MOM'S FRIED POTATOES

Mom's Fried Potatoes image

Provided by Michele

Time 30m

Number Of Ingredients 4

4 to 5 russet potatoes, sliced 1/4 inch round
3 tablespoons of fat (butter, ghee, olive oil, duck fat, lard, or left over bacon fat)
salt
pepper

Steps:

  • Step 1 1) Heat pan over medium heat, add fat, wait 30 seconds and add potatoes, sprinkle with salt and pepper.
  • Step 2 2) Fry covered over medium heat for 10 minutes. This will soften the potatoes and brown them on the first side.
  • Step 3 3) Remove cover and flip the potatoes with a spatula to the other side (as best you can) and brown the other side for 8 minutes or until desired doneness.
  • Step 4 4) My favorite is to serve these with broiled fish or breakfast, but they go well with anything.

1/4 c olive oil
3 to 4 Tbsp unsalted butter
1 large onion, yellow or vidalia

FRIED NEW POTATOES

Fried New Potatoes image

Provided by Michael Symon : Food Network

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

Extra-virgin olive oil, for the potatoes
2 pounds baby Yukon potatoes
Kosher salt and freshly cracked black pepper
4 cloves garlic, sliced
Flakey salt, for serving
Chopped fresh dill, for serving
1 lemon, for serving

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Place a heavy-bottomed Dutch oven over direct heat. Add a drizzle of olive oil along with the potatoes. Season with salt and pepper and add the garlic. Cook, stirring occasionally, until golden brown on all sides, 5 to 7 minutes. Add enough water to cover the potatoes halfway, close the grill and steam until the potatoes are cooked through and the water has evaporated, 10 to 12 minutes.
  • Lightly smash the potatoes with a potato masher and drizzle with more olive oil. Cook until the potatoes are crispy on the bottom, about 5 minutes. Serve sprinkled with flakey salt and dill and a squeeze of lemon.
  • (Alternatively, you can cook the potatoes over medium-high heat on a stovetop.)

MOM'S SCALLOPED POTATOES

Mom's Scalloped Potatoes image

This is the way my mother always made her scalloped potatoes. The measurements are taken from other recipes because she always just winged it, but the method is the same. The key is to heat the milk first!

Provided by Jane Boswell-Purdy

Categories     Side Dish     Potato Side Dish Recipes     Scalloped Potato Recipes

Time 1h15m

Yield 6

Number Of Ingredients 6

3 pounds potatoes, thinly sliced
½ onion, thinly sliced
9 tablespoons all-purpose flour, divided
6 tablespoons butter, diced and divided
salt and ground black pepper to taste
3 cups whole milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
  • Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
  • Bake in preheated oven until potatoes are tender, 45 to 60 minutes.
