JACK'S FRUIT ICE CREAM
After trying a delicious frozen drink concoction prepared with jackfruit, I found myself truly delighted with the exotic and yet familiar flavor. I found myself on a personal quest to use this unfamiliar fruit in new and exciting ways.

Steps:
- In a heavy saucepan heat milk, heavy cream, and vanilla bean over medium high heat to a simmer. Turn heat down to medium.
- In a separate bowl whisk together the eggs yolks, sugar, and salt. Sugar will dissolve when heated.
- Slowly dizzle this egg/sugar mixture into the simmering milk mixture and whisk. Combining these too quickly will result in "scrambled eggs."
- After you have added these two mixtures together, reduce the heat to a medium low temperature.
- Remove the vanilla bean and split lengthwise scraping out seeds. Return the pod and the seeds back to the pot. I like to add several drops of food coloring at this point.
- Continue to stir until the mixture coats the back of a spoon. Strain mixture through a fine-holed strainer, discarding the vanilla pod and refrigerate the mixture over night.
- Follow manufacturer's instruction for your ice cream maker, and let the fun begin.
- Meanwhile, drain the jackfruit and pulse it gently in your processor. We want small pieces of fruit for the ice cream.
- After about 15 minutes into freezing your ice cream add small pieces of jackfruit to the mixture.
- Serve your ice cream at your next dinner party and enjoy the mystery when your friends/family try to guess the secret ingredient! The flavor is both refreshing and delicious. Enjoy!
APPLEBERRY-PEACH STRUDEL-STYLE PASTRY

- In a large skillet, melt the butter over medium heat and stir in apples. Saute for about 5 to 7 minutes until they begin to caramelize. Add lemon zest and juice, peaches, walnuts, and raisins and cinnamon and cook for about 5 more minutes. Stir in brown sugar and flour, remove from heat and gently fold in raspberries, and cool to room temperature.
- Preheat oven to 350 degrees F.
- While the fruit is cooking, roll puff pastry out on a floured surface. Spoon some of the fruit mixture onto the pastry and begin to roll up the pastry, brushing each fold of pastry with butter and sprinkling some of the sugar as you go. If you are using 2 sheets of puff pastry, you will be making 2 strudel "rolls." Brush each roll with apricot jelly, place on a baking sheet and bake until golden brown, about 40 minutes. Let cool completely and serve. (This is best served on the day it is made.)
RUSSIAN STYLE MIXED/DRIED FRUIT STRUDEL
Steps:
- Put the flour in the bowl of an electric mixer. On slow, mix in the butter until it looks like very coarse meal. Mix in the sour cream until it masses together to form a dough. Pat into a rectangle, wrap in plastic and refrigerate for 1 hour or overnight.
- Filling:
- Coarsely chop the prunes. In a small saucepan, cover the prunes with the prune juice and sugar. Bring to a simmer for 3 minutes. Place in a food processor with the vanilla and puree to a paste. Mix in the raisins, cherries and walnuts. Refrigerate for 1 hour. Preheat the oven to 400 degrees. On a lightly floured surface, roll the dough out into a square 16 by16 inches. Place the filling in a log running along the bottom and roll up. Pinch the ends closed. Place on a parchment lined cookie sheet, seam side down. Mix the egg and water together to form a wash and paint the strudel. Bake for 30 minutes until crisp and golden. Let cool on a rack, then slice into 1 inch pieces.
- This was my Grandma Bessie's baking specialty. I haven't had this since she died but my brothers and I talk of it often, trying to re-construct what was in it. I re-discovered it at the Golden Key in Brighton Beach. Can be made on a rainy day with items in the pantry

- In a large bowl, combine the flour, baking powder, 2 tablespoons sugar and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Turn onto a lightly floured surface; knead 8-10 times., Roll out into a 14x10-in. rectangle. Brush with melted butter. Top with apples; sprinkle with cinnamon and remaining sugar., Roll up jelly-roll style, starting with a long side; pinch seams to seal. Place on a parchment-lined 15x10x1-in. baking pan. - Preheat oven to 375°. In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until apples are tender, stirring occasionally. Cool completely., Unfold puff pastry onto a large sheet of parchment; roll into a 16x12-in. rectangle. Transfer parchment and pastry to a baking sheet, placing a short side of the rectangle facing you. Using a slotted spoon, arrange apples on bottom half of pastry to within 1 in. of edges. This a delicious dessert sort of a cross between strudel and rugalech. Takes 2 days to make because you have to rest the dough overnight. Delicious results.

- Dough:.
- In a large bowl mix the dough ingredients together until it forms a ball.
- Roll in waxed paper and refrigerate overnight.
- Filling:
- Mix orange marmalade and apricot jam together.
- Topping:.
- In a separate bowl mix all toppings together.
- Preheat oven to 325 degrees.
- Grease and flour cookie sheet.
- Cut dough in four equal pieces.
- Take 1 section of dough and refrigerate the others.
- Roll out dough on floured waxed paper forming a rectangle.
- Spread 1/4 filling over rectangle.
- Sprinkle 1/4 topping mixture over rectangle.
- Roll up like a jelly roll about 1 inch across.
- Repeat for balance of ingredients.
- Bake for 1 hour.
- Cut into slices when cool.

- Heat oven to 200C/180C fan/gas 6. Roll out the pastry on a lightly floured work surface into a large rectangle. Transfer to a lightly greased baking tray.
- Put the sultanas in a small mixing bowl with just enough warm water to cover them, and soak for 10 mins.
- Core the apples and pears and slice them into even-sized pieces - you don't need to peel them. Put the pieces in a bowl and add the honey and 2 tbsp apricot jam. Drain the soaked sultanas and add them to the mixture. Stir well and add the mixed spice and cinnamon to taste.
- Spoon the mixture in a thick strip down the centre of the puff pastry. Use a sharp knife to make roughly 8 diagonal cuts down each side of the pastry like a lattice. Fold the pastry strips alternately across the filling like a plait.
- Crack the egg into a bowl, whisk with a fork and, using a pastry brush, glaze the top of the puff pastry.
- Place the plait in the oven and bake for 25-30 mins or until the apples are soft and the pastry is golden brown. Serve with crème fraîche or vanilla ice cream.

FRUIT STRUDEL
My mother has had this recipe for years and it is very easy to make. She said she got it from a magazine a long time ago. Prep time includes hours in fridge.

Steps:
- Preheat oven to 350º.
- Put the flour, sour cream and butter in a large zip lock bag. Mix until combined. Let sit in the refrigerator overnight, or put in the freezer for 1 ½ hours.
- After the dough is well chilled, divide into four parts.
- Flour work surface.
- Take one part and roll into a fat snake like shape with hands.
- Then with a rolling pin, roll into a rectangle about 1/8 inch thick.
- Spread jam evenly onto dough, leaving an small edge without jam.
- Roll up like a jelly roll.
- Press seams together and seal.
- Lay seam side down on a cookie sheet.
- With a sharp knife, cut slits across the strudel in a diagonal pattern.
- Bake for 20-25 minutes.
- To make icing, combine the powdered sugar and milk. You want it to be thick.
- While strudel is still warm, drizzle powdered sugar mixture over strudel.
- Cut into bite size servings to serve.
- Feel free to add nuts with the jam.
