Steps:

  • Pour water and orange juice into the mixture and simmer over low heat, stirring occasionally, for 5 minutes.
  • Raise the temperature to high heat and cook, stirring constantly, until thickened, about 5 minutes more.

These light, easy puff muffins are equally delightful as breakfast or dessert. For little kids: Let them crack the eggs and help stir the batter. For big kids: Let them measure and stir the ingredients for the popovers and measure and cook the berries.

1 cup whole milk
3/4 cup all-purpose flour
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F. Spray a 12-cup muffin tin generously with baking spray and set aside.
  • Whisk the milk, flour, eggs, vanilla and 1/2 teaspoon salt in a medium bowl until combined. Drizzle in the melted butter while whisking until combined, then let the batter stand for 5 minutes. Whisk in the baking powder, then divide the batter evenly among the muffin cups (a scant 1/4 cup per muffin). Bake until the popovers are puffed and browned around the edges, 20 to 25 minutes, rotating the pan halfway through.
  • While the popovers are baking, bring the berries, 1/2 cup water and granulated sugar to a simmer in a small saucepan over medium heat. Cook until the berries are juicy and soft and the liquid is reduced and thickened, about 10 minutes. Remove from the heat and cover to keep warm.
  • When the popovers are done, turn them out of the pan, using a small spatula if necessary. Arrange 2 popovers on each of six plates and garnish with a dollop of the sauce and a dusting of confectioners' sugar if using.

1/3 cup low-fat plain yogurt
1/3 cup fresh or frozen mixed berries
1 tablespoon maple syrup
1 tablespoon Easy Homemade Granola, recipe below
2 tablespoons maple syrup
1 teaspoon extra-virgin raw coconut oil
1/2 cup old-fashioned oats
1/4 cup sliced raw almonds
1/4 cup raw sunflower seeds
Kosher salt
Nonstick cooking spray

Steps:

  • Fill a small single-serving (6 ounce) container with a third of the yogurt. Top with a third of the berries. Drizzle 1 teaspoon of maple syrup over the berries. Repeat two more times with the rest of the yogurt, berries and maple syrup. Pack the granola separately so that it can be mixed into the parfait when ready to eat. Pack the parfait with an ice pack or frozen juice box so that it stays cold until lunchtime.
  • Heat an oven to 350 degrees F.
  • Heat the maple syrup with the coconut oil in a small skillet over medium-low heat, just to melt the oil. While still warm, toss the maple syrup mixture together with the oats, almonds, sunflower seeds and a pinch of salt in a medium bowl. Spray a baking sheet with the nonstick cooking spray. Spread the granola on the sheet tray in a thin layer. Bake for a total of 20 minutes, tossing the granola halfway through. Let cool to room temperature and store in an air-tight container in the refrigerator for up to 1 month.

1 lb fresh strawberries, hulled and thinly sliced
6 oz (1 dry half pint) fresh raspberries
6 oz (1 dry half pint) fresh blueberries
6 oz (1 dry half pint) fresh blackberries
1 tablespoon fresh lemon juice, from 1 lemon
¾ cup sugar

Steps:

  • Combine all of the berries in a large bowl and stir gently to combine. Spoon about ⅔ of the mixed berries into a medium saucepan; transfer the remaining berries to a small bowl and refrigerate until ready to serve.
  • Add the lemon juice and sugar to the berries in the sauce pan. Bring to a gentle boil over medium heat and cook until the fruit is syrupy, about 5 minutes.
  • Transfer the hot berry mixture to a blender and purée until smooth. Set a fine mesh strainer over a bowl. Pour the sauce into the strainer and use the back of a soup ladle and circular motions to force the sauce through the strainer and into the bowl. Discard the seeds that remain in the strainer. Refrigerate the berry sauce until cold or ready to serve.
  • Before serving, add the reserved berries to the sauce and stir to combine. If the sauce seems too thick, add a few tablespoons of water, a little at a time, until the desired consistency is reached.
  • Freezer-Friendly Instructions: The sauce can be frozen in an airtight container for up to 3 months.

2 cups raspberries
2 cups strawberries

3 cups sugar
1 lemon, juice of

Steps:

  • In a large pan, combine berries with sugar.
  • Crush berries with a potato masher.
  • Add lemon juice and lemon rind.
  • Bring to a boil, skimming off any foam that forms.
  • Cook at a full boil until jam thickens, approximately 30 minutes (jelling point is 221F).
  • While the berries are cooking, sterilize your jars and heat the seals in a pan of hot water.
  • Pour jam into hot jars; wipe rims, place seals and screw on bands fingertip-tight.
  • Process in a boiling water bath for five minutes; remove to a protected countertop and let cool, undisturbed for 24 hours.
  • If any of the lids have not sealed, either re-process or store in the refrigerator and use those jars first.

Mixed Berry Sauce to Be Enjoyed With Meat image

This is a sauce that my family and I enjoy eating with red meat, game or in particular, duck. It was a bit of an experiment but turned out great. The sauce itself takes only 10 minutes to make but it requires the juices from the meat so you have to cook your meat first. PLEASE NOTE: time cooking the meat will vary from meat to meat and person to person so I have not included this in cooking times, I have only included the timing of the actual sauce itself. As it is a fruity sauce do not expect it to be thick and creamy, it is quite fluid but its the flavour that we love. It is both sweet and savory atthe same time as the fruit and the meat juices used are a complete contrast to each other.

1 orange, juice of
1 bay leaf
3 tablespoons red currant jelly
150 g mixed berries (fresh or frozen, if frozen then defrost beforehand)
1/2 tablespoon of fresh mint
1/2 teaspoon brown sugar

juices from cooked meat

Steps:

  • Cook the meat that is going to be served in a pan and then remove it and set aside to rest, covering with foil to retain the heat.
  • Add the orange juice, bay leaf, redcurrant jelly, berries and sugar to the meat juices left in the pan from cooking the meat and boil the mixture for 3-4 minutes.
  • Lower the heat and simmer uncovered for another 5 minutes until the fruit is soft.
  • Remove the bay leaf, stir in the balsamic vinegar, mint and season with salt and pepper.
  • Spoon over the meat and serve immediately while hot.

Easy-to-make muffins stuffed with fresh berries is a great way to use up left-over fruit and makes for excellent lunchbox fillers or easy snacks.

250 g approximately 2 cups cake flour
2 teaspoons baking powder
½ teaspoon salt
250 ml 1 cup Greek yoghurt
200 g approximately 3/4 cup caster sugar
3 extra-large eggs
125 ml 1/2 cup canola oil
1½ cups mixed berries (chop strawberries roughly, if using)
3 tablespoons flour (to coat the berries)
zest of 1 lemon

Steps:

  • Pre-heat the oven to 180°c and line a 12-hole muffin pan with cupcake/muffin liners.
  • Sift together the cake flour, baking powder and salt and set aside.
  • In a separate bowl, combine the remaining ingredients and mix well.
  • Pour the yoghurt mixture into the dry ingredients and mix to combine.
  • Coat the berries in the 3 tablespoons of flour. Shake off the excess and fold into the muffin batter.
  • Transfer the batter to the prepared muffin cases and place in the oven.
  • Bake for 15-20 minutes until the muffins are gold brown and a skewer inserted comes out clean.
  • Remove from the oven and allow to cool completely before serving.
  • Store in an airtight container in the fridge for 3-4 days.

The sauce will keep, in an airtight container, for up to a week.

1/3 cup granulated sugar, plus extra for sprinkling
1 teaspoon cinnamon
1/2 teaspoon baking powder

  • Baked for 30-40 minutes or until French toast is puffed. Sprinkle top of French toast with sugar, then set oven to broil. Broil French toast until sugar is melted and bread is lightly browned.
  • BERRY SAUCE:.
  • While French toast bakes, in a small bowl, combine lemon juice and cornstarch. Set aside.
  • In a medium saucepan, combine berries, sugar, water and salt. Bring to a simmer and stir in lemon juice mixture. Simmer, stirring often, until sauce thickens slightly about 2 minutes longer. Let cool.
  • When French toast is done baking, serve immediately topped with mixed berry sauce.
