Steps:
- Preheat oven to 350 degrees F. Grease 9x13" baking dish.
- Beat egg and milk with mixer until smooth. Add croutons; mix well. Let stand for 5 minutes. Beat until light and fluffy.
- Add ground beef, applesauce, onion, salt and pepper; mix well. Shape into meatballs. Place in 9x13-inch baking dish.
- Mix soup and water together and pour over meatballs. Bake for 25 - 35 minutes until a meat thermometer reads 160 degrees F.
- Toss noodles with butter in a bowl. Serve with meatballs.

MY MOM'S HOLIDAY SAUSAGE HOLIDAY BALLS

- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.
MOM'S MEATBALLS WITH NEAPOLITAN MEAT SAUCE

- For the meat sauce: Sear small batches of the beef, pork and sausage in olive oil in a large pot over medium-high heat, and then remove from the pot. After all the meat is seared, deglaze with the red wine and add the onion. Cook until transparent. Add tomatoes to the pot. Add meat to the pot. Add the chile flakes, salt and pepper. Simmer on medium-low heat for 2 to 3 hours.
- For the meatballs: While the sauce is simmering, preheat the oven to 350 degrees F. Spray a large baking sheet with cooking spray. Soak the bread in the milk.
- Squeeze the milk from the bread after soaking. Mix the ground chuck, pecorino, ground pork, bread, onion, parsley, basil, garlic and eggs together by hand in a large bowl.
- Roll the meatballs loosely about two times the size of a golf ball, and place on the prepared baking sheet. Place into the oven for 35 to 40 minutes.
- Add meatballs to the sauce and braise until tender. Serve hot.

- Mix beef, applesauce, and bread crumbs.
- Add eggs; season with salt and pepper.
- Shape into small balls, roll in flour and brown in hot oil.
- Place balls in a casserole dish.
- To drippings in pan add vegetables and tomato juice.
- Season with salt and pepper and bring to a boil, then pour over meat balls (this is an important step).
- Cover and bake in a moderate oven of 350 degrees for about an hour, until vegetables have broken down and have created a nice sauce.
- If desired, the gravy can be thickened with a little flour-water paste before serving.

GRANDMA'S APPLESAUCE MEATBALLS
This is one of my family's favorite 'comfort' foods - by all six generations. Don't let the applesauce scare you off; you can't taste it, but it keeps the meatballs tender and moist. Add mushrooms and/or pearl onions for an even heartier 'comfort' meal! Serve over hot buttered noodles or rice. We like a salad and garlic bread, or a plate of sliced tomatoes and cucumbers. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Whisk the egg and milk together in a large bowl, and stir in the croutons. Allow the croutons to soak up the milk mixture for about 2 minutes. Lightly stir in the applesauce, onion, garlic, Cheddar cheese, and salt and pepper, and mix in ground beef with your hands until thoroughly combined. Form the meat mixture into 1 1/2-inch balls, and place into the prepared baking dish. In the same bowl, whisk together the cream of celery soup with evaporated milk. Pour the sauce over the meatballs.
- Bake, uncovered, in the preheated oven until the sauce is bubbling and thickened and the meat is no longer pink in the middle, about 45 minutes. Sprinkle with Parmesan cheese 15 minutes before end of baking, and bake until the cheese is melted and beginning to brown. An instant-read thermometer inserted into the center of a meatball should read 160 degrees F (70 degrees C).

- In a food processor, combine spinach, parmesan, mushrooms, garlic, Worcestershire sauce, Italian seasoning, pepper, and salt. Process till well combined.

This is a family favourite from generations back , This receipe freezes very well. It is a fabulous make ahead receipe. It is excellent for a potluck or just for a fabulous change. It is a must try. I have never come accross a sweet and sour meetball receipe as great as this one.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
- Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
- In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
- Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.

MOM'S TURKEY TARRAGON MEATBALLS

- Combine egg, turkey,crumbs,onion and garlic with 1 tsp tarragon 1/8 tsp salt& 1/4 tsp pepper.
- Mix well.
- Using a small spoon shape into 30-40 meatballs.
- Brown 1/2 meatballs in 2 1/2 Tbs oil in a large skillet about 6 minutes turning as sides brown.
- Remove to a platter.
- Brown remaining meatball adding rest of oil if needed 2-3 minutes turning as above.
- Remove to platter.
- To the skillet add chicken broth,lemon juice, remaining tarragon, salt if desired& pepper.
- Heat to a low boil.
- You may thicken the broth with cornstarch/water mix if desire or leave it with out.
- Add meat balls to pan coat with sauce.
- Serve as an appetizer or serve over rice or egg noodles.
- Best if prepared a day ahead of time.
- Also freezes well.

MOM'S MEATBALLS
Scrumptious meatballs from Mom. Mom never browned them first if she was using in her spaghetti sauce. See her recipe for sauce posted in my recipes, recipe #210729. She would drop them in raw and let them simmer for 40 mins. You will have to skim off any excess fat that rises to the top of the sauce if done this way. Or you can saute them first or bake in the oven before adding them to the sauce. No need to skim off any grease if pre-cooked.
