PERFECT ROAST CHICKEN

- Preheat the oven to 425 degrees F.
- Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
- Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.
JUICY ROASTED CHICKEN
My grandmother's recipe for roasted chicken. We are German and she used to do it this way all the time. I never have had a chicken this juicy before; this little trick works and makes the people eating it go silent. It's funny. We nibble on the celery after.

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder. Place 3 tablespoons margarine in the chicken cavity. Arrange dollops of the remaining margarine around the chicken's exterior. Cut the celery into 3 or 4 pieces, and place in the chicken cavity.
- Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.

MOIST & TENDER ROASTED CHICKEN
Fabulous juicy and full of flavor is the only way to describe my roast chicken. I have done some experimenting with different seasonings and baking methods before coming up with the "perfect" chicken recipe. As I said before, anyone can cook if you are willing to take the time and put forth the required effort.

- Most important, make sure you wash the chicken throughly with warm water. Place chicken in center of large roasting pan, a rack may be placed in the center of roasting pan depending on size.
- Cut butter into four pieces and pull back outer skin of chicken on both right and left side. Place two pieces of butter on each side of chicken and pull outer skin back to cover the butter.
- Next, take the bacon strips and place 2 slices of bacon on the outer right side of the chicken and place the 2 remaining strips on the outer left part of the chicken. The purpose of the bacon is to make the chicken as tasty and juicy as possible.
- Pour the 1/2 cup of Chardonnay wine over top of chicken and then add the remaining sesonings. Add the salt, pepper, garlic powder and paprika.
- Place roast into a pre-heated 325 degree oven and bake. You will be able to determine baking time according to the size of the chicken. While chicken is baking you should baste at least 3 times to ensure a perfect roast chicken.
- Chicken should be a golden brown when fully baked. After removing roast from oven, let stand 10 minutes prior to serving, don't forget to remove the bacon strips before slicing.
- You may serve this entree with homemade stuffing or baked Idaho potatoes. Enjoy!

This is seriously the best whole roasted chicken I have ever had. Substitute your favorite seasoning/rub for the poultry seasoning.

- Preheat oven to 350 degrees.
- Chop apple and one onion into large chunks. Stuff into cavity of chicken along with the garlic (peeled). Save any apple chunks that won't fit.
- Spray 9x13 baking dish with nonstick cooking spray. Place chicken back-up into baking dish. Baste chicken liberally with olive oil, then sprinkle with dried seasoning of your choice.
- Chop the carrots into 1-1.5" pieces. Chop the potatoes and remaining onion into similar-sized pieces and place into baking dish around the chicken. Add any leftover apple.
- Pour half of the can of chicken broth over vegetables in the dish. Season vegetables with sea salt and freshly ground pepper to taste.
- Bake in preheated oven for 60-80 minutes, or 20 minutes per pound of chicken.
- Halfway through baking, add the remaining half can of chicken broth to the pan.
- Cool for 5 minutes, covered with aluminum foil, before serving.

KITTENCAL'S BEST JUICY WHOLE ROASTED CHICKEN

- Wash chicken well with cold water inside and out.
- Pat dry using paper towels.
- In a bowl mix together 1/4 cup melted butter with vegetable oil, then rub all over the outside of the chicken.
- Season the inside of the chicken with salt and black pepper.
- Season the outside of the chicken with seasoned salt, black pepper and garlic powder (if using).
- Place the chicken into a glass dish; cover top of the dish tightly with plastic wrap.
- For best flavor cover with plastic wrap and refrigerate overnight.
- Stuff onion quarters, chopped celery and/or a whole lemon/s and 2 tablespoons cold cubed butter into the cavity of the chicken, then tie legs together with butcher's twine or heavy cotton string.

- Pour the low-sodium chicken broth into bottom of the roasting pan (keeps drippings from burning and makes a good base for gravy).
- Tent loosely with heavy foil.
- Set oven to 350°.
- Roast for about 1 hr and 10 minutes, basting with juice/liquid from the bottom of the roasting pan.
- Uncover and roast for about 20 minutes more (uncovered) or until internal temperature reaches 180°.
- Remove from oven and let rest (covered with foil) for about 20 minutes before carving.

KITTENCAL'S BEST BLASTED RAPID-ROAST WHOLE CHICKEN
Blasting with high heat will shrink the skin and seal in all the juices to create an extremely moist and tender chicken with lovely crispy skin - and it will be on your table in about an hour. This method will also work with a larger chicken, but cooking time will need to be increased. You may adjust all seasonings to taste. If you are not a lemon lover, then you may omit the lemon juice. You really can use whatever seasoning that you like for this. I like to use seasoned salt. Make certain to use a fork and poke holes all over in the lemon, then place it into the cavity of the chicken. Roast roast as stated. The chicken with be moist and have a faint lemon flavor. - Rinse the chicken inside and out well under cold water, then pat dry using a paper towel.
- In a small bowl mix the lemon juice with oil and melted butter until blended, then rub all over the chicken.
- Using clean hands rub the inside and outside of the chicken with seasoned salt, garlic powder, black pepper and cayenne (you can season the chicken under the skin also if desired).
- Place the lemon/s inside the cavity.
- Place the chicken into a baking dish (you can place the chicken onto a small roasting rack if desired and you may want to add in a little water to the pan to prevent smoking).
- Using cotton string tie the legs together tightly.
- At this point you may cover and refrigerate for up to 6 hours (not more than that or the acid in the lemon juice will start to "cook" the chicken).
- Set oven to 450 degrees F.
- Roast the chicken at 450 degrees for 20 minutes, then reduce the heat to 400 degrees and continue roasting for about 40 minutes (or until the internal temperature reaches about 175 to 180 degrees F. about 1 hour or a little less).
- Cover with foil and let sit for 15 minutes before slicing (do not slice before that time or the juices will flow out!).
SAVORY RANCH ROASTED WHOLE CHICKEN
Don't be intimidated by my overly detailed description, prep for this is no more than 6 minutes. This is the most perfect Roasted Chicken you'll ever make. The skin is crisp but not crunchy, the breast so moist you can cut it with your spoon and the dark meat is actually firm. All of this and yet seasoned to utter perfection. Not too salty, nor bland. I was so sick of Chicken, especially the roasted ones you get from Costco etc. The thought of the slimy consistency of the dark meat and the slippery skin of it makes me queezy. This is Perfect to make for company because they will never guess how simple and easy it was. ADDITIONAL: The onions in the onion soup have a tendency to burn so I'm going to sift them out next time and put them UNDER the skin with the butter....

- pour the ranch dressing mix, onion soup mix and Paprika in a baggie and give it a good shake.
- Take about a Tablespoon of the mixture and smush it into 2-3T of the butter and set aside. To soften the butter microwave it for 10-12 seconds. Save at least half the butter without seasonimg.
- This will take about 2 minutes. Very carefully pat the Chicken dry with paper towel, then slowly separate the skin from the breast and top of drumsticks. Don't use anything but your fingers. Start at the breast cavity and slowly work your fingers between the skin and breast. Do not tear the skin at all costs! Once you have it loosened from the meat, take the softened, seasoned butter mixture and gently push it up under the skin, especially on the top of the breast and drumsticks. It will melt down into the breast as it cooks.
- Make sure you have patted the Chicken completely dry (or the butter won't stick) rub some of the spices into the skin, then take half the remaining butter and rub over the whole Chicken.
- Take the remaining spice mix and sprinkle over the whole Chicken, starting at the back, the flip and do the breast. Take the wing tips and bend them back behind the wing to prevent the wing tip from burning, and to keep the Chicken from rolling, and put uncovered in 350 degree oven.
- cook at 350 for 30 minutes.
- Reduce temp to 250 degrees. Drain whatever juice has accumulated and set aside. Cover the breast loosely with foil -once the skin has become light golden and crisp. (This keeps the spices from burning, especially the onions and allows the skin to keep the breast from drying out.) At this time you should carve the drumstick off the Chicken right at the joint (it will not be done) and put them on the bottom of the pan. This allows the dark meat to cook more efficiently, and keeps the skin nice and crisp all the way along the sides of the breast. For the best flavor, be careful to make sure the skin over the top of the Chicken is not disturbed.
- Continue to cook the chicken at 250 until you begin to smell it, probably and hour. Don't rush it, this is the only really tricky part. To test doneness take a fork, insert it INSIDE the breast cavity poke the thigh. Do not poke the skin. If it's done it will drain clear juice, and it will be really obvious if the dark meat isn't ready. Leave it in until you are sure the dark meat is done. As long as you have put foil over the breast and left the rest uncovered you will not burn or overcook the breast.
- Once it's done immediately remove the foil and drain the juices. This will be the most flavorful drippings you will ever taste. Save it for later, make a gravy or pour it over your dogs food if nothing else!
- dont let the chicken sit in juices, Remove from the oven it tastes much better cold than warm and slimy. The skin will remain crisp until the Chicken is cold. It should still be chewy until you refrigerate it though.
- Put the garlic cloves and 1T butter inside the breast cavity. Don't be tempted to put the cloves under the skin, it somehow affects the ability to crisp the skin and therefore causes the breast to dry out.

AMAZINGLY JUICY AND FLAVORFUL ROASTED CHICKEN
This is the juciest, best flavored roasted chicken I have ever made, or ever eaten! I have been experiementing, and It has turned out with the exact same wonderful results 3 times in a row now.. so I'm confident that anyone can make this with the same results. - Night before:
- Rinse chicken and pat dry.
- Mix salts, garlic powder and black pepper together.
- Liberally rub outside of chicken with salt mixture, then put the remaining salt mixture inside of the chicken cavity. Don't be afraid of the salt! Remember, we want the bird seasoned all the way through! I promise that it wont be salty. You may even want to use extra salt in the cavity, especially if you are using kosher salt.
- Put into a plastic bag and chill in fridge overnight. The longer the better.
- Day Of:.
- Preheat oven to 350 f.
- Put butter, lemon and garlic into cavity. You can also use herbs, onion etc.
- Pat outside of chicken dry, then rub the chicken with olive oil.
- Sprinkle Montreal steak seasoning on all sides. (Makes it really pretty when done).
- Place chicken in a roaster with a rack breast side up.
- Bake uncovered for approx 20 min per pound, or until thermometer in thickest part of thigh is between 175 to 180 degrees f.
- DO NOT OVERCOOK!
- Remove bird from oven and cover with foil. Allow to rest for at least 20 minutes, the longer the rest time, the jucier the chicken gets, so do not skip this step! It wont be juicy if it doesn't rest!
