With smoky bacon, nutty Gruyère, and shallots, this classic quiche Lorraine is one of the most satisfying dishes imaginable.

One 9-inch deep-dish frozen pie crust
8 oz thick-cut bacon (about 6 slices), diced
½ cup chopped shallots, from 2 medium shallots
4 large eggs
1¼ cups heavy cream
¼ teaspoon salt
⅛ teaspoon cayenne pepper
Pinch ground nutmeg
4 oz Gruyère, finely shredded (about 1¼ cups)

Steps:

  • Blind bake the crust: Preheat the oven to 400°F and set a rack in the middle position. Remove the pie crust from freezer and thaw until just soft enough to easily prick with a fork, about 10 minutes. (If there are any cracks in the crust, see note below on how to patch them up.) Prick the bottom and sides all over with a fork. Place the crust on a baking sheet to make it easy to move in and out of the oven. Bake on until lightly golden, 10 to 15 minutes. Keep an eye on it; if it puffs up while cooking, gently prick it with a fork so it will deflate. (If it cracks while baking, see note below for instructions on how to patch it up.) Set aside and reduce the oven temperature to 325°F.
  • In a medium nonstick sauté pan over medium heat, cook the bacon, stirring occasionally, until crisp, about 10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain. Pour off all but one tablespoon of fat from the pan. Add the shallots and cook over medium-low heat until soft and translucent, 3 to 4 minutes. Do not brown. Remove the pan from the heat and set aside.
  • In a medium bowl, whisk the eggs. Add the heavy cream, salt, cayenne pepper, and nutmeg; whisk until evenly combined.
  • Spread the shallots evenly over the bottom of the cooked crust. Top with half of the bacon, all of the Gruyère, and then the remaining bacon. Pour the egg/cream mixture over top.
  • Slide the quiche (still on the baking sheet) into the oven and bake at 325°F for 45 to 50 minutes, until the custard is set and lightly golden. Serve hot or warm.
  • Note: Don't panic if your crust has cracks -- you can easily fix it. Make a smooth paste by mixing 1 tablespoon of flour with 1 tablespoon of water. Use your fingers to patch up and fill any cracks, then proceed with the recipe. If the crust cracks while blind baking, patch it afterwards and place it back in the oven for a minute or so to set. It should be good as new.
  • Make-Ahead Instructions: This quiche can be fully prepared up to a day ahead of time and refrigerated. To reheat: Cover the quiche with aluminum foil and heat in a preheated 300°F oven for 35 to 45 minutes, or until hot in the center.
  • Freezer-Friendly Instructions: The cooked quiche can be frozen for up to 3 months. After baking and cooling the quiche, wrap it in a layer of plastic wrap and then a layer of aluminum foil. Remove the quiche from the freezer about 24 hours prior to eating. Remove the plastic wrap and reheat it, covered with foil, in a 300°F oven for 35 to 45 minutes, or until hot in the center.

1 cup all-purpose flour, plus more for dusting
1/2 teaspoon salt
1 stick cold unsalted butter, cut into small cubes
3 to 4 tablespoons ice water
1 tablespoon unsalted butter
1 sweet onion, very thinly sliced
Kosher salt
4 slices thick-cut bacon, cut into 1/2-inch strips
1 1/2 teaspoons fresh thyme
1 cup shredded Gruyère cheese (about 4 ounces)
3 large eggs
1 1/2 cups heavy cream
2 tablespoons finely chopped fresh chives
Pinch of freshly grated nutmeg
Pinch of cayenne pepper

Steps:

  • Make the crust: Pulse the flour and salt in a food processor. Add the butter and pulse until it looks like coarse meal. Add 3 tablespoons ice water and pulse until the dough starts to come together. Add up to 1 more tablespoon ice water, a little at a time, if necessary. Form the dough into a disk and wrap in plastic wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Remove the dough from the refrigerator and let soften 10 minutes. Unwrap the dough on a floured surface. Roll out the dough into an 11-inch round, lightly dusting with flour as needed and turning the dough occasionally. Carefully transfer to a 9-inch pie plate and crimp the edges with your fingers. Prick the bottom of the crust all over with a fork, then refrigerate until firm, 20 to 30 minutes.
  • Preheat the oven to 350˚ F. Line the dough with parchment paper and fill with dried beans or pie weights. Put on a baking sheet and bake until lightly golden around the edges, 20 to 25 minutes. Remove the parchment and weights and continue baking until golden brown in the center, 20 to 25 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, make the filling: Combine the butter, onion and a big pinch of salt in a medium skillet over low heat. Cook, stirring occasionally, until the onion is very tender and golden brown, 20 to 25 minutes. While the onion cooks, put the bacon in a small nonstick skillet over medium heat and cook, stirring occasionally, until golden brown and crisp, 7 to 10 minutes. Remove to a paper towel-lined plate. Add the bacon to the pan with the onion, along with the thyme.
  • Spread the Gruyère and onion-bacon mixture in the cooled pie crust. Combine the eggs, heavy cream, chives, nutmeg, cayenne and 3/4 teaspoon salt in a large bowl and whisk until combined. Pour into the pie crust. Bake until the quiche is just set and lightly golden brown, 40 to 45 minutes. Let cool before serving.

This recipe is based on the one from there, with modifications to her taste. Simple, easy, and delicious, it's a favorite on the mornings after Thanksgiving and Christmas!

1 unbaked 9-inch pie shell
6 slices bacon, cooked until crisp and crumbled (or roughly chopped)
3/4 cup chopped sweet onion (about 1 medium onion)
1 1/4 cups grated cheddar cheese (original recipe calls for Swiss cheese)
1/4 cup grated parmesan cheese (which Mom omits, but I like)
3 eggs, beaten
1 1/2 cups light cream or 1 1/2 cups half-and-half cream
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Cook the bacon until it is crisp, remove it from the pan and set it aside, then drain the fat while reserving 1 tablespoon of it in the pan.
  • Add the onion and gently cook it until it is tender, but is not browned.
  • In a bowl, combine the eggs, light cream or half & half, salt, and pepper.
  • Crumble or roughly chop the bacon to your preference.
  • Place the pie shell in a pie plate.
  • Place the bacon, onion, and cheese in the bottom if the pie shell/crust, then pour the egg mixture over.
  • Bake in the preheated 375 degree F oven for about 45 minutes, or until the quiche is firm and lightly browned.
  • Let rest for 5 minutes, then serve immediately. Makes 6 servings.

1/4 cup confectioners' sugar
1 teaspoon ground cinnamon
12 ounces cream cheese, at room temperature

2 large eggs, at room temperature
1 cup sour cream
3 1/2 tablespoons granulated sugar
1 teaspoon vanilla extract

Steps:

  • For the graham cracker crust: Preheat the oven to 350 degrees F.
  • Combine the graham cracker crumbs, melted butter, confectioners' sugar and cinnamon in a small bowl. Press into a 9-inch pie pan. Bake for 10 minutes. Cool completely before filling. Leave the oven on.
  • For the cream cheese filling: Put the cream cheese, granulated sugar, vanilla and eggs in a medium bowl and beat with a hand mixer on medium speed until smooth. Pour the filling into the cooled crust and bake until set, 15 to 20 minutes. Cool 5 minutes before topping; leave the oven on.
  • For the sour cream topping: Combine the sour cream, granulated sugar and vanilla in a small bowl and mix until smooth. Spread onto the pie and bake 10 minutes. Cool to room temperature, then refrigerate until cold, about 4 hours. Slice and serve.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, 3 tablespoons sugar, cinnamon and melted margarine. Mix all ingredients well and press into bottom and sides of a 9 inch springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Blend in the eggs one at a time, then stir in the vanilla and salt. Fold in the sour cream.

1 tablespoon sugar
6 sprigs fresh thyme
2 packs graham cracker
¼ cup powdered sugar
6 tablespoons butter, melted
1 teaspoon ground cinnamon
12 oz cream cheese, room temperature
2 eggs, room temperature
¾ cup sugar
1 teaspoon vanilla
1 cup sour cream
3 ½ tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Add the grapes to a parchment paper-lined baking sheet and sprinkle with sugar and thyme.
  • Bake for 45-55 minutes. Cool completely.
  • In the bowl of a food processor, add the graham crackers and pulse until finely crumbled.
  • Transfer the graham cracker crumbs to a bowl with the powdered sugar, melted butter, and cinnamon, and stir to combine.

This is the quintessential quiche dish and certainly one of the most popular in the store. French farmers in the Alsace-Lorraine region of France used to enjoy this quiche as a lunchtime meal, and it's clear why. The smoky bacon floating amid a creamy cheeseinfused filling is enough to keep you going all day long.

Yield Makes one 9-inch pie, 6 to 8 slices (level: easy)

Number Of Ingredients 10

1 recipe Traditional Pastry Piecrust dough for a 9-inch single-crust pie (page 5)
1/4 cup heavy cream (to glaze the crimped pie edges)
2 tablespoons unsalted butter (or 2 tablespoons vegetable oil)
3/4 cup chopped onions
1 cup shredded Swiss cheese
1/2 pound cooked bacon, chopped into bite-size pieces
3 large eggs
1 1/2 cups half-and-half
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425°F.
  • To prepare the pie shell, on a clean, lightly floured work surface, roll out half a ball of dough with a rolling pin, until it forms a 10-inch circle. Wrap the remaining half of the dough tightly in plastic wrap and reserve it in the refrigerator for future use for up to 5 days. Fold the circle in half, place it in a 9-inch pie plate so that the edges of the circle drop over the rim, and unfold the dough to completely cover the pie plate. Once you have added all three layers, gently mix them together inside the pie shell.
  • In a medium bowl, using an electric mixer on medium speed, combine the eggs, half-and-half, salt, and pepper. Pour the egg mixture into the pie shell, covering the onions, Swiss cheese, and bacon.
  • To bake, place the pie plate on a baking sheet and bake for 15 minutes. Reduce the heat to 350°F and continue baking for 40 minutes, or until the quiche is firm in the middle. Transfer the pie plate to a wire cooling rack and allow the quiche to cool and set for at least 10 minutes before serving.
  • Cooked Quiche Lorraine can be stored in the refrigerator for up to 3 days. An uncooked quiche can be stored in the freezer for up to 2 months. To optimally keep quiche, put it in the freezer uncovered and let it freeze on a flat surface. Once the quiche has frozen, wrap it tightly in plastic wrap and return it to the freezer.

  • Prepare the homemade pie crust and chill, or use store-bought pie crust. Roll out 1 pie crust to 12" on a lightly floured surface or between two pieces of parchment paper, then transfer to the tart pan*. The quiche will continue cooking after it is removed from the oven. Cool slightly before serving and garnish with parsley if desired.
