This is so good! DO NOT skimp on the ingredients! Use exactly what it calls for, otherwise it will not set up.

Steps:
- Mix cocoa, sugar, salt, and milk together in heavy saucepan.
- Boil to "soft ball stage".
- Add margarine and cool.
- Add vanilla and beat until stiff.
- Pour into well greased 8x8 or 9x9 pan.

MOM'S FUDGE FROSTING
I'm not sure where the original recipe comes from, but my mom gave me the BEST chocolate frosting recipe. Once you try this, I doubt you will ever use another. Seriously.

Steps:
- Place chocolate chips and butter in a pan (I use an 8 quart to have plenty of room for stirring).
- Use the butter wrappers to grease a 9 x 13 pan.
- Cut up 20 large marshmallows into the pan.
- (Can use 2 C mini) Put in the freezer.
- Place 20 large marshmallows, canned milk and sugar in 6-8 quart heavy pan.
- Stirring, bring to a boil.
- Continue to boil exactly 5 minutes, stirring constantly (Don't worry if there are some darker streaks, just stir better).
- Pour mixture over chocolate chips and butter.
- Continue stirring until mixture looses it's shine and becomes glossy.
- This can take anywhere from 15-30 minutes.
- Stir in vanilla and frozen marshmallows.
- (You can also add nuts at this point).
- Return to the buttered pan and refrigerate.
- I've made this in small tins for gifts by lining them with plastic wrap and placing a piece of cardboard, covered with parchment, on the bottom (inside the plastic wrap).

MOM'S HOT FUDGE SAUCE
I like this recipe the best because of its smoothness and I think the confectionery sugar makes it sweet but not too sweet

Steps:
- Melt chocolate and butter over low heat.
- Remove from heat and add alternately sugar and milk. It will be lumpy they will dissolve over heat.
- Return to heat put on medium and bring to a simmer, reduce to low heat for 10 minutes.
- Stirring constantly I use a whisk. The sauce should be thicker if not cook additional time, you can also add more sugar but I prefer to just cook it longer.
- Will keep in refrigerator for a couple of weeks.
- Enjoy.

- Mix cocoa and sugar; then add milk and all the Karo syrup.
- Cook on High 10 minutes, stirring at 7 minute and 3 minute or until soft ball stage.
- Add butter, vanilla, and nuts.
- Cool slightly.
- Beat until stiff and pour into a buttered 8" square.
- Let cool and cut into squares.
- Can also be made with skimmed canned milk and or carob powder.
MOM'S CHRISTMAS FUDGE
This has been a Christmas staple in our house since the early 1980s. It's ridiculously easy and pretty yummy. (I use the plastic bag over my hand trick to smooth out the fudge.)

- Line a 9x13-inch pan with parchment paper.
- Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes. Stir in peanut butter until smooth. Pour in sweetened condensed milk and stir until well combined. Pour into the prepared pan.
- Using the back of a spoon or with a plastic bag over your hand, press the fudge into the pan. Refrigerate until firm, 2 to 4 hours.
- Remove fudge from pan and cut into squares. Store in an airtight container.

MOMS COCOA FUDGE
My mom made the best fudge when i was a kid. She stopped making it after we got older and forgot the recipe. This is the recipe off of the Hersheys Cocoa can. It took me forever to find it again. Very rich and stops the chocolate cravings. A favorite at Christmas time.

- . Line 8-or 9-inch square pan with foil, extending foil over edges of pan. Butter foil.
- Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil. Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan.)
- Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread into prepared pan; cool completely. Cut into squares. Store in tightly covered container at room temperature. About 36 pieces or 1-3/4 pounds.
- NOTE: For best results, do not double this recipe.
- VARIATIONS:
- NUTTY RICH COCOA FUDGE: Beat cooked fudge as directed. Immediately stir in 1 cup chopped almonds, pecans or walnuts and spread quickly into prepared pan.
- MARSHMALLOW-NUT COCOA FUDGE: Increase cocoa to 3/4 cup. Cook fudge as directed. Add 1 cup marshmallow creme with butter and vanilla. DO NOT STIR. Cool to 110°F (lukewarm). Beat 8 minutes; stir in 1 cup chopped nuts. Pour into prepared pan. (Fudge does not set until poured into pan.).

- 1. Mix all ingredients (EXCEPT the peanut butter) over medium heat until mixture reaches soft ball stage. This takes about 7 - 7 1/2 minutes. You can use a candy thermometer to check this or you can do what my mom did. She used a small dish of cold water. She would place a very small amount(just a few drops)of the boiling mixture into the water to see if it would hold a ball shape. If it dissolved in the water as soon as it hits the water, it's not ready. If it hardens immediately upon hitting the water, it's too late. If you can push the mixture easily into a ball shape it's ready.
- 2. After you've reached soft-ball stage, add peanut butter. Stir thoroughly and until peanut butter is completely melted. Pour into buttered dish. ENJOY!!
