2 lime wedges
2 teaspoons sugar
3/4 to 1 cup ice cubes
2 mint sprigs
2 ounces light rum
1/2 cup club soda, chilled
GARNISH:
Mint sprig and lime slice

Steps:

  • Squeeze lime wedge into a highball glass; drop lime into the glass. Add sugar; muddle. Add ice. Gently press mint or slap mint; add to glass. Pour rum and club soda into glass; stir. Garnish with lime slice.

1 mint sprig
1/2 teaspoon sugar
1 to 1-1/2 cups ice cubes
2 ounces apple rum or light rum
1 ounce club soda

Steps:

  • Place 1 ounce Mojito mix, mint and sugar in a highball glass; muddle. Add ice. Pour rum, club soda and remaining Mojito mix into glass; stir. Serve immediately.

juice of 1 lime
1 tsp granulated sugar
small handful mint leaves, plus extra sprig to serve
60ml white rum
soda water, to taste

Steps:

  • Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
  • Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

1 cup heavy whipping cream
3 mint sprigs
3 tablespoons confectioners' sugar
1 teaspoon grated lime zest
1/2 teaspoon rum extract

Steps:

  • Microwave heavy cream until hot but not boiling, about 1 minute. Add mint leaves and let stand in refrigerator until cold, about 1 hour. Strain out mint leaves. In a chilled small glass bowl and using chilled beaters, beat cream until it begins to thicken. Add confectioners' sugar, lime zest and extract; beat until soft peaks form. Store in the refrigerator.
