A fluffy cloud of pudding, whipped topping and oranges makes a melt-in-your-mouth topper for a homemade orange cake.

1 box (4-serving size) white chocolate or vanilla instant pudding and pie filling mix
1 cup milk
1 cup Cool Whip frozen whipped topping, thawed
1 can (11 oz) mandarin orange segments, well drained
1 1/2 cups Original Bisquick™ mix
1/2 cup sugar
1/3 cup milk
2 tablespoons butter or margarine, softened
1 teaspoon grated orange peel
1/2 teaspoon vanilla
2 eggs
1/2 cup grated white chocolate baking bars
Toasted slivered almonds, if desired
White chocolate curls, if desired

Steps:

  • In medium bowl, beat pudding mix and 1 cup milk with wire whisk or electric mixer on low speed about 2 minutes or until well blended. Fold in whipped topping. Reserve about 8 orange segments for garnish; stir remaining orange segments into pudding mixture. Cover; refrigerate 1 hour.
  • Meanwhile, heat oven to 350°F. Grease bottom and side of 9-inch round cake pan with shortening or cooking spray; lightly flour.
  • In medium bowl, beat cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Stir in grated baking bars. Pour into pan.
  • Bake about 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
  • Place cake on serving plate. Spoon topping onto cake. Garnish with reserved orange segments, the almonds and chocolate curls. Store covered in refrigerator.

Easy cookie that utilizes a cake mix. It is nice to have the ingredients on hand for thse for when unexpected company pops over or you need a quick sweet treat. These are a softer cookie with a cake-like texture. Mix and match cake mix and frosting varieties for a new flavor combination.

1 (18 ounce) package cake mix (any flavor)
1/3 cup vegetable oil
2 eggs
8 ounces frosting (any flavor)

Steps:

  • Preheat oven to 350.
  • In a bowl mix together the cake mix, oil and eggs. Do this by hand as it is very stiff. You are looking for everything to just come together to form a dough.
  • Roll dough into 1" balls. Place about 2" apart on an ungreased cookie sheet.
  • Note: if dough is too sticky to roll into balls easily, refrigerate for a short time.
  • Bake cookies 8 to 11 minutes at 350. Cookies should still be soft but the tops will have a cracked appearance when done.
  • Remove cookies from baking sheets to cool.
  • Allow to cool completely.
  • Choose 2 cookies that are the same size and shape. Place about 1/2 to 1 teaspoon of frosting on the bottom of one cookie. Put the two cookies together bottoms facing each other to form the sandwich.
  • Note: I like to use the following combinations, but feel free to experiment. Chocolate cookie with fudge frosting, chocolate cookie with vanilla frosting, white cake with vanilla frosting (add about 1/2 teaspoon of almond extract to the frosting), carrot cake cookies with chream cheese frosting, funfetti cookies with rainbow chip frosting (kids love this one for the colors).

Make this wonderfully moist Easy Orange Dreamsicle Cake with only a few simple ingredients. Layered with a pineapple and coconut filling.

1 box yellow cake mix ((15.25-ounce))
1 1/2 cups whole milk
1/2 cup canola or vegetable oil
4 large eggs
1 box orange Jello ((3-ounce))
1 box instant vanilla pudding ((3.4-ounce))
1/2 cup crushed pineapple (drained)
1/2 cup granulated sugar
3/4 cup full-fat sour cream
1 package frozen coconut (6-ounce) (thawed)
1 pound powdered sugar
1/2 cup vegetable shortening
1/2 teaspoon salt
1 teaspoon pure vanilla extract
2-3 tablespoon whole milk
4 ounces full-fat cream cheese (softened)

Steps:

  • Mix all of the filling ingredients together in a medium bowl. Reserve 1/2 to 3/4 cup for frosting.
  • In either a stand mixer or using an electric hand mixer combine all of the ingredients together and beat for 3 minutes. Scrape the bottom and the sides of the bowl occasionally.
  • Grease and flour two 8 or 9-inch round cake pans. Shake out any excess flour. Set aside.
  • Pour the cake batter evenly into the prepared cake pans. Bake in a preheated 350 degree F oven for 30 minutes. Or until a toothpick when inserted comes out clean.
  • Let the cakes cool in the pan for 5 to 10 minutes. Remove the cakes from the cake pans and let cool completely on a baking rack.
  • Add 1/2 to 3/4 cup of the filling to the frosting. Use about 2 containers of store bought frosting, or homemade cream cheese frosting. Mix together well with a rubber spatula. Cover with plastic wrap and place in the refrigerator until you are ready to frost the cake.
  • To make homemade cream cheese frosting:Using a beater attachment, add all of the ingredients and beat until smooth and fluffy. Add a little milk at a time until you get the consistency you want. You'll want this frosting to be a little thicker than normal.
  • Place one cake on a plate or serving platter. Place filling on top of the cake. Keep the filling about 1-inch away from the edges of the cake. Place the second cake on top of the filling.
  • Gently spread the frosting on the top and around the sides of the cake. Top with a few thin slices of oranges for garnish.
  • Refrigerate this cake until ready to serve.

1 box devil's food cake mix for two 9-inch rounds, such as Duncan Hines
2 large eggs
1/4 cup unsalted butter, melted
3/4 cup bittersweet chocolate chips
1/4 teaspoon peppermint extract
1 cup marshmallow cream

Steps:

  • Preheat the oven to 350 degrees F. Coat two baking sheets with cooking spray.
  • Beat the cake mix, eggs, butter and 1/4 cup water in a large bowl with an electric mixer on medium speed until smooth and no bits of dry cake mix are left. Stir in the chocolate chips and peppermint extract.
  • Drop the batter onto the prepared baking sheets, using about 2 tablespoonfuls for each cookie (a small ice cream scoop will make this task easier) and spacing them about 1 1/2 inches apart. Bake until set around the edges but still soft in the center, about 10 minutes.
  • Let the cookies cool on the baking sheets for 10 minutes and then transfer to a cooling rack to cool completely. Continue to bake cookies with the remaining batter.
  • Place about 1 tablespoon marshmallow cream on half the cookies and top each with a second cookie, gently pressing on the marshmallow; it will continue to spread to the edges on its own in a few minutes.

1 (18 1/4 ounce) box orange cake mix
1 (3 ounce) box orange Jell-O
1 cup boiling water
1 (3 1/2 ounce) box instant vanilla pudding
1 cup milk
1 teaspoon vanilla extract
1 teaspoon orange extract
1 (8 ounce) container Cool Whip

Steps:

  • Set out Cool Whip to thaw.
  • Prepare cake mix according to directions for a 9x13 pan,.
  • After the cake is done and you bring out of oven, poke holes throughout the cake with a fork.
  • Prepare Orange jello with 1 cup of boiling water and pour over the cake.
  • Allow to cool in pan for 30 minutes.
  • In a large mixing bowl, mix together with hand mixer (or other) instant vanilla pudding with 1 cup milk.
  • Stir in orange and vanilla extracts, mix well.
  • Fold in Cool whip Spread over the cake and chill for 2 to 3 hours before serving.

FILLING:
8 ounces cream cheese, softened
