PASO MOM TACOS WITH HOME FRIED TACO SHELLS
Fried tortillas make the perfect vehicle for homemade tacos. You won't stop at just one.

Steps:
- In a large skillet, brown the beef. Once it starts to change color, add the taco seasoning to taste. Drain off the drippings and keep warm.
- In a large fry pan filled with oil to 1-inch depth, heat the oil until a bit of tortilla sizzles. Fry the tortillas into taco shapes. Fry on one side for about 20 seconds, flip, and fold, holding with tongs. Fry until crisp. Flip and fry the other side.
- Drain the cooked shells on paper toweling.
- Once the shells are fried, fill with beef and add other toppings such as lettuce, cheese, tomatoes, salsa, and sour cream.
- Serve immediately.

FRIED BEEF TACOS
Steps:
- For the fried taco shells: Add about 1/2 inch oil to a medium high-sided pot. Heat to 350 degrees F.
- Meanwhile, roll each biscuit into a 6-inch circle. Working in batches, fry the biscuits until golden brown, about 1 minute per side. Remove to a paper towel-lined sheet tray. Sprinkle with salt.
- For the filling: Add the oil to a medium skillet over medium-high heat. Add the ground beef and cook, breaking up with a spoon, 5 to 6 minutes. Meanwhile, mix together the taco seasoning in a small bowl: chili, garlic, and onion powders, Mexican oregano, cumin, paprika, salt, pepper and red pepper flakes. Add to the beef, along with the beer. Continue cooking until the beef is no longer pink and the sauce has thickened slightly, 2 to 3 minutes.
- Assembly: Place a fried biscuit on a plate. Top with a scoop of filling followed by the cheese, lettuce, olives, tomatoes and scallions. Finish with a dollop of sour cream and a dash of hot sauce. Repeat to make 5 more tacos.
FRIED FISH TACOS

- Fill a large deep frying pan about 1/3 full of vegetable oil. Heat to 375°F.
- Place the breadcrumbs in a dish. In a separate dish, beat the eggs with salt and pepper and the water.
- Cut each fish fillet into 4 equal pieces , then season with salt and pepper. Dip the fish into the eggs, then into the panko bread crumbs. Place on a tray lined with paper towels and let rest for 15 minutes to allow the breading to set.
- Cook the fish a few pieces at a time until golden brown and cooked through, about 5 - 7 minutes. Drain on paper towels.
- To warm the tortillas, heat a dry frying pan over medium heat and warm the tortillas in the pan until it softens and is hot, about 30 seconds.
- Spread the dip on the tortillas, then top with the coleslaw, avocado, tomato then the fish.
- *Chipotle Mayonnaise; 1 cup mayonnaise, 2-3 chipotle chilies (canned in adobo), 1 tablespoons adobo sauce and juice from 1/2 a lime. Blend all of the ingredients in a food processor, then cover and refrigerate.*.

FRIED TACOS

Steps:
- Brown beef over low heat, break up into fine pieces. Drain.
- Add beans, smash & mix into beef.
- Add salt, chili powder, & 2 T of taco sauce; remove from heat.
- Wrap tortillas in towel & microwave 20-30 seconds to soften.
- Heat oil in deep fryer.
- Spread meat mixture on center of each tortilla.
- Fold tortilla over & press closed.
- Drop each taco into hot oil & fry until crispy.
- Drain cooked tacos on paper towels.
- Open shells & add 1/2 slice cheese, lettuce, and taco sauce.
- Spend next several hours on treadmill.

MOM'S FRIED CHICKEN GIZZARDS
If I had to choose my last meal, it would be my mom's fried chicken gizzards, with mashed potatoes and gravy. Mom still makes them for me every year on my birthday (and on special request!) People either love gizzards or hate them.. For those of us who LOVE them.. here is the recipe that I live for. Hope you enjoy!

Steps:
- 2-3 hours prior to cooking. In a large bowl or dutch oven, place gizzards, water and 2 Tbls salt. Let soak. (This draws out that bloody/organ taste). Change salty water every 1/2 hour to hour, for 2-3 hours.
- Drain gizzards. Place drained gizzards on paper toweling, and pat dry.
- Salt and Pepper both sides of the gizzards.
- In a large zippy bag, place flour and salt and pepper.
- In your favorite chicken frying pan (I use Grandma's old cast-iron skillet), melt enough shortening to get 1/4" in the pan.
- Place a handful of gizzards in flour baggie. Shake.
- Remove gizzards from baggie. Shake off excess flour mix.
- Gently place gizzards in the hot shortening. Cover with lid ajar. Cook for 5 mins on Medium-High heat, or until browned.
- Turn gizzards, and cover for another 5 mins or until browned.
- (Pleae note: Gizzards will fry better if cooked in batches. Place cooked gizzards in the oven on 'warm' or 200 degrees, between batches.).
- Enjoy!
MOM'S FRIED TACOS
This is how my mom has made tacos my whole life. I always request them when I am home for a visit. Way better than the boxed meal! Make them as little or as spicy as you like with your toppings. I like mine to taste like a cheeseburger. The corn tortillas I use are found in the refridgerated section of the store.

Steps:
- Heat oven to the "warm" setting to keep the cooked tacos warm while frying the bunch.
- Take a scoop of hamburger about the size of a golf ball and press it on one half side of a tortilla. Spread it out to cover as much of the half as you can. Do this to each tortilla.
- Cover the finished stack with a slightly damp paper towel to keep the tortillas from drying out around the edges.
- In the largest skillet you have, heat about 1/2 inch to 3/4 inch oil. Once it is hot, lay a tortilla (hamburger side up) in the hot oil.
- After the tortilla has softened in the oil, about 5-10 seconds, use tongs to fold it in half. Let it cook in the oil for about 2-3 minutes. Flip over for another 2-3 minutes.
- Remove tacos from the oil with tongs and let any excess oil run out one end before placing on a cookie sheet covered with paper towels. Keep these in the oven as you cook the batch.
- Once finished serve with toppings.
