This is a family recipe that is a big favorite at our house. By using fresh bread instead of dried bread crumbs, you get a meatloaf that is moist and delicious.

2 pounds ground beef
½ onion, chopped
2 eggs, beaten
¾ cup small chunks of bread
½ cup milk
½ cup chopped green bell pepper
1 ½ teaspoons salt
¼ teaspoon sage
¼ teaspoon ground black pepper
½ cup ketchup, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly mix ground beef, onion, eggs, bread, milk, green bell pepper, salt, sage, and black pepper together in a bowl. Press into a loaf pan. Spread ketchup over the top of the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Number Of Ingredients 12

3 cups soft white bread cubes
1 large egg
2/3 cup milk
1 tablespoon mustard
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried basil leaves, crumbled
1/4 teaspoon dried thyme leaves, crumbles
1 onion, chopped
1/2 cup chopped celery, including leaves
1/4 cup chopped fresh parsley leaves
2 pounds ground beef

Steps:

  • Pre-heat oven to 350 degrees. Place bread cubes in a large bowl. Beat egg and milk together in a small bowl, then pour over bread cubes. Let stand until bread absorbs milk, about 15 minutes. Mash and stir mixture until bread is in very small chunks. Add mustard, salt, pepper, basil, thyme, onion, celery and parsley. Mix well. Add ground beef and mix well. Turn mixture into an 8 x 5-inch loaf pan. Place in oven and bake for 55 minutes. Let stand 5 minutes before slicing.;

1 1/2 lbs ground beef
5 slices thick cut bacon
3 celery ribs, chopped
1 large onion, minced
1 tablespoon Worcestershire sauce
5 large button mushrooms, minced
2 teaspoons kosher salt
1 cup ketchup
1 1/2 cups shredded cheese (whichever kind is your favorite)
1 egg
3/4 cup breadcrumbs

Steps:

  • Chop bacon into small pieces and fry until crispy. Remove from pan to drain and reserve 1 tablespoon bacon fat in pan.
  • Sauté celery, onions and mushrooms with salt and pepper in bacon fat until soft. Cool slightly.
  • Add bacon and vegetables to meat, along with Worcestershire, egg, breadcrumbs, 1 cup cheese and 1/2 cup ketchup.
  • Mix well to combine. Shape into loaf in large pan.
  • Pour remaining ketchup on top and spread out over whole loaf. Sprinkle with remaining cheese.
  • Bake at 350°F for 1 hour or until cooked completely through.

1 1/2 lbs ground beef
2 teaspoons salt
2 teaspoons pepper
2 teaspoons garlic powder
1/2 cup quick oats
1 teaspoon paprika
1/3 cup ketchup
1/2 cup primavera tomato sauce
2 eggs
1 small onion, chopped

Steps:

  • Preheat the oven to 350 F.
  • In a small bowl beat both eggs.
  • In a larger bowl add the onion, meat, and oats. Mix well.
  • Add the spices.
  • Add the beaten eggs. Mix well again.
  • Add the ketchup and sauce, and mix well.
  • Put the mixture in a 9 x 13 loaf pan, and bake for 1 hour, or until well done.

3/4 teaspoon pepper
0.5 (10 ounce) can cream of tomato soup
1 cup breadcrumbs

1 tablespoon vinegar
1 tablespoon cornstarch
1.5 (10 ounce) cans cream of tomato soup

Steps:

2 teaspoons canola oil
2 large eggs, lightly beaten
1/3 cup 2% milk
2 teaspoons Worcestershire sauce

2/3 cup finely crushed cheese crackers

1/2 teaspoon pepper
1/2 teaspoon dried thyme
1-1/2 pounds ground beef
1/2 pound ground pork

Steps:

  • Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. While looking for a good recipe for meatloaf on this website, I gathered common ingredients amongst the recipes I looked at and came up with my own version. I never would make meatloaf very often because I never liked the way it came out. I finally came up with a recipe that I now use quite often. Enjoy!

3 tablespoons butter
1 large sweet onion, chopped
1 tablespoon pine nuts (optional)
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon garlic powder
2/3 cup breadcrumbs (I use Progresso Seasoned)
2 lbs beef mince
1 tablespoon Worcestershire sauce
1 egg, beaten
1 (14 ounce) can chopped tomatoes
1 tablespoon dry mustard
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350F/180°C.
  • Melt butter in large skillet and cook onions slowly until translucent, about 5 minutes. Add pine nuts if using, and cook until onions are tender. Remove from heat and leave to sit.
  • Mix the ingredients for the sauce in a separate bowl and set aside.
  • In the meantime, mix salt, dry mustard, garlic powder and breadcrumbs together. Add to beef in a large bowl. Combine Worcestershire with egg and add to beef mixture. Add onions.
  • With clean hands (duh!) combine mixture thoroughly and shape into loaf and place in a 9" X 13" glass baking dish. (You can also divide the mixture evenly and make 4 individual loaves which should be about 9 oz. each). Pour the tomato sauce around the loaf and cover with foil.
  • Place in oven and bake for 1 to 1 1/4 hours. Remove from oven and let sit 10 minutes prior to serving. Slice into 1/2" pieces and serve with tomato sauce. Goes well with smashed taters and veggie of your choice. :).

  • Let Your Meatloaf Rest. You may be used to letting steaks and roasts rest for 10 minutes before slicing or serving. Resting is also beneficial for meatloaf.
