MY MOM'S GOOD OLD POTATO SALAD



My Mom's Good Old Potato Salad image

I have enjoyed this recipe for years, and now so do my children. The secret to this recipe is the sweet pickles. You can also trade the mayo for salad dressing.

5 pounds potatoes, peeled and chopped
10 eggs
1 large onion, chopped
1 (24 ounce) jar sweet pickles, drained and chopped
2 cups mayonnaise

Steps:

  • Place the potatoes in a large pan of water and boil over medium-low heat until tender, about 12 minutes. Drain the potatoes, and place in the refrigerator to cool.
  • Place the eggs in a saucepan of cold water over medium heat, and bring to a full boil. Turn off the heat, cover the pan, and allow the eggs to sit in the hot water for about 15 minutes. Cool the eggs thoroughly under cold running water and shell them. Chop the cooled eggs and place them in a large salad bowl.
  • Stir the onion, sweet pickles, and mayonnaise into the eggs, and let the mixture chill in the refrigerator at least l/2 hour to blend the flavors. Mix in the chilled chopped potatoes, and refrigerate for at least 1/2 hour. Serve cold.

2 tablespoons yellow mustard

  • peel, chop, and boil potatoes (the pieces should be a cubic centimeter).
  • hard boils the eggs.
  • in a large bowl combine mustard, mayo, and relish.
  • add the potatoes and mix with a wooden spoon.

6 hard-boiled eggs, diced
3/4 cup finely chopped celery
1 medium sweet onion, minced
1 large dill pickle, diced
1/2 teaspoon celery seed
2 tablespoons pickle juice
1/4 teaspoon dry mustard
1 tablespoon chopped pimiento
yellow mustard
1 cup mayonnaise
paprika
salt & pepper

  • In a medium size bowl, mix 1 cup mayonnaise with enough yellow mustard to make it a soft yellow, add pickle juice, dry mustard, celery seed, potatoes, eggs, celery, onion, diced pickle and chopped pimento, salt and pepper to taste, combine all and sprinkle paprika on top and refrigerate to chill.

2 1/2 pounds white thin skin potatoes, peeled and diced
2 tablespoons white vinegar or cider vinegar
1 (6-ounce) jar, sliced pimento, drained and chopped
1 cup frozen sweet peas
1 small white onion, peeled and left whole
1/2 cup mayonnaise or reduced fat mayonnaise or, just enough to bind salad
Salt and pepper

Steps:

  • Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return potatoes to hot pot to dry them. Sprinkle potatoes with vinegar. Transfer potatoes to a bowl and let them cool.
  • When potatoes have cooled, add pimento and peas to the bowl. Using a hand held grater, grate the small white onion over the potatoes. The onion juice is what makes this salad so good. Add 1/2 cup of mayonnaise dressing to the bowl, or to your liking, to bind.
  • Season potato salad with salt and pepper, to taste. Transfer to plastic serving wear and pack up for your picnic. Keep this salad in your cooler with beverages or chill until ready to travel.

MOM'S POTATO WATERCRESS SALAD

1 1/2 pounds small, white skinned waxy potatoes, like Yukon Golds
A drizzle extra-virgin olive oil
1/2 cup plain yogurt
1/4 cup extra-virgin olive oil
2 tablespoons prepared horseradish or 1/2 teaspoon wasabi powder
1 bunch watercress, washed
Coarse salt

Steps:

  • Quarter potatoes and place in a medium saucepan, cover with water, and place over high heat to bring water to a boil. Boil potatoes until just tender, 10 minutes. Drain and return to warm sauce pan. Drizzle potatoes with a touch of oil and let stand 5 minutes in warm pot to dry them out.
  • Transfer cooked potatoes to a bowl. Combine yogurt, oil, and horseradish and pour over potatoes. Coarsely chop the leafy tops of watercress and add to the mixing bowl with potatoes. Sprinkle a little coarse salt over the bowl and toss salad to coat evenly. Adjust salt to your taste and serve at room temperature.

This is the Potato Salad I had grown up with...nothing compares to it. So after getting frustrated at my mom's lack of measuring, I was finally able to get the right measurements for my Mom's Classic (Creamy) Potato Salad.

6 -8 russet potatoes (with Skins)
6 eggs, hard boiled
1 large onion, diced
6 tablespoons white vinegar

2 cups Miracle Whip
1/2-1 teaspoon paprika (for garnish)

Steps:

  • Boil potatoes in salted water until fork tender (about 10 - 20 minutes).
  • Remove from water and let cool on the counter.
  • Hard boil the eggs.
  • Place potatoes (with skins) and hard boil eggs in the refrigerator overnight.
  • Peel and dice the potatoes and place in a bowl.
  • Peel and dice the eggs and place in the bowl with potatoes. (Note: Reserve 7 egg slices to decorate the top of potato salad.).
  • Dice onion and add to the potato and egg mixture.

Everyone loves a good potato salad on a hot summer day! If you haven't made it for awhile, this is a new recipe you NEED to try!

8 potatoes (cooked)
8 eggs (hard boiled)
¾ cup dill or sweet pickles (diced)
2 celery stalks (diced)
1 cup mayonnaise ((you could also use Miracle Whip))
3 Tablespoons yellow mustard
1 Tablespoon sugar
1 teaspoon white vinegar
salt and pepper (to taste)
Salad Supreme Seasoning (optional to sprinkle on top)

Steps:

  • Bring two pots of water to a boil. In one pot boil your potatoes for about 30-40 minutes, or until fork can easily pierce through the potato, but not too soft that they just fall apart. Drain water off of potatoes and let them cool (I usually put the potatoes in the fridge to cool).
  • Once your potatoes are cool, peel and dice. Place diced potatoes, diced celery, and pickles in a large bowl. Dice the eggs and add it to the bowl (sometimes I will set aside 1 egg and slice it to put on top of the potato salad for presentation - totally not necessary, it's just what my mom always did).
  • In a separate small bowl, mix your mayonnaise, mustard, sugar, vinegar all together. Pour your sauce over the potato mixture in the big bowl and gently fold together. Add salt and pepper to taste. If it is dry, you can add more mayo to get it the texture you like. Top with Salad Supreme seasoning. As mentioned before, you can also save 1 hard boiled egg to slice and add it to the top.

This is a basic Alabamian potato salad that has tested the time for many important holidays. Easy and tastes awesome, especially on the 2nd day when all the flavors mix. Can be served cold or hot (first day).

4 -6 cups white potatoes
1/2 cup dill pickle
1 medium onion
3 -4 stalks celery
6 -8 hard-boiled eggs

  • In a 2" sauce pan fill with 4-6 peeled chopped potato's (about 1/2" squares).
  • pour in larger pan and pour water about 1/2" below top of potato's.

  • chop/dice dill pickle.
  • dice medium onion.
  • fine dice celery.

  • slice 2-4 eggs to put on top of salad, salt pepper and sprinkle light with cayenne.
  • Cover with saran wrap and let sit over night for best flavor or serve immediately.

This is a traditional potato salad that is made from scratch.

6 large potatoes - peeled and cubed
3 eggs
1 onion, finely chopped
3 stalks celery, diced
3 teaspoons sweet pickle relish
1 (4 ounce) jar pimentos
2 teaspoons prepared mustard
3 tablespoons creamy salad dressing
1 teaspoon paprika

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, place in a large mixing bowl and beat until smooth.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a mixing bowl, combine the potatoes, eggs, onion, celery, relish and pimentos.
  • Blend together the mustard and salad dressing, add to salad and mix well. Sprinkle with paprika and refrigerate until chilled.
