MINIATURE MEATLOAF RECIPE

Steps:
- Preheat oven to 400°F. Mix water and gravy in large bowl. Add meat, stuffing mix and eggs; mix lightly.
- Shape into four oval loaves on foil-covered baking sheet.
- Bake 30 min. or until cooked through (160ºF). Slice and serve with your favorite vegetables.

MINI MEATLOAVES
Steps:
- Preheat oven to 375°F. In a blender or food processor ground the croutons until real fine. In a huge bowl mix hamburger, eggs, croutons, onion, garlic, and seasonings. Use your hands to mix well.
- Take meat mixture and roll into a small meatloaf about 3 inches across and 5 inches in length. Make an indention on the top of each loaf about a 1/2-inch deep. Place meatloaf on a 9 x 13 " pan or even a cookie sheet will work.
- Cook for 20 minutes. While the meat is cooking, get a small bowl and mix mustard and brown sugar real well, then add the ketchup and mix thoroughly. When the 20 minutes is up, use a spoon or ladle and cover each meatloaf with the ketchup mixture, use all of it. Make sure each meatloaf has the same amount of ketchup. Cook an additional 10 minutes.

These are so easy and yummy. I think I used a bowl and a spoon and no cutting! We really loved the crunchy stuffing! This recipe came from the Kraft Food and Family magazine, You will need the ingredients from the 'Base' recipe AND the two ingredients from whichever variation you are making.

- Pre-heat oven to 375°F.
- Mix ground beef, stuffing mix, water, and the powder ingredient from the variation you chose.
- Press into 12 muffin cups sprayed with cooking spray.
- Make an indentation in center of each meatloaf. With spoon fill indentation with sauce (from chosen variation).
- Bake 30 min or until cooked through. Top with cheese, continue baking 5 minutes or until cheese is melted.

MINI MEATLOAVES
An updated retro favourite that makes a cheap and easy family meal

Steps:
- Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
- Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).

- In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. , Serve desired number of meat loaves. Cool remaining loaves.
