SWEET HEAT BAKED BEANS



Sweet Heat Baked Beans image

1 pound thick-cut bacon, cut into small pieces
1 large Vidalia onion, diced
Four 15.5-ounce cans great Northern beans
1 cup molasses
1/2 cup tomato sauce
1/2 cup brown sugar
2 tablespoons yellow mustard
1 tablespoon garlic powder
Kosher salt and freshly ground black pepper
Candied Jalapenos, recipe follows
1 pound jalapeno peppers
1/4 cup brown sugar
1/2 teaspoon granulated garlic
1/2 teaspoon ground mustard
1/2 teaspoon cayenne pepper
Pinch kosher salt
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the bacon in a large ovenproof saucepan or Dutch oven until the fat is rendered and the bacon is crisp, about 7 minutes, then set aside to drain on a paper towel. Add the onion to the pan and cook until softened, 8 to 10 minutes.
  • Add the beans, molasses, tomato sauce, brown sugar, mustard, garlic powder, 1/4 cup water and salt and pepper to taste and stir to combine well. Let the mixture simmer for a minute or so. Transfer the pan to the oven and bake, uncovered, until the beans are very tender and dark and the sauce is thick, 1 1 /2 to 2 hours.
  • Transfer to a serving dish and top with Candied Jalapenos and bits of bacon.
  • Preheat the oven to 325 degrees F and line 2 baking sheets with parchment paper.
  • Thinly slice the jalapenos and place in a single layer on the prepared baking sheets.
  • Combine the brown sugar, granulated garlic, mustard, cayenne pepper and salt in a small bowl. Brush the slices of jalapeno with the olive oil. Sprinkle the sugar and spice mixture over the top. Bake until the jalapenos are crispy, 20 to 25 minutes. Set aside to cool.

1 pound dried navy beans picked over and soaked overnight in water to cover
1 1/4 teaspoons cayenne pepper
1 teaspoon salt
2 bay leaves
2 tablespoons olive oil
1/2 pound salt pork trimmed and cubed
4 ounces chopped bacon
1 1/2 cups ketchup
1 1/2 cups reserved bean liquid
1 cup chopped onions
1/2 cup chopped celery
1/2 cup dark brown sugar - (firmly packed)
1 tablespoon dry (powdered) mustard
1 tablespoon chopped garlic
1 teaspoon freshly-ground black pepper

Steps:

  • Preheat the oven to 300 degrees. Drain the beans and put them in a pot with 1/4 teaspoon cayenne, salt, and the bay leaves. Add 8 cups of water and bring to a boil. Reduce the heat to medium-low and simmer until the beans are tender, 45 minutes to 1 hour. Remove from the heat and let sit for 5 minutes. Drain the beans and set aside. Reserve the cooking liquid. Heat the oil in a large ovenproof pot or Dutch oven over high heat. Add the salt pork and bacon and cook, stirring, for 4 minutes. Add the ketchup, 1 1/2 cups of the reserved bean liquid, onions, celery, sugar, mustard, garlic, black pepper, and remaining 1 teaspoon cayenne. Cook, stirring, for 4 minutes. Reduce the heat to medium-low. Add the beans and stir gently to mix. Simmer for 5 minutes. Transfer the beans to the oven and bake, uncovered, for 2 hours. Remove from the oven and serve hot. This recipe yields 6 to 8 servings.

1/2 cup molasses
1/2 cup ketchup
1/4 cup Dijon mustard
1 canned chipotle chiles in adobo
3 big (28-ounce) cans cannelloni beans, drained and rinsed
Kosher salt and freshly ground black pepper
8 slices pancetta
Leaves from 6 fresh rosemary sprigs
Extra-virgin olive oil

Steps:

  • Special equipment: 4 individual crocks
  • Preheat the oven to 350 degrees F.
  • Put the molasses, ketchup, mustard, and chiles in a blender and puree. Scrape that into a big bowl, add the beans and season with salt and black pepper, and gently toss so that the beans are coated with the molasses mixture. Divide the mixture evenly amongst individual crocks. Top each crock with a piece of pancetta, sprig of rosemary and a drizzle of extra-virgin olive oil. Bake in the oven until the bacon is browned and fat is rendered, about 25 minutes.

1 gallon pork and beans
1 lb pepper bacon, chopped
2 medium onions, chopped
1/2 cup ketchup
1/2 cup mesquite barbecue sauce
2 lbs brown sugar

Steps:

  • Saute onions and bacon.
  • Do not cook until brown.
  • Pour beans into large pot and add bacon and onions.
  • Add remaining ingredients, mixing well.

1 tsp rapeseed oil
1 large onion (185g), finely chopped
2 garlic cloves, finely grated
500g passata
3 pitted dates (about 15g), roughly chopped
1 tbsp balsamic vinegar
2 tsp bouillon powder
1 bay leaf
3 x 400g haricot beans, drained
4 medium cooked jacket potatoes

Steps:

  • Heat the oil in a non-stick saucepan over a low heat and fry the onion for 5 mins until golden. Add a drop of water if it looks like it's starting to burn.
  • Stir in the garlic, then tip in the passata, dates, vinegar, bouillon and bay leaf. Grind in plenty of black pepper and simmer for 5 mins.
  • Tip in the beans and 400ml water, then simmer for 10 mins, stirring every now and then until thick. To freeze, leave to cool completely, then divide between freezer bags and freeze for up to three months. Defrost thoroughly in the fridge overnight and reheat in a pan until piping hot. Serve over jacket potatoes.

2 cups dried white navy beans, covered with cold water and soaked for 24 hours
Cold water
1 tablespoon chopped fresh thyme leaves
1 tablespoon finely grated fresh orange zest
2 cloves garlic, minced
1/2 teaspoon dry mustard
2 tablespoons maple syrup or sorghum syrup
2 cups Chicken Stock for Baked Beans
6 slices bacon, cut crosswise into 3-inch-long pieces
1/2 teaspoon coarse salt

Steps:

  • Preheat oven to 300 degrees.
  • Drain soaked beans and transfer to a large, heavy pot. Add enough cold water to cover by 2 inches and bring to a boil; simmer until beans are tender, skimming foam that rises to the top as necessary, about 60 to 90 minutes. Drain, reserving 1 cup cooking liquid.
  • Place beans and reserved cooking liquid in a heavy 3-quart baking dish with a lid. Add thyme, orange zest, garlic, dry mustard, maple syrup, and chicken stock. Arrange bacon over beans, cover, and transfer to oven; bake for 1 hour. Remove lid and continue baking 45 minutes more. Season with salt and serve.
