MOM'S EXTRA SHARP MAC AND CHEESE
My Mom has been making mac and cheese this way for as long as I can remember. It gets a cheesy crust on top that the family fights for.

Steps:
- Pre-heat the oven to 400 degrees F.
- In a 2-quart square baking dish place 1/2 a cup of cooked macaroni in a single layer.
- Cover macaroni with cheese evenly.
- Layer another 1/2 a cup of of macaroni on top of the cheese.
- Cover macaroni with cheese evenly.
- Layer another 1/2 a cup of of macaroni on top of the cheese.
- Add the milk.
- Cover macaroni and milk with cheese evenly.
- Bake for 20 minutes.
- Set the oven to broil and and broil mac, milk and cheese 6"-8" away from broiler for 5-7 minutes or until cheese is browned.
- Warning: HOT, let cool for 5-10 minutes before serving.
- Enjoy!

Steps:
- For the pan: Bring a pot of water to a boil. Add the pasta and cook until al dente according to the package instructions.
- Butter the bottom and sides of a 9-by-9-inch baking dish or aluminum pan. Add the cooked pasta.
- Preheat the oven to 350 degrees F.
- For the sauce: In a large pot over medium heat, add the butter and heat until melted. Add the flour and cook, stirring, until the mixture smells like popcorn, about 5 minutes. Slowly add the milk, stirring or whisking while adding. Taste and season the pot with salt and pepper. Add the cheese cubes and stir until melted.
- Pour the sauce over the pasta and gently shake the baking dish to settle the sauce in the nooks and crannies. Top with the shredded Cheddar and bake until the corners are brown, 25 to 30 minutes.
MARK'S MOM'S MACARONI AND CHEESE

- Preheat oven to 400 degrees F.
- In a small saucepan over medium heat, melt butter and then stir in flour; cook for 1 minute or until lightly golden. Slowly add the milk to the flour mixture, stirring until thickened, and then stir in the 3 cheeses until fully melted. Season with salt and pepper, to taste. Add cooked macaroni and stir to coat evenly. Transfer to a shallow baking dish. Bake for about 45 minutes, until brown and crisp on top.
- Remove from oven and preheat the broiler. Sprinkle Parmesan and bread crumbs over top. Return to the oven and broil until cheese is bubbly.

Steps:
- Cook macaroni in boiling salted water until tender; drain.
- Mix cooked macaroni with butter, stirring well.
- While macaroni is cooking, cook ground beef, garlic and onion in a large skillet until beef is browned and cooked through.
- Drain any accumulated fat.
- Add chili powder, salt, pepper, tomato sauce, diced tomatoes (with their juice), mixing well.
- Bring meat mixture to a boil, then reduce heat, cover and simmer for 10-15 minutes or until macaroni is done.
- Mix meat mixture with cooked buttered macaroni (do NOT add any additional milk as package suggests).
- Sprinkle contents of cheese packets into pasta and stir until blended.
- Serve garnished with grated cheddar, if desired.

- Preheat oven to 375 degrees. Butter a 2 1/2-quart casserole dish; set aside.
- Warm the milk and tomato paste in a medium saucepan over medium-low heat. Whisk in the salt, pepper, cayenne pepper, cheddar cheese, and 1/2 cup Swiss cheese; set the cheese sauce aside.
- Cover a large pot of salted water, and bring to a boil. Cook until pasta is al dente, about 7 minutes. Drain well in a colander. Stir macaroni into reserved cheese sauce.

- Boil water and cook the macaroni according to the directions on the box.
- While the macaroni is cooking, melt the butter in a sauce pan. Stir in the flour. Add the milk slowly. Cut the cheese into small pieces and add it to the milk mixture. Stir until the cheese is melted being careful not to let it burn on the bottom of the sauce pan.
- Drain the macaroni when it is cooked.

- Preheat oven to 350 degrees F (175 degrees C).
