MOM'S ONION BREAD
My mom use to make this for my brother and I when we were young. I had forgotten about this recipe until I had an onion roll purchased at Albertsons. This bread is good toasted aside eggs and bacon. Excellent for a my husbands favorite liverwurst and onion sandwich.

Steps:
- 1. Disolve the 2 packages of yeast in the warm water until yeast proofs ( I do this in my kitchenaid )
- 2. Once proofed add remaning ingredients except the flour and mix until blended ( I do this with the dough hook attachment )
- 3. Add 3 cups of flour and mix you will need to add more flour until the dough pulls away from the bowl. I add in 1/2 a cup increments
- 4. Put the dough in a lightly oiled bowl, cover with a towel and let it rise until double ( mine doubled in an hour. I let me dough rise in my microwave )
- 5. Once you have reached your first rise punch down and form two loaves and place in your loaf pans. Let the dough rise for the 2nd time until double
- 6. Brush with melted butter. You can top with whatever you wish or leave it plain. I made one loaf with poppy seeds and 2nd with sesame seeds and dried onions
- 7. If you are using a glass loaf pan your oven needs to be at 325 and if your are using metal loaf pan your oven needs to be at 350.
- 8. Bake 45 minutes until your bread is golden brown and let cool on a wire rack
ONION BREAD
This recipe originally came from the booklet that accompanied my bread machine. I've modified it a bit and it's my family's favorite bread. We use it for sandwiches, toasted with parmesean cheese for dinner and even just toasted with butter for breakfast!

Steps:
- Measure and add liquid ingredients to the bread pan.
- Measure and add dry ingredients (except yeast) to the bread pan.
- Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour into the well.
- Close up bread machine.
- Choose the "basic" setting that most machines have - it's the three hour setting on mine.
- I always use the "light" crust color because the bread comes out quite a bit softer.

MOM'S EASY ONION-PARMESAN TOPPED BREAD
We've been making and enjoying this yummy bread for decades, it's a real family favorite for over forty years! Quick and easy using a storebought French bread (or bake your own). Goes great with just about anything, from grilled steaks to summer salads to spaghetti or lasagna dinners. I'm sure this bread with it's light golden, fluffy topping will become your family's favorite, too. Enjoy! :) Notes: Can either be wrapped in foil and heated on the grill, -or- baked in the oven. Let rest for at least five minutes before cutting and serving. Careful, as topping will be very hot!

Steps:
- Combine cheese, mayonnaise, and onion.
- Spread on halved French bread.
- Place on baking sheet, bake at 375 for 15 to 18 minutes or until bubbly and lightly browned (or wrap in foil and heat on grill).
- Do not overcook.
- Remove from oven, let sit 5 minutes, then cut into serving pieces and enjoy. Careful, as topping will be very hot!

SWEET ONION BREAD
Steps:
- Preheat the oven to 350 degrees. Grease a 9 by 5 by 3-inch loaf pan. In a saute pan, heat the olive oil. When the oil is hot, caramelize the onions for about 10 minutes. In an electric mixer with a whip attachment, whip the egg whites until stiff. Switch the whip attachment to a paddle attachment and cream the butter and sugar together. Add the egg yolks, one at a time, beating well after each yolk. With the machine running add the apple juice and ginger. In another bowl, combine the flour, baking powder, salt and pepper, together. With the machine on low speed, alternate adding the flour 1/3 at a time with the milk. Do not over mix the batter. Fold in the stiff egg whites. Pour the batter into the prepared pan. Bake for 50 to 60 minutes or until the center of the bread comes out clean. Remove the pan from the oven and invert onto a wire rack. Allow the bread to cool for 5 minutes before slicing. Slice a couple of slices from the loaf and place the loaf and the slices on a plate.

MOM SAMPSON'S SPOONBREAD
Steps:
- Preheat oven to 375 degrees. Slowly add cornmeal to the boiling water, stirring constantly until thick and smooth. Add butter and salt and cool to lukewarm. Then add eggs and milk. Beat for 2 minutes, then pour into a greased casserole and bake for 35 minutes or until golden brown. Spoon out while piping hot and pass the butter!
MOM'S BREAKFAST STRATA
This strata makes breakfast less hectic because all the prep work is done the night before. The quantities of mushrooms, onions, and green peppers can be varied to suit the tastes of those who will be eating this dish.

- Grease a 9x13 inch baking dish. Layer half of the torn bread in the bottom of the dish. Sprinkle the mushrooms and green bell pepper evenly over the bread layer. Sprinkle with half of the cheese. Top with remaining bread pieces, then layer with the onion and ham. Sprinkle with remaining cheese. Whisk together eggs and milk; pour over the entire pan. Cover with aluminum foil, and refrigerate for 12 to 24 hours.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake covered for 35 minutes, then remove foil and bake for an additional 15 minutes, or until top is evenly brown.

This is one of the few recipes I have there were my mother's. I remember having this often in the summer if the onions did well in the garden.

- Place onions and mushrooms in pan.
- Combine soup and milk. Pour over onions.

LADY AND SON'S ONION-CHEESE BREAD - PAULA DEEN

- Preheat oven to 400°F.
- Heat the oil in the skillet over medium heat.
- Add the onions and cook until tender, about 7 minutes.
- In a large bowl, add the milk and egg to biscuit mix, stirring just until the mix is moistened.
- Fold in the onions and 1/2 cup of cheese.
- Spoon the dough into a buttered 8-inch round cake pan.
- Mix the onion salt or powder - into the melted butter and drizzle the mixture over the dough.
- Sprinkle the bread with chives or parsley and bake for 15 minutes.
- Top the bread with remaining 1/2 cup of cheese and bake until the bread is cooked through and the cheese top golden, about 5 minutes longer.
