1 cup vanilla low-fat yogurt
1 cup fat-free milk
1 pkg. (4-serving size) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
1/2 cup mashed strawberries

Steps:

  • Measure yogurt into medium bowl. Gradually add milk, stirring with wire whisk until well blended. Add dry pudding mix. Beat 2 min. or until well blended. Stir in strawberries.
  • Spoon evenly into five dessert dishes; cover.
  • Refrigerate at least 1 hour. Store leftover pudding in refrigerator.

It only takes 5 minutes and 3 ingredients to make this Greek yogurt lemon pudding, a simple everyday dessert with protein and calcium.

1 large container (1 quart or 1 kilogram plain lowfat Greek yogurt)
1 can (14 oz. sweetened condensed milk)
1 large lemon

Steps:

  • Wash the lemon. Remove the lemon zest with a microplane, zester or grater, and set aside.
  • Juice the lemon.
  • In a large mixing bowl, whisk together the lemon juice, lemon zest and sweetened condensed milk to combine thoroughly.
  • Add the yogurt and whisk to combine.
  • You can eat the pudding right away, but if you have time, let it chill for at least half an hour in the refrigerator so the pudding thickens and the flavors blend together.
  • Spoon into individual serving dishes and top with fresh fruit, such as berries, kiwi, grapes or orange segments with the skin and pith removed.

1 cup vanilla-flavored unsweetened almond milk
1 cup plain low-fat (2 percent) Greek yogurt
2 tablespoons pure maple syrup (preferably grade B), plus 4 teaspoons for serving
1 teaspoon pure vanilla extract
Kosher salt
1/4 cup chia seeds
1 pint strawberries, hulled and chopped
1/4 cup sliced almonds, toasted

Steps:

  • In a medium bowl, gently whisk the almond milk, yogurt, 2 tablespoons maple syrup, the vanilla and 1/8 teaspoon salt until just blended. Whisk in the chia seeds; let stand 30 minutes. Stir to distribute the seeds if they have settled. Cover and refrigerate overnight.
  • The next day, in a medium bowl, toss the berries with the remaining 4 teaspoons maple syrup. Mix in the almonds.
  • Spoon the pudding into 4 bowls or glasses; mound the berry mixture on top and serve.

MOM'S CARROT PUDDING

Posted as a request. I havent made it but have enjoyed it every year at Christmas. Its not Christmas without my mom's carrot pudding. She reheats it in the jars in the microwave with a piece of plastic wrap over the top, stirring occasionally till hot. Serves it with a hard sauce and whipping cream. Prep time is approx, Cooking time is processing time in the canner.

1 cup seedless raisin
1 cup currants or 1 cup use more raisins
1/2 cup candied cherry, mixed (chopped)
1/4 cup slivered almonds, chopped
1 cup sifted flour
1 teaspoon baking soda
1/2 teaspoon clove
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup shortening
1 cup brown sugar, packed
1 egg
1 cup raw carrot, finely grated
1 cup potato, raw finely grated

Steps:

  • Combine raisins, currants, fruit and almonds.
  • Sift together flour, soda, cloves, cinnamon and nutmeg over fruit. Stir to coat fruit.
  • Cream shortening until smooth, add sugar and beat until light. Add egg and beat until fluffy. Add carrot and 1/2 the potato, blend. Gradually add flour fruit mixture and blend. Add remaining potato. Stir just to blend.
  • Mom usually times this by 4 and can in quarts. Only fill quarts 3/4 full. Place lids on it and place in canner. Bring to a boil and continue to boil for 1 1/2 to 2 hours.
  • To reheat, unseal jar and place in microwave covered with plastic wrap till hot, stir occasionally.

Steps:

  • Peel and cut mangoes into slivers or cubes.
  • Put into a flat serving dish.
  • Cover with the yogurt, then sprinkle the demera suger over the top quite thickly.
  • Put in the fridge for at least two hours before serving.

4 tablespoons all-fruit jam (ideally homemade or low sugar, my favourite is homemade fig-strawberry)

Steps:

  • Mix together all the ingredients in a bowl.
