1 cup flour
1 cup cornmeal
3 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
2 large eggs
⅔ cup milk
1/2 cup Country Crock® Spread, melted
1 cup corn
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 8x8-inch baking dish.
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Mix eggs, milk, and melted butter. Stir egg mixture into flour mixture just until moistened. Stir in corn and cheese. Pour into prepared baking dish.
  • Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes then cut into 2-inch squares. Serve warm with Country Crock® Honey Butter Spread.

You'd almost swear there was pudding in this recipe. Using creamed corn and Munster cheese is the secret to this super moist cornbread recipe.

Number Of Ingredients 12

1 cup yellow corn meal
1 cup all-purpose flour
1/3 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon New Mexico Red Chile Powder ((optional) or ancho chile powder)
2 large eggs (beaten)
1 cup buttermilk
3 Tablespoons canola oil
1-14 1/2 ounce can creamed corn (half drained)
1 cup muenster cheese (shredded)
5-6 Tablespoons jalapenos (deseeded, chopped. 1 - 2 jalapenos depending on size)

Steps:

  • Preheat oven to 375.
  • Using a whisk, combine the cornmeal, flour, sugar, baking powder and salt in a mixing bowl. Also add chile powder if using. (Use a pure chile powder, not chili seasoning as you would put in a pot of chili)
  • In a separate bowl, whisk together the eggs, milk, and oil.
  • Using a large spoon, gently fold the liquid ingredients into the dry ingredients until a batter is formed. Don't over mix.
  • Using a colander, or mesh strainer, drain the creamed corn. Let the corn sit in the colander for 2 minutes. Give it a couple of shakes to remove more of the liquid before adding to the batter. You don't want it completely drained.
  • Using a large spoon, fold in the corn, cheese, and jalapenos to the batter.
  • Pour batter into a lightly greased 9-inch square baking pan. Use the back of the spoon to smooth batter into the pan.
  • Bake for 20-25 minutes, until the crust is light-brown and a toothpick inserted in the center comes out clean. Remove from the heat and let cool for about an hour before slicing.

4 cups all-purpose flour
2 cups yellow cornmeal
2/3 cup sugar
3 tablespoons baking powder
1 tablespoon salt
1 cup shortening
3 cups milk
4 eggs, beaten
1/2 cup finely shredded cheddar cheese

Steps:

  • In a large bowl, combine the first five ingredients; cut in shortening until the mixture resembles coarse crumbs. In a small bowl, combine milk and eggs; stir into dry ingredients just until blended. Pour into a greased 13-in. x 9-in. baking pan. Sprinkle with cheese.   • Preheat the oven to 400F.
  • Generously butter an 8 inch square baking pan.
  • In a large bowl, stir together the cornmeal, flour, baking powder, sugar (if using) baking soda and salt.

1 1/4 cups stone-ground cornmeal

1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
2 large eggs
1/2 cup 1/2-inch cubes Cheddar, plus 1 cup shredded
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8-inch square baking pan and set aside.
  • Combine the cornmeal, flour, sugar, kosher salt, baking powder and baking soda in a large bowl and set aside. Whisk together the butter, buttermilk and eggs in a bowl and stir to combine. 1-1/2 cups cornmeal

2 cups plain cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda

1/3 cup shortening
4 large eggs

Steps:

  • Heat oven to 425°F.
  • Grease two 12 muffin tins or line with liners.

Okay by me -- it was like a taste of Tennessean far from home. I actually prefer this cornbread to most Southern-style cornbreads. The recipe came from Please to the Table, I think, and I usually halve the recipe for a smaller batch.

We are huge fans of cornbread and eat it all the time. We have it for breakfast with spicy scrambled aggs, for lunch with a big bowl of chili or gumbo, and for dinner with shrimp etouffee or fried catfish fresh from our pond. Needless to say, we are also cornbread snobs! This is our favorite and it's a combination of about 10 recipes I've tried over the years. Hope you like it, as well!

4 tablespoons bacon grease or 4 tablespoons canola oil
1 1/3 cups cornmeal
2/3 cup bread flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/3 cup light brown sugar
2 large eggs
1 cup nonfat milk
2/3 cup plain yogurt
1 cup sharp cheddar cheese, grated
1/2 cup monterey jack pepper cheese, grated

Steps:

  • Preheat the oven to 425 degrees.
  • Place the bacon grease in a 10" cast iron skillet.
  • When the oven temp reaches 425 insert the skillet and allow the bacon grease to melt, about 10 minutes.
