For tomato sauce:
5 (28-ounce) cans whole tomatoes in juice (preferably Italian)
1/2 cup olive oil
1 large onion, finely chopped
5 garlic cloves, minced
1 Turkish bay leaf or 1/2 California
For beef braciole:
4 garlic cloves, minced
1/2 cup finely chopped flat-leaf parsley
1 cup grated Pecorino Romano (2 ounces)
3 ounces thinly sliced pancetta, finely chopped
1 1/2 pounds beef top round, cut across the grain into 1/4-inch slices
For meatballs and other meats:
Reserved meat mixture and frying oil from polpette
1/2 cup olive oil for frying, divided
1 pound sweet Italian sausage links
1 pound hot Italian sausage links
1 1/2 pound boneless pork shoulder, cut into 2-inch pieces
2 pounds country-style pork ribs
Equipment: kitchen string
Accompaniment: fresh egg fettuccine

Steps:

  • Make tomato sauce:
  • Pulse tomatoes with juice (1 can at a time) in a blender until almost smooth.
  • Heat oil in a wide 10-to 12-quarts heavy pot over medium-high heat until it shimmers, then sauté onion until golden, about 6 minutes. Add garlic and sauté 1 minute.
  • Add tomato purée, bay leaf, and 1/2 teaspoon salt and simmer, uncovered, stirring occasionally, until thickened, 40 to 45 minutes. Discard bay leaf.
  • Make braciole while sauce simmers:
  • Stir together garlic, parsley, cheese, and pancetta.
  • Pound top round to 1/8 inch thick between 2 sheets of plastic wrap with a rolling pin or meat pounder. Spoon parsley mixture evenly over beef cutlets (about 3 tablespoons each). Starting with a short side, roll up cutlets and tie at each end with string to make braciole.
  • Make meatballs:
  • Form reserved meatball mixture into balls (about 16), using a 1/4-cup measure.
  • Cook meats:
  • Heat 2 tablespoons olive oil in a 12-inch heavy skillet over medium heat until it shimmers. Season braciole with 1/2 teaspoon salt and 1/4 teaspoon pepper (total) and brown well in 2 batches, turning, about 6 minutes per batch. Transfer to a large shallow pan.
  • Add 2 tablespoons oil to skillet and brown sausage in 2 batches, turning, about 6 minutes per batch. Transfer to pan with braciole.
  • Pat pork shoulder dry and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add 2 tablespoons oil to skillet and brown pork shoulder all over, about 5 minutes. Transfer to pan.
  • Pat pork ribs dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add remaining 2 tablespoons oil to skillet and brown ribs well in 2 batches, turning, about 6 minutes per batch. Transfer to pan.
  • Heat reserved oil from polpette in skillet over medium heat until it shimmers. Fry meatballs in 2 batches (do not crowd), turning occasionally, until well browned, about 6 minutes per batch. Transfer to paper towels using a slotted spoon. (Discard oil.)
  • Finish ragù:
  • Return sauce to a simmer and carefully add all meats and juices. Simmer, partially covered, gently stirring occasionally (do not break up meatballs), until all meats are tender, about 2 1/4 hours.
  • Transfer meats with tongs to a large platter. Serve with fettuccine and remaining sauce.

1 medium onion, chopped
1 medium green bell pepper, chopped
1 medium zucchini, chopped
1/2 teaspoon salt
2 garlic cloves, peeled, smashed and minced
2 teaspoons italian seasoning
1 (24 ounce) jar Ragú® Pasta Sauce (meat creations sweet italian sausage and cheese sauce)
3 (14 1/2 ounce) cans beef broth
1 (15 ounce) can garbanzo beans, undrained
1 (15 1/2 ounce) can black beans, undrained
1 (14 1/2 ounce) can petite diced tomatoes, undrained
8 ounces uncooked pasta (your favorite kind)
1 lb sweet Italian sausage, cooked and sliced thin
1 lb frozen prepared italian style meatballs, thawed
2 tablespoons grated parmesan cheese (garnish)

Steps:

  • Place a 4-5 quart Dutch oven over medium high heat. Add the olive oil, onion, green pepper, zucchini and salt. Mix well. Cook for 6-8 minutes, stirring often, until just heated through. Add the garlic and Italian seasoning. Mix well. Add the Ragu sauce, beef broth, garbanzo beans, black beans and diced tomatoes. Mix well and bring to a simmer. Add the pasta and cook until pasta is al dente. Add the sausage and meatballs. Mix well and bring to a simmer to heat through.
  • Top each individual serving with grated Parmesan cheese, if desired.

8 slices Parmigiano-Reggiano cheese
2 cloves minced garlic
2 tbs chopped fresh parsley
2 pounds ground beef
1 cup bread crumbs
1 teaspoon fresh oregano, chopped
1 tablespoon fresh basil, chopped
2 teaspoons chopped garlic
salt to taste
fresh ground pepper
6 eggs
1/2 cup water
1/2 cup grated Parmesan cheese
Oil, for frying
3 pounds hot or mild Italian sausage
Oil, for frying
1 tablespoon olive oil
1/4 onion, chopped
1 (28-ounce) can crushed tomatoes
1 (28-ounce) can pureed tomatoes

Steps:

  • Make brasciola: start with slice of cappicola, lay a slice of Parmesan on the cappicola, and follow with garlic and parsley. Roll each pile into cigar-shaped rolls, and hold in place with toothpicks.
  • In the bowl of an electric mixer, add ground beef, breadcrumbs, oregano, basil, garlic, salt, pepper, eggs, water and parmesan cheese and mix well. Form the meat mixture into 2-inch balls. Heat a large saute pan. Add enough oil to fry in. Add the balls and fry until evenly browned.
  • In a large saute pan, add oil and heat. Fry the sausage until evenly browned.
  • In a large saucepan, heat olive oil. Add onion, and saute until golden. Add brasciola rolls, meatballs, sausage, pureed tomatoes and crushed tomatoes. Simmer uncovered for one hour. Remove brasciola, meatballs and sausage and serve separately if desired. Taste ragu, and season with salt and pepper according to preference.

These are very cheesey. Unfortunately, they can fall apart while frying. If they do, just scrape up the bits and put that in your spaghetti sauce also. It's hard not to eat them all up as they come out of the pan, they're that good.

4 slices dry bread
2 eggs
2 tablespoons chopped parsley
1 teaspoon oregano
1 teaspoon basil
1 dash pepper
1 lb hamburger
1/2 lb grated parmesan cheese
1 garlic clove, minced
2 tablespoons oil

Steps:

  • Soak bread in some water for 2 or 3 minutes, then squeeze out moisture.
  • Combine bread with everything else except olive oil, mixing well.
  • Form in small balls (about 20).
  • Brown slowly in oil, watching closely to prevent scorching.
  • Add to spaghetti sauce.
  • Cook 30 minutes in the sauce.

I use Chianti wine for this recipe but any good dry red wine will do, this can be made using a mixture of ground beef and pork but Italian sausage meat is so much better --- if possible prepare this a day ahead and refrigerate to allow flavors to blend just rewarm on top of the stove

1/4 cup olive oil
12 ounces Italian sausages, casings removed (can use more)
1 -2 tablespoon fresh minced garlic
2 teaspoons red pepper flakes (you can use more if you like spicy)
1 teaspoon dried oregano (optional or adjust to suit heat level)
2 -3 carrots, peeled and cut into about 1/2-inch cubes
1 large onion, chopped
1 celery, finely chopped
3 cups whole canned tomatoes, finely chopped (I use one 28-ounce can of whole tomatoes, drained then chop the tomatoes)
1 cup chicken broth (more if needed)
1/3 cup dry red wine
1/2 cup chopped fresh basil
salt & freshly ground black pepper (to taste)
12 ounces penne pasta
1 1/2 cups grated parmesan cheese (or to taste)

Steps:

  • In a large skillet heat oil over medium heat.
  • Add in the sausage meat, garlic, oregano and pepper flakes; sauté until brown, breaking up the meat with a fork (about 7 minutes).
  • Add in finely chopped carrots, onion and celery; sauté for about 10 minutes.
  • Mix in chopped tomatoes; reduce heat, cover and simmer about 20 minutes, stirring occasionally.
  • Add in 1 cup broth and wine; simmer uncovered until liquid is slightly reduced (about 20 minutes).
  • Add in the fresh basil; cover and simmer until the veggies are very tender, stirring occasionally.
  • Continue to simmer for about 45-50 minutes, adding in more broth by about 1/4 cup if the liquid evaporates to quickly, and cook until the Ragu thickens to desired consistency.
  • Season with salt and pepper to taste.
  • Cook the pasta in a large pot of boiling salted water until just firm-tender; drain but reserve about 1/2 cup cooking water.
  • Return the pasta to the pot; add in the Ragu; mix to combine.
  • Add in about 1/2 - 3/4 cup Parmesan cheese and 2-3 tablespoons olive oil; mix to combine.
  • If the mixture seems too dry then add in some of the reserved cooking water from the pasta.
  • Season with more salt and pepper.
  • Divide on plates and top with more cheese.

1/2 cup dry Italian seasoned breadcrumbs
1/4 cup feta cheese
1 egg, beaten
3 tablespoons water
1 tablespoon dried parsley
1 tablespoon dried minced onion
1/4 cup Italian seasoned breadcrumbs, coat meatballs
1 (16 ounce) package frozen cavitelli pasta
1 tablespoon butter
1 (24 ounce) jar meat creations Ragú® Pasta Sauce
1 teaspoon Italian spices
1/2 teaspoon fennel seed
1 teaspoon dried basil
1 tablespoon honey

Steps:

  • Meatballs: In a bowl mix together, sausage, crumbs, cheese, egg, water, parsley, onion. Mix and form into balls, 1 1/2 inches. Coat in crumbs Yields 16 balls. Bake at 400 degrees for 25 - 35 minutes.
  • Pasta: Cook as directed on package. Drained and added 1 tablespoon of butter.
  • Sauce: In a large sauce pan, empty jar of sauce and add Italian seasoning, fennel seeds, dried basil, and honey. Bring to a simmer, stirring occasionally.
  • Add cavitelli and meatballs to sauce and simmer for 15-20 minutes until heated through.
