BUCATINI WITH BACON SAUCE AND MEATBALLS

7 or 8 strips regular bacon
1 large onion, diced
1 clove garlic, minced
Salt and freshly ground black pepper
Two 28-ounce cans chunky ground tomatoes, such as Pastene Chunky Kitchen Ready
Oil, for greasing pan
2 pounds 80-percent lean ground beef
3/4 cup breadcrumbs (made from day old Italian bread)
3/4 cup freshly grated Parmigiano-Reggiano, plus more for serving
3/4 cup fresh parsley leaves, chopped
2 or 3 cloves garlic, minced (not too fine)
2 eggs
Salt and freshly ground black pepper
1 pound bucatini pasta

Steps:

  • For the bacon sauce: Cut the bacon into pieces. Using a big saute pan or skillet that has a cover, cook over medium heat until almost crispy. Don't drain the fat. Add the onions to the pan. When the onions are almost cooked and start to become translucent, add the garlic and salt and pepper to taste. Cook for 1 to 2 minutes, and then add tomatoes and bring to a boil. Reduce the heat, cover and simmer on low for about an hour to an hour and a half.
  • For the meatballs: Preheat the oven to 425 degrees F. Grease a baking sheet. In a large bowl, combine the beef, breadcrumbs, Parmigiano-Reggiano, parsley, garlic, eggs and some salt and pepper. Form into 1- to 1 1/2-inch meatballs and place on the prepared baking sheet. Bake for 5 minutes. Then turn the oven down to 350 degrees F and bake for an additional 10 minutes. Make sure to turn every few minutes to brown on all sides.
  • Cook the bucatini according to the package directions.
  • Serve the bacon sauce over the pasta with the meatballs on the side. Garnish with freshly grated Parmigiano-Reggiano.

1/2 lb. bucatini pasta, uncooked
4 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
2 cloves garlic, minced
1/2 lb. fresh mushrooms, halved
1 can (14.5 oz.) diced tomatoes, drained
1 cup CLASSICO Tomato and Basil Pasta Sauce
1/2 cup coarsely chopped fresh parsley
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add garlic to reserved drippings; cook and stir 1 min. Add mushrooms and tomatoes; stir. Cook 5 min., stirring occasionally. Stir in pasta sauce; cook on low heat 2 to 3 min. or until heated through, stirring frequently.
  • Drain pasta. Add to ingredients in skillet; mix well. Top with parsley and cheese.

Creamy Chicken Bucatini with Bacon image

Featuring crispy bacon, cream of mushroom soup and fresh grated parmesan cheese, this rich and creamy pasta dish makes for a quick and flavourful lunch you can't wait to eat. This dish uses Bucatini pasta - a pasta like spaghetti, but with a hole running through its centre allowing for it to be filled with creamy sauce.

4 strips bacon, chopped
1 lb 454 g chicken, cut into bite sized pieces
1 tsp 5 mL Italian seasoning
1/2 tsp 3 mL each salt and fresh cracked pepper
1/4 cup 60 mL tomato paste
1/2 tsp 3 mL red chili flakes (optional)
1 can CAMPBELL'S® Condensed Cream of Mushroom Soup
1 cup 250 mL milk
10 oz 283 g bucatini, or any long pasta, cooked according to package instructions
4 cups 1 L baby spinach
1/4 cup 60 mL fresh grated Parmesan cheese

Steps:

  • In a large non-stick skillet, cook bacon over medium heat until crispy, about 5 minutes. Transfer bacon to paper towel-lined plate and remove all but 2 tbsp of the fat from the pan. Increase heat to medium high and cook chicken until golden, sprinkling with Italian seasoning, salt and black pepper to taste. Remove chicken from pan and set aside with bacon.
  • Add tomato paste to same pan, stirring until deep rich red colour, about 2 minutes. Sprinkle with chili flakes if using. Stir in Campbell’s Cream of Mushroom soup and milk until smooth.
  • Stir in bucatini (or any long pasta such as penne or rigatoni), spinach, chicken and bacon and mix until evenly coated. Cook over medium heat until spinach is just wilted and everything is heated through, about 5 minutes.

Recipe passed on from my Italian grandfather. The ultimate comfort food. Leftovers freeze nicely! To make this recipe more authentic, you can use a mixture of ground veal, pork, and beef. You can also substitute the balsamic vinegar for 1/2 cup of red wine.

1 (16 ounce) package spaghetti
2 tablespoons olive oil
3 slices bacon, diced
1 large onion, finely chopped
1 stalk celery, finely chopped
1 carrot, finely chopped
1 teaspoon dried oregano
3 cloves garlic, minced
1 pound lean ground beef
2 tablespoons balsamic vinegar
2 (28 ounce) cans crushed tomatoes
2 tablespoons tomato paste
2 teaspoons white sugar
salt and ground black pepper to taste
2 tablespoons chopped fresh basil
¼ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the spaghetti in the boiling water until cooked through yet firm to the bite, about 12 minutes; drain.
  • Heat the olive oil in a large pot over medium heat. Cook the bacon in the oil until crisp, 8 to 10 minutes. Stir the onion, celery, carrot, and oregano into the bacon; continue cooking until the vegetables begin to soften, another 8 to 10 minutes. Add the garlic and cook until fragrant, about 2 minutes. Crumble the ground beef into the vegetable mixture; cook and stir until the beef is completely cooked and no longer pink, 8 to 10 minutes.
  • Pour the balsamic vinegar over the ground beef mixture; allow to simmer until the liquid evaporates, about 5 minutes. Stir the crushed tomatoes, tomato paste, and sugar into the ground beef mixture; bring the mixture to a boil, season with salt and black pepper, and remove from heat. Stir the fresh basil into the mixture.
  • Ladle the sauce over the cooked spaghetti. Top with Parmesan cheese to serve.

My mom taught me how to make this spaghetti sauce when I was in high school. She is my mentor and the best cook I know. I hope you enjoy it as much as I have.

2 tablespoons extra virgin olive oil
1 large onion
2 minced garlic cloves
1 1/2 lbs ground beef
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 cups water
1/4 cup dried parsley
2 teaspoons italian seasoning
1 teaspoon salt
1 teaspoon pepper
2 tablespoons sugar

Steps:

  • Heat oil in large pot. Add onions and garlic and cook for 2 minutes. Add ground beef and cook until completely brown. Add tomatoes, paste, water, parsley, italian seasoning, salt, pepper, and sugar. Mix thoroughly. Let come to a boil and then turn down heat to a simmer. Let simmer at low heat for at least one hour. If it becomes too thick you made add a little water as needed. That's it. Serve over your favorite pasta and your done.

A great sauce for any pasta dish, I usually leave the meats out for most baked dishes. This recipe came to me from my Mother, a full-blooded Italian-American, with a few minor additions/changes by me. I have never found a recipe that I like as much, but then I am probably biased. Cook time is 1 to 8 hours depending on how long you have. Mom used to cook it all day. I like to go at least two hours, but I have spent as little as 45 minutes on the cook time.

2 stalks celery
1 large onion
2 -4 cloves garlic (or 2-4 tablespoons of diced garlic from the jar You can adjust to taste.)
3 (6 ounce) cans tomato paste (I prefer Contadina)
2 (14 1/2 ounce) cans tomatoes (Use what you prefer, but I like the diced Italian Seasoning type)
1 (15 ounce) can tomato sauce
1 lb ground beef or 1 lb stewing beef, cut in cubes (optional)
2 tablespoons olive oil (can use vegetable oil if you prefer)
4 -8 ounces sliced mushrooms (optional)
2 -4 ounces black olives, chopped or sliced (optional)
1 bell pepper (optional)
oregano
thyme
sweet basil
rosemary
cumin
italian seasoning, can be used in place of the above spices
bay leaf
crushed red pepper flakes (optional)
garlic powder
onion powder
salt
black pepper

Steps:

  • Cut celery and onion (and bell pepper if used) as fine as you prefer.
  • If you like chunky style sauce make the pieces bigger, I like mine chopped fairly small.
  • In a large skillet, heat 1-2 tblspn of oil, when oil is hot (not smoking) add celery and stirfry.
  • As celery begins to clarify, add onion (and bell pepper, if used) and stirfry until it begins to glaze, add chopped garlic, stir for a short time (don't let anything begin to brown).
  • If using meat, add ground beef or stew beef and brown, stirring regularly, adjust heat to make sure nothing burns.
  • Salt and black pepper to taste.
  • Transfer to a larger pot (if you have a good sized pot that you can brown in, you can just start with that instead of using the skillet.).
  • Stir in tomato paste and cook until the color darkens.
  • Stir in tomatos and tomato sauce.
  • Add spices (Italian seasoning or individual spices) to taste.
  • Add 3 Bay Leaves.
  • Stir in mushrooms and/or black olives and crushed red pepper, if desired.
  • Stir in 1-2 cans of water (I use the tomato paste, tomato and tomato paste cans to get the leavings out of them.).
  • Adjust heat to simmer.
  • Let cook for at least 1 hour, longer if you can, and stir regularly.
  • Check spice to taste and add what you want.
  • You can cook this for a little while or for a longer time.
  • I prefer at least 2 hours to give all the spices a chance to blend well.
  • But it can be cooked for as little as a half hour.
  • If you want it to cook for a long time, monitor the thickness and add water as needed.
  • Don't forget to remove the Bay Leaves before serving.
  • Some people like to add a pinch of sugar to cut the acidity, but I believe that the Bay Leaves accomplish this and have never used sugar.
  • When done, serve over or mix with the cooked pasta of your choice.
  • Add grated parmissan if desired.
  • Also individuals can add crushed red pepper to their own servings, for those who like it a little spicier.
  • If making a baked dish such as Lasagna, Ziti, etc.
  • you may want to make the sauce a little thinner (add water) to start with.

1 lb pasta (Bucatinni is nice for this-looks like spaghetti but bigger)
1/2 cup extra virgin olive oil
1 large onions or 8 garlic cloves, cut into small pieces
3/4 lb bacon
1/2 cup pasta water
fresh coarse ground black pepper
grated parmesan cheese (optional)

Steps:

  • Cut bacon into 1 inch pieces and cook in pan until translucent and alot of grease has come out.
  • Drain grease and leave bacon in pan, add cut onion and olive oil. Cook and stir until onion turns a nice golden brown color.
  • Cook pasta al dente (I like 11 minutes timed), drain, place back in pot and add cooked bacon & onion, or garlic and some pasta water. Add coarse black pepper.
