SALLY LUNN NO YEAST ROLLS
These are great for breakfast, lunch or dinner; and are made in a snap. Grandma Urbanowski's recipe.

Steps:
- 1. Sift dry ingredients 3 times. Cut butter into flour mixture. Beat egg yolks thoroughly and add milk and beat again. Stir egg yolk mixture into dry mixture gently.
- 2. Beat egg Whites until stiff. Fold into batter and blend gently. Pour into buttered or sprayed muffin tins. Bake at 400^ for 25 minutes. Check after 15 minutes and turn oven down to 375^. Test with wooden toothpick for doneness.
- 3. Note: If desired you can sprinkle crushed parsley, or dill weed or Italian seasoning or cinnamon/sugar on top of batter before baking.

- 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
- 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
- 3. When the yeast is bubbly, add 1 cup flour and beat well.
- 4. Then add eggs, salt, and another cup flour. Beat well.
- 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
- 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
- 7. Work until the dough is only slightly sticky.
- 8. Set in a warmed oven covered by a tea towel, to rise.
- 9. When the dough is doubled in size, remove from oven.
- 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
- 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
- 12. When out of the oven, brush with melted butter.
NO-YEAST DINNER ROLLS
We make these quick easy homemade dinner rolls without yeast when we've run out of the baker's standby or don't have the time for yeast to work its magic. Slightly reminiscent of biscuits, they are easier to make and not as crumbly. Feel free to split the leftovers and use for sandwiches the next day.

- Preheat the oven to 375 degrees F. Coat the bottom of a 9-by-13-inch baking dish with butter.
- Whisk together the flour, baking powder, sugar and salt in a large bowl. Whisk together the milk and 1/2 cup of the butter in a medium bowl. Pour the wet ingredients into the dry and combine with a wooden spoon; do not overwork the dough. It should be wet.
- Divide the dough into 12 pieces and shape each into a ball. Arrange the dough balls in the prepared baking dish. Pour the remaining 1/4 cup butter all over the dough and bake until golden brown, 35 to 40 minutes.

- Preheat the oven to 375 degrees Fahrenheit and spray a parchment paper-lined baking sheet with cooking spray or grease with butter.
- In a large mixing bowl, whisk together the sugar, salt, baking soda, baking powder, buttermilk, and butter together until incorporated. Note: it's totally ok if the mixture starts foaming!
- Whisk the flour into the liquids in 2 batches until no streaks of flour remain in the batter and the dough has formed a craggly mass. If the flour gets hard to whisk, switch to a wooden spoon or even knead with your hands (my favorite), working the final bits of flour into the dough.
