These are my Grandma Marion's Molasses Bars, also known as hermit bars. Chewy, delicious sweet bars for the molasses lovers!

Number Of Ingredients 11

1 1/2 cups of white sugar
1/2 cup brown sugar
1 cup and 2 tablespoons of margarine (or butter)
2 small eggs
1 1/2 cups of raisins
1/2 cup of molasses
3 1/4 cups of flour
2 teaspoons rounded baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
dash of allspice

Steps:

  • Kick the tires and light the fires to 375 °F.
  • Cream the sugars and the margarine together. Add in your two eggs and beat in completely.
  • Add in the molasses to the margarine/sugar mix and mix in thoroughly.
  • Whisk together the dry ingredients.
  • Combine the wet and dry and mix well.Then add in your raisins.
  • Divide the dough into two pieces, and from each half form three long rolls on a cookie sheet.
  • Build them up as high as you can and they fit across a baking sheet, width-wise. When you build them up, you get a thicker, chewier bar.
  • Bake them in the oven at 375 for 13-15 minutes, and do not over/under bake. This from my grandma's instructions. So they need to be baked until the edges are cooked and the middle slightly still underdone.
  • Slice them across into about 8-10 squares when they are fully cooled, needless to say, this recipe makes a large amount, you can end up with 40-60 of the little bars!

1 cup butter, softened
1-1/2 cups sugar
1 large egg
1/2 cup molasses
1-1/2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
Colored sugar or multicolored jimmies

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, molasses and vanilla. Combine the flour, baking soda, ginger, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 1 in. apart onto ungreased baking sheets. Sprinkle with colored sugar or jimmies. , Bake at 400° until set (do not brown), 6-8 minutes. Remove to wire racks. Store in an airtight container.

2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon

1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3/4 cup shortening
1 cup granulated sugar
1 egg
1/4 cup molasses
1 cup coarse white sparkling sugar

Steps:

  • In medium bowl, mix flour, baking powder, baking soda, ginger, cinnamon, nutmeg, salt, cloves and allspice; set aside.
  • In large bowl, beat shortening with electric mixer on medium speed until fluffy. Gradually add granulated sugar, beating well. Add egg and molasses; beat well. Gradually add flour mixture, beating on low speed until blended. Cover; refrigerate 1 hour.
  • Heat oven to 375°F. Shape dough into 1-inch balls; roll in sparkling sugar. On ungreased cookie sheets, place balls 2 inches apart.
  • Bake 9 to 11 minutes (tops will crack) or just until set. Remove from cookie sheets to cooling racks.

Look and taste just like spritz cookies, but you don't need a cookie press. There are a lot of different flavors listed here, so the first part of the ingrediant list is to make the regular flavored ones and anything that is marked optional is what you add to make the other flavors. Listing it this way seemed easier than listing it over and over to get in all the different flavors, so I hope it makes sense listed all together like this. Enjoy!

1 cup butter or 1 cup margarine
3/4 cup sugar or 3/4 cup brown sugar, for butterscotch flavor
1 egg
1 teaspoon vanilla
1/4 teaspoon salt
2 1/3 cups all-purpose flour (2 1/3 cups at high altitude)
1/4 cup sugar (optional)
2 ounces unsweetened chocolate, melted (optional)
2 tablespoons orange rind, grated (optional)
1/2 cup pecans, very finely chopped (optional)
1 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
1/4 teaspoon cardamom (optional)
1 tablespoon instant coffee (optional)
1/4 cup pecans, finely chopped (optional)
1/4 cup light molasses (optional)

Steps:

  • Cream together all ingredients except flour.
  • Blend in flour.
  • Divide dough in half.
  • Spread each half with floured fingers or spatula to a 12x10" rectangle on ungreased cookie sheet.
  • Run floured fork tines over top to make"spritz" marks.
  • Bake at 350F for 15 to 20 minutes, or until delicately browned.
  • Cut immediately into 3x1" sticks.
  • Remove from cookie sheet.
  • Chocolate Spritz:.
  • Increase sugar to 1 cup total and add 2 oz.
  • unsweetened chocolate in the first step.

  • Butterscotch Spritz:.
  • Substitute brown sugar for white (only change).
  • Orange Pecan Spritz:.
  • Add 2 tbsp orange peel and 1/2 cup pecans when you add the flour.
  • Swedish Spice Spritz:.
  • Add 1 tsp cinnamon, 1/4 tsp nutmeg and 1/4 tsp cardamom in the first step.
  • Coffee Spritz:.
  • Add 1 tbsp instant coffee and 1/4 cup pecans, if desired, with the sugar.
  • Pepperkakor Spritz:.
  • Omit the egg, and add 1/4 cup light molasses, 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp cloves and 1/2 tsp ginger with the sugar.

2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup solid vegetable shortening
1 1/2 cups granulated sugar
1 large egg
1/4 cup unsulfured molasses

Steps:

  • Preheat oven to 375 degrees. Line baking sheets with Silpats; set aside.
  • In a medium bowl, whisk together flour, baking soda, cloves, ginger, cinnamon, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine shortening and 1 cup sugar. Beat on medium speed until light and fluffy, about 2 minutes. Add egg and molasses, and beat to combine. Add dry ingredients, and beat on low to combine.
  • Place the remaining 1/2 cup sugar in a small bowl. Using a 1 1/2-inch ice-cream scoop, form balls of dough. Roll dough balls between the palms of your hands until smooth. Roll in sugar. Place about 2 inches apart on prepared baking sheets. Bake until the cookies are set in the center and begin to crack, about 12 minutes, rotating the baking sheets once after 5 minutes. Transfer the baking sheets to a wire rack to cool, 5 minutes. Transfer cookies to rack until completely cool. Store in an airtight container up to 1 week.

The description in the Robin Hood Cookbook where this recipe came from was that in 1880 a young man would take his sweetheart to the restaurant and offer her the usual treat: spruce beer and molasses hands - so called because handfulls of cookie dough were put on sheets to bake.

2 teaspoons baking soda
2 teaspoons salt
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon nutmeg
1 cup brown sugar, packed
3/4 cup vegetable oil
1 1/2 cups molasses
3/4 cup milk
1 teaspoon vanilla

Steps:

  • Combine flour, soda, salt and spices in a bowl and mix well to blend.
  • Combine sugar, oil, molasses, milk and vanilla in a large bowl.
  • Mix thoroughly.
  • Add flour mixture gradually.
  • Mix well.
  • Chill 1 hour or until firm.
  • Roll out portions of dough on lightly floured surface to 1/4-inch thickness.
  • Cut with a floured 2 1/2" cookie cutter or your favourite shaped cookie cutters.
  • Place on greased cookie sheet.
  • Bake at 375° for 8-10 minutes.
  • When cool store in tightly covered metal container.
  • Prep time includes chilling time.

This isn't something I would do just for the heck of it anymore but for the holidays....maybe. I'm posting this as a cathartic thing. I'm passing on my non-diabetic goodies to folks who can offer them a good home. I just can't abandon them without a chance to become good little recipes for someone else. This could go on for some time, I have a lot of recipes! It's been a long time since I made these and I don't honestly recall how long it took to make and press them out so I'm taking my best guess. *Please note*: As written the recipe will yield a milder spice flavor. If you prefer a stronger spicy flavor double the spice amounts (or to taste).
