ Gas 6/fan oven 180C. Spread the potatoes, courgette, onion, pepper and tomatoes in a shallow roasting tin and scatter over the olives. Season with salt and coarsely ground black pepper.
  • Slash the flesh of each chicken breast 3-4 times using a sharp knife, then lay the chicken on top of the vegetables.
  • Mix the olive oil and pesto together until well blended and spoon evenly over the chicken. Cover the tin with foil and cook for 30 minutes.
  • Remove the foil from the tin. Return to the oven and cook for a further 10 minutes until the vegetables are juicy and look tempting to eat and the chicken is cooked through (the juices should run clear when pierced with a skewer).

So, to spare him from my cravings, I decided to learn how to make my favorite dish at home. That way I can whip this up anytime I want! **Always use fresh vegetables! Although frozen can be substituted in a pinch.

2 cups firm tofu, cut into 1-inch blocks
2 green onion tops, cut into 1-inch pieces
2 peeled and shredded carrots
1 cup chopped broccoli
1/2 cup baby snow pea pods
1/4 cup sliced water chestnuts
1 cup bean sprouts
2 -3 tablespoons sesame oil
2 cups cooked ramen noodles or 2 cups soba noodles
1 cup teriyaki sauce (I use Honey Teriyaki Sauce for Grilled Meats, can use more sauce if you like)
corn, green beans, tomato, green pepper, onions, asparagus (anything fresh is best)
additional garlic (optional)
additional ginger (optional)
beef (optional) or chicken (optional)

Steps:

  • In a skillet, heat sesame oil. Add meat first if using, then add tofu. (drain very well to get as much excess water out as possible.) When meat is cooked through add vegetables along with teriyaki sauce.
  • When vegetables are cooked to tenderness you desire add cooked ramen or soba noodles just before serving.
  • Serve with hot rice.

2 garlic cloves, minced
4 small green onions, cut diagonally into 1/2 inch pieces

  • In a small bowl marinate chicken cubes with 2 tablespoons soy sauce and sesame oil while preparing vegetables.
  • Remove leaves from bok choy and cut into 1/2 inch slices. Slice stems into 1/2 inch slices. Set aside.
  • Blend remaining 2 tablespoons soy sauce into cornstarch until smooth. Set aside.

Steps:

  • Preheat grill to medium heat.
  • Whisk all the ingredients for the Kansas-Style BBQ sauce in a small bowl and set aside.
  • Place potatoes, carrots and Brussels sprouts into a 9-inch cast iron skillet. Place chicken thighs on top of the vegetables and using a pastry brush, generously brush Kansas-style BBQ sauce onto chicken thighs.
  • Cover cast iron skillet tightly with a sheet of Reynolds Wrap® Non-Stick Foil, with the non-stick side facing down on top of the chicken.
