BEAN TAMALES (TAMELES DE FRIJOLES)
Homemade ancho pepper chile sauce is mixed with both the masa and the refried beans which gives these authentic Mexican bean tamales their unique flavor. [Recipe originally submitted to Allrecipes.com.mx]

Steps:
- Place corn husks in a bowl, cover with boiling water, and soak for a few hours. Drain, place on a work surface, and cover with a clean, damp towel.
- Place ancho chiles in a saucepan and cover with water. Bring to a boil over medium heat and cook until soft, about 10 minutes. Drain.
- Combine ancho chiles, garlic, cumin, salt, pepper, and a little water in a blender; blend salsa until smooth. Strain through a sieve.
- Heat oil in a large skillet over medium heat. Add 1/2 the salsa and cook, 3 to 5 minutes. Add refried beans, stir well, and cook until most of the liquid has evaporated, about 5 minutes. Set aside.
- Beat lard with an electric mixer until fluffy. Add masa and beat until well combined. Add remaining salsa and continue beating until dough has a uniform red color.
- Select 1 wide corn husk. Spread about 2 tablespoons masa mixture onto the the corn husk, filling it up to 2 inches from the bottom and 1/4 inch from the top. Place 1 tablespoon of beans and 1 jalapeno slice in the center of the masa mixture. Fold sides of husk together, one over the other. Fold the bottom of the husk over the seam of the 2 folded sides. Repeat with remaining husks.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add tamales with the open side up and cook until filling is heated through and separates from the husk, about 1 hour. Let tamales rest for 15 minutes before serving.

MOMSMOM'S BLACK BEAN TAMALE CHILI
I love this recipe while the weather is cold. It's so easy, quick and tastes great; uses just one pot. I don't like bell peppers and now that I've made chili with black beans, I don't expect to make any other kind. The idea of using tamales instead of some kind of ground meat adds to its ease, the juice in the can adds interest to the flavor. It's lazy and saves using a skillet. Fresh tamales would be wonderful, but are not readily available where I live. Probably would taste even better made from scratch, but who has time?! Good for pot luck and tailgating, too.

- Open the cans, dump contents into a pot that's big enough [rinse the cans and recycle]. Pull the paper off the tamales and break them up into bite-size pieces. Stir to mix ingredients. Medium heat, let it get hot, stirring occasionally.
- If you're in a hurry just heat and eat, or you can let it simmer for a while. The cilantro tastes best if you add it late.

- In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in beans and salsa; set aside. , In a large bowl, combine the muffin mix, milk, egg and 1 cup cheese. Pour into a greased 9-in. pie plate. Bake at 375° for 5-6 minutes. , Spoon beef mixture over crust, leaving a 1/2-in. edge. Bake for 15-18 minutes or until crust is golden brown. Sprinkle with remaining cheese. Bake 1-2 minutes longer or until cheese is melted. Serve with sour cream and olives if desired.

My mom makes this great black bean casserole. I have always loved it, and now it's on my husband's top 10 list of favorite foods!

Steps:
- nota:diced tomatoes and chili powder can be replaced with an equivalent amount of salsa.
- Preheat oven to 350°F.
- In a large fry pan, heat oil and fry the onions, garlic, and celery until tender and onions translucent.
- Add tomatoes/salsa and spices, and heat through.
- Add black beans.
- Spoon a quarter of the mixture in the bottom of the casserole dish.
- Add a tortilla.
- Spoon another quarter of the mixture over the tortilla and spread to cover.
- Add a third of the grated cheese.
- Continue in this way until all the ingredients have been used up.
- Place casserole in the oven and heat for 20 minutes, or until heated through and the cheese is melted.
- Sprinkle green onion and green pepper over the dish (if desired) and serve.

- Start by soaking your dried corn husks in water. You want to make sure they are completely submerged under the water. Allow them to soak for at least 4 hours, or overnight. (Note: This image is after I strained some of the water after soaking. They should be fully submerged while soaking.)
- Start by roasting, peeling and chopping your hatch chile and poblano pepper. You can substitute other peppers and chiles if you have a different preference. If you've never roasted chiles before, I have a post on how to roast hatch chiles that will walk you through the process.
