MINI CAULIFLOWER PIZZAS

1/2 medium head cauliflower, cut into florets
2 tablespoons grated Parmesan
1/2 teaspoon Italian seasoning
Pinch kosher salt
1 large egg
1 cup freshly grated mozzarella
Nonstick cooking spray, for spraying the parchment
1/4 cup Creamy Tomato Sauce, recipe follows
1/2 cup halved cherry tomatoes
Fresh basil leaves, for garnish
2 tablespoons butter
2 tablespoons olive oil
2 cloves garlic, minced
1 small onion, finely chopped
One 14-ounce can tomato puree
1/4 cup heavy cream
1/4 teaspoon kosher salt
1 generous pinch red pepper flakes
Pinch of freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Pulse the cauliflower florets in a food processor to a fine snowy powder. Transfer the processed cauliflower to a microwave-safe bowl and cover. Microwave until soft, 4 to 6 minutes. Transfer to a clean, dry kitchen towel and allow to cool.
  • When cool enough to handle, wrap the cauliflower in the towel and wring out as much moisture as possible, transferring to a second towel if necessary.
  • In a large bowl, stir together the cauliflower, Parmesan, Italian seasoning, salt, egg and 1/2 cup of the mozzarella until well combined.
  • Line a rimmed baking sheet with parchment paper and spray the parchment with cooking spray. Use a 1 3/4-inch cookie scoop to scoop out a heaped amount of the mixture onto the parchment. Flatten with a cup into a thin 4-inch disc. Repeat with the remaining mixture to make 6 mini pizza crusts. Bake until golden, 15 minutes.
  • Remove the crusts from the oven and top with some of the Creamy Tomato Sauce--not too much--and the remaining 1/2 cup mozzarella. Return to the oven and bake until the cheese is melted and bubbly, 5 minutes more.
  • Garnish with the cherry tomatoes and fresh basil leaves just before serving.
  • Put the butter and olive oil in a saucepan over medium heat. Add the garlic and onions and saute until soft, about 8 minutes. Add the tomato puree, heavy cream, salt, red pepper flakes and black pepper and cook for 10 minutes.

1/2 diced yellow onion
4 large garlic cloves, diced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon of powdered paprika
2 teaspoons garlic powder
3 tablespoons of diced fresh cilantro
1 1/2 teaspoons sea salt
1/2 teaspoon of restaurant style black pepper
1 teaspoon basil
1 1/2 teaspoons tuscan garlic seasoning
4 tablespoons olive oil, divided
45 ounces of traditional style Ragú® Pasta Sauce
1/4 cup white wine
1 tablespoon lemon juice
2 tablespoons light brown sugar
1 large head cauliflower
19 ounces black beans
6 ounces feta cheese, tomato and basil
5 ounces fresh organic arugula

Steps:

  • Casserole Prep;.
  • Wash and Chop cauliflower into bite size pieces and set aside.
  • In a large skillet begin to saute' onions and garlic for 3 minutes.
  • Add cauliflower and gently saute' until just soft.
  • Sprinkle with tuscan garlic seasoning and crushed red pepper.
  • Stir gently for 1 minute.
  • Place sauté cauliflower in a glass casserole dish.
  • Strain and drain black beans and add to casserole dish and stir to mix the mixture.
  • Gently sauté arugala with remaining olive oil for 2 mintues and place on top ox mixture in casserole dish.
  • Sauce Prep;.
  • In a sauce pan simmer Traditional Ragu Sauce over medium heat for 5 minutes.
  • Add paprika, sea salt, garlic powder, black pepper, cilantro, basil, white wine, lemon juice and light brown sugar. Simmer for 10 minutes over low heat.
  • Cover the mixture with sauce and top with tomato and basil feta cheese.
  • Bake at 400 degrees for 15 minutes.
  • Serve.

Tender and delicate miniature cauliflower is often available in the fall. Serve this ragout as a side dish or over rice, or cut the cooked cauliflower into smaller pieces, and use ragout as an omelet or frittata filling.

2 tablespoons olive oil
1 medium onion, chopped into 1/2-inch pieces
8 cloves garlic, 4 minced, 4 whole
5 anchovy fillets, minced
8 large cremini, wiped clean and quartered
2 28-ounce cans whole Italian tomatoes (7 cups)
1 tablespoon finely chopped fresh rosemary
4 ounces (1/2 cup) Nicoise olives, pitted
3 tablespoons capers
2 dried bay leaves
8 heads baby cauliflower, trimmed, leaves on (or 1 1/2 pounds cauliflower, cored, cut into 3 1/2-inch pieces)

Steps:

  • Heat the oven to 350 degrees. Heat the olive oil in a 3-quart ovenproof casserole or pan over medium heat. Add the onion, and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and minced anchovy fillets; cook until garlic is softened, about 3 minutes. Add the mushrooms; cook until their liquid is released and evaporates, about 5 minutes.
  • Stir in the tomatoes, rosemary, olives, capers, and bay leaves. Cook over medium-high heat, stirring occasionally, until all the flavors combine, about 10 minutes. Transfer half of the mixture to the bowl of a food processor, and process until it is slightly chunky; return to pan. Use a large spoon to break up larger pieces of tomato.
  • Arrange the cauliflower over the sauce in the pan. Cover, and cook until cauliflower is tender, about 30 minutes. (If mixture is too soupy, continue to cook another 5 to 10 minutes, uncovered, to reduce liquid.) Serve hot.

  • Heat oil in a large pot over medium heat.

1/2 cup extra virgin olive oil
1 garlic clove, crushed
2 lbs tomatoes, peeled seeded and chopped or 4 cups canned tomatoes, drained and chopped
1 head cauliflower, broken into 1-inch florets
1/2 cup boiling water

1/2 cup finely chopped flat leaf parsley

Steps:

  • In a large skillet, heat the olive oil over medium heat.
  • Add the garlic and cook until softened and golden, then add the tomatoes and cook, stirring, until they begin to break down, about 5 minutes.
  • Stir in the cauliflower and boiling water, lower the heat to medium and cook, stirring occasionally, until the cauliflower is tender, about 30 minutes.
  • Season the cauliflower to taste with salt and pepper and scatter the parsley on top.

4 teaspoons white-wine vinegar
2 teaspoons fresh thyme leaves, plus sprigs for garnish
1 teaspoon salt

Steps:

  • Heat a large saute pan over medium heat, and add olive oil. Add diced onion, and cook until translucent, about 2 minutes.
  • Add garlic, and cook 1 minute. Add beans, and cook until hot and slightly softened, about 3 minutes. Add the spinach and vinegar, stirring frequently until spinach is wilted, about 3 minutes. Add the thyme, and season with the salt and pepper. Serve.

  • One after the other pulse first the mushrooms until finely chopped, remove into a small bowl, wipe the food processor clean and then pulse the cauliflower. Depending on your blender I would recommend working in smaller batches until its finely chopped and the size of a rice grain. Put aside into a medium bowl.
  • Heat 1/4 cup of oil plus 2 tbsp of butter in a large pot. Over medium high heat, ddd mushrooms and cook until golden brown, stirring occasionally for about 4-6 minutes. Add the finely chopped onion and 2 tbsp oil. Cook until onion is very soft and golden, 6-8 minutes. Add garlic, dried tomato flakes, italian herbs and rosemary, cook until garlic is softened and fragrant about 2-3 minutes. Add tomato paste and cook until slightly darkened, about 2 minutes. Add the tomato sugo and the crushed tomatoes and cook until it thickens, 2-3 minutes. Add cauliflower and cook until it's slightly cooked down and slightly sticking to the pot, about 6-8 minutes. Season with salt and set aside.
  • Now cook pasta, following the package directions, until almost al dente, 1 minute short. Save 250ml of pasta cooking liquid.
  • Transfer pasta to the pot with the sauce. Ad the grated parmesan, remaining 2 tbsp of melted butter and 200 ml of the pasta cooking liquid. Cook on medium high heat, stirring until everything is good combined, until pasta is al dente and sauce is clinging to the pasta. about 3 minutes. If needed season with salt and pepper.
