These pancakes are passed down from my grandmother, who was fully Scandinavian. They are light and fluffy, and great with berry syrups. I have made these for years as a special treat, and I hope you enjoy them as much as my family has.

1 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 egg
1 ⅛ cups buttermilk
2 tablespoons butter, melted

Steps:

  • Preheat and lightly grease a large skillet or electric griddle.
  • Mix the flour, salt, and baking soda together in a bowl. Add the egg, buttermilk, and butter; stir together lightly, but keep it lumpy. The batter should look thick, spongy, and puffy.
  • Drop 1/3 cup of the batter onto the cooking surface, spreading lightly with the bottom of the cup. Cook until lightly-browned on each side, 1 to 2 minutes per side.

This classic pancake recipe makes the best light and fluffy homemade pancakes every single time. They are so easy that you will never go back to the boxed mixes again!

2 cups Flour
3 tbsp Sugar (or sweetener of choice)
½ tsp Salt
1 tbsp Baking Powder
2 Eggs (Beaten)
¼ cup Butter (melted)
1 ¾ Milk

Steps:

  • In a large bowl, combine the dry ingredients. In a separate medium bowl combine the eggs, melted butter, and milk.
  • Add the wet ingredients into the dry and stir just until combined. Some small lumps are ok. Set aside and preheat the griddle or a non-stick skillet to medium-high heat.
  • Pour approximately ¼ cup of batter onto the hot skillet and allow it to cook until bubbles begin forming around the edges. Carefully flip the pancake and cook for an additional 1-2 minutes on the other side. Repeat with the remaining batter.
  • Serve the pancakes warm and with butter and syrup if desired.

I got this recipe from Shirley Baker, the mom of one of my college roommates. Her family cookbook is still one of my prized possessions because every recipe is a great one! These are hyper-fluffy; I make them with white whole wheat flour to help make them a bit more healthy. Kids love them.

1 1/4 cups all-purpose flour, sifted (I use white whole wheat flour)
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil (or coconut oil)

Steps:

  • Sift together dry ingredients.
  • Combine liquid ingredients in separate bowl; add to the dry ingredients, stirring only until they're just combined. (Batter will be slightly lumpy.).
  • Surely you know what to do with the pancake batter from this point, right?

1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 cup milk
2 tablespoons salad oil or 2 tablespoons melted shortening

Steps:

  • Sift together flour, baking powder, sugar, and salt.
  • Combine egg, milk and salad oil; add to dry ingredients stirring just until flour is moistened (batter will be lumpy).
  • Use a 1/4 cup measuring cup for 4-inch pancakes, or use a Tablespoon for dollar-size pancakes.
  • Makes about 12 dollar size or 8 4-inch pancakes.

1 teaspoon salt
2 egg yolks, well beaten
2 cups milk
2 tablespoons melted butter
2 egg whites, beaten stiff

Steps:

  • Measure flour into mixing bowl.
  • Add sugar, baking powder and salt.
  • Stir well to blend.
  • Combine beaten egg yolks, milk and butter in separate bowl.
  • Add to blended dry ingredients.
  • Beat with whisk until smooth.
  • Fold in egg whites.
  • Preheat no-stick pan to 350-375°F.
  • Drop by 1/4 cupfuls.
  • Cook until puffy and bubbly.
  • Turn before bubbles break and cook other side.
  • Serve with butter and real maple syrup.

2 cups flour
2 cups skim milk
4 eggs, separated
1 tablespoon sugar
1 teaspoon vanilla
2 tablespoons oil

Steps:

  • Beat egg whites until stiff in a separate bowl. The stiffer you beat them, the fluffier the pancakes will be
  • In larger bowl, mix together egg yolks, flour, milk sugar and vanilla. Mix until smooth.
  • Gently fold in egg whites.
  • Place a small amount of oil in a hot frying pan. I like to spread the oil around using a silicone pastry brush. You can also use a non-stick cooking spray.
  • I use a large serving spoon to ladle the batter into the frying pan.
  • Cook on one side until bubbles start to burst.
  • Flip and cook for about one minute more.
  • Keep already cooked pancakes warm in a 200 degree oven.
  • Serve with your favourite syrup or topping.
