1/2 cup margarine or 1/2 cup butter
1 teaspoon vanilla
3/4 cup sugar (try using some brown if you like)
2 eggs
1 1/4 cups flour
3/4 cup quick oats, uncooked
1 teaspoon salt
1 teaspoon baking soda
1 cup mashed banana (about 3 medium, very ripe)
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350F degrees.
  • In a large bowl, cream margarine, vanilla, and sugar until fluffy.
  • Beat in eggs one at a time.
  • In another bowl, sift together flour, oats, salt, and baking soda.
  • Add dry ingredients alternately with mashed banana to the creamed mixture.
  • Do not overmix.
  • Fold in chocolate chips.
  • Spoon batter into well greased muffin tins and bake for approxamitely 25 minutes.

This recipe is very versatile because it can be made in the form of muffins, bread or CAKE! If you like, you can add a bit less sugar and leave out the chocolate chips and make it more appropriate for breakfast/brunch. Walnut are are great addition, but are by no means necessary. I think these are amazing just as they are. From: Joy of Vegan Baking! Please note: Cook time for MUFFINS is stated below. If baking as a "bread" or cake it should probably bake for 40-45 minutes

2 cups all-purpose flour, unbleached
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup sugar
1/3 cup canola oil
4 bananas, ripe, mashed
1/4 cup water
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips (nondairy)
1 cup walnuts (optional)

Steps:

  • Prehaet oven to 350 degrees.
  • Line you muffin tins with liners.
  • In a medium bowl, mix flour, baking soda and salt.
  • In a large bowl, beat the sgar and oil together.
  • Then add mashed bananas.
  • Stir in water and vanilla and mix thoroughly.
  • Add the flour mixture and the chocolate chips and mix until just combined.
  • Fill each muffin tin with about 2 full TBSP of the batter.
  • Bake for 20-30 minutes until golden brown and toothpick comes out clean.
  • *mine took exactly 25 minutes to be perfect!

1 cup mashed banana (usually 2 lg)
1 large egg
1/4 lb butter, melted
1/4 cup milk
3/4 cup chocolate chips

Steps:

  • mix dry ingriedients together.
  • mix wet ingriedients together.
  • stir banana mixture gently into the dry ingriedients till just moist.
  • stir in chocolate chips.
  • divide into 12 lined muffin cups and bake at 350°F about 30 minutes.

1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
⅛ teaspoon salt
2 egg whites
1 cup mashed bananas
¾ cup white sugar
¼ cup applesauce
½ cup semisweet chocolate chips

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Coat a 12 cup muffin tin with nonstick spray.
  • Whisk together flour, baking powder, soda, cinnamon, salt, and sugar. Mix in egg whites, applesauce, and banana mash until just moistened. Stir in chocolate chips. Divide batter into muffin cups.
  • Bake for 15 to 18 minutes.

¾ cup white sugar
6 tablespoons butter, softened
6 tablespoons ground flax seed
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3 ripe bananas, mashed
¾ cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

1/3 cup oil
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chocolate chips

Steps:

  • Preheat oven to 350.
  • Combine bananas, oil, sugar, vanilla and egg in a large bowl, and mix well.
  • Mix dry ingredients in a separate bowl.
  • Add flour mixture to banana mixture, mixing until just blended.
  • (ignore lumps) Fill muffin tins about 2/3 full.
  • Bake 20 minutes.
  • This recipe doubles easily.

2 1/4 cups all-purpose flour
2 teaspoons baking powder
2 eggs
1/2 teaspoon ground cinnamon
1 cup brown sugar
1/2 teaspoon salt
1/2 cup butter, melted
1 cup chocolate chips
1 teaspoon vanilla
1/2 cup walnuts, chopped

Steps:

  • Puree bananas in blender.
  • In medium bowl, beat pureed bananas, eggs, sugar, butter and vanilla until well blended.
  • In large bowl, combine flour, baking powder, cinnamon and salt.
  • Stir in chocolate chips and nuts.
  • Make well in center of dry ingredients; pour in banana mixture.
  • Mix until just blended.
  • Spoon into well greased 2 1/2-inch muffin cups.
  • Bake in 350° oven for 25 to 30 minutes or until done.
  • Remove from pans and cool.
