FRENCH CHEESE PUFFS (GOUGERES)

French Cheese Puffs (Gougeres) image

Recipe video above. Fabulous light-as-air cheesy puffs that are crusty on the outside, hollow and soft on the inside. In France, they're served as nibbles with pre dinner drinks, as finger food at gatherings and for dunking into soups and stews! (How to pronounce Gougeres)

Provided by Nagi

Categories     Appetizer

Number Of Ingredients 10

1 cup (250ml) water
80g / 5.5 tbsp butter (, unsalted, cut into 1.5 cm / 0.5" cubes)
1 cup (150g) flour (, plain / all purpose)
3/4 tsp salt (, kosher/cooking salt)
Pinch nutmeg ((powder or freshly grated))
Pinch black pepper
4 eggs ((~60 - 65g / 2oz each))
200g / 2 cups Gruyère cheese (, freshly shredded (Note 1))
50g / 1/2 cup Gruyere cheese, extra (, freshly shredded (Note 1))
1 egg yolk (, for brushing)

Steps:

  • Preheat the oven to 220°C / 425°F (200°C fan). Lightly grease 2 trays then line with parchment / baking paper.
  • Place water, butter and salt in a saucepan over medium high heat. Bring to a boil until butter is full melted.
  • Remove from stove, add flour, salt, pepper and nutmeg. Mix until incorporated.
  • Return to stove on LOW heat and mix for 1 minute (this dries the mixture out, see video for before/after).
  • Remove from stove, leave for 2 minutes.
  • Add 1 egg, mix vigorously until incorporated - batter splits at first, but it always comes together!
  • Add 3 more eggs, one at a time, mixing until incorporated before adding the next. Good arm workout! (Or use electric beater)
  • Stir in 2 cups cheese.
  • Drop 1 tablespoon mounds onto trays (small cookie scoop is ideal, otherwise use a measuring tablespoon and a teaspoon to scrape out. Can make larger - good for dunking!)
  • Brush with yolk, then top with a pinch of reserved Cheese for topping.
  • Bake 25 minutes.
  • Allow to cool for 15 minutes so they become crusty and inside dries out a bit.
  • Serve warm as pre dinner nibbles, finger food at gatherings, or dunk into soups and stews!

MINIATURE FRENCH BREAKFAST MUFFIN PUFFS

Miniature French Breakfast Muffin Puffs image

I adopted this recipe in August and have just made them today, 12 November 2005. They are easy to make and very easy to eat:) I have re-listed the ingredients to make it even easier to follow. I used a mix of butter & light flora table spread for the butter/shortening mix. I guess you could use all butter or all shortening if you prefer. I made 24 mini and 6 regular from the mixture. The original recipe said it made 48 mini but I am guessing that it would only make 36 so have added that in the 'makes' note.

MINIATURE SWEET PUFFS

Miniature Sweet Puffs image

Provided by Food Network Kitchen

Categories     dessert

Time 1h45m

Yield about 25 small puffs

Number Of Ingredients 14

1/2 cup water
4 tablespoons (1/2 stick) unsalted butter
1/4 teaspoon fine salt
2 tablespoons sugar
1/2 cup all-purpose flour
2 large eggs
1 tablespoon turbinado sugar, for sprinkling, optional, recommended: Sugar in the Raw
Confectioners' sugar
Serving suggestion: Raspberry Cream, recipe follows, or mousse or ice cream of choice
1 cup raspberries
3 tablespoons sugar, plus more to taste
Freshly squeezed lemon juice, to taste
1/2 cup heavy cream, chilled
1 tablespoon confectioners' sugar

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring the water, butter, salt, and sugar to a boil in a saucepan, over medium-high heat. Pull pan from the heat, add the flour at once and stir vigorously with a wooden spoon until all the flour is incorporated, about 1 minute. Return the pan to the heat and cook over medium-low heat, stirring constantly, for 2 minutes to evaporate some of the water and "cook" out the flour. The dough will get a bit shiny and stick to the pan a little.
  • Transfer the mixture into an electric mixer fitted with a paddle attachment. Mix together on medium speed, and, while the mixer is running, add 1 egg. Stop the mixer and scrape down the sides of the bowl. Repeat, adding the other egg. Mix until the dough is smooth and glossy and eggs are uniformly incorporated.
  • Using a pastry bag fitted with a plain tip, pipe the dough onto the baking sheet, into 1/4 to 1/2-inch balls. (Use a damp finger, to dab down the points of the dough to make perfect balls.) Sprinkle with the turbinado sugar, if desired. Bake 10 minutes, then reduce the heat to 375 degrees F (without opening the oven door), and bake until puffed up, and a rich golden brown, about 15 minutes more. Remove and poke with a toothpick. Bake an additional 10 minutes to dry the insides of the puffs. Cool on a rack.
  • Cut puffs in half and fill with Raspberry Cream, ice cream or your favorite filling. Dust with confectioners' sugar and serve.
  • Mash the berries and sugar in a small saucepan with a wooden spoon. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to low, and simmer, stirring frequently until the berries break down and get juicy, about 5 minutes. Strain mixture through a fine-meshed sieve into a bowl; discard the seeds. Cool. Adjust the sweetness or tartness of the sauce with more sugar and lemon juice, as needed.
  • Beat the cream until it holds a light peak. Sift the confectioners' sugar into the cream. Continue beating until the cream holds a holds a soft, but firm peak. Gently fold raspberry sauce into the whipped cream until blended. Store in an airtight container in the refrigerator until needed.

FRENCH TOAST PUFFS

French Toast Puffs image

Provided by Food Network

Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 15

8 ounces butter or butter alternative, preferably Earth Balance
1 to 2 tablespoons agave syrup
1 tablespoon ground ginger
Nonstick cooking spray, for the baking sheet
2 ripe bananas
3 cups oat milk
1 cup toasted coconut flakes
1/3 cup sugar
1 tablespoon ground cinnamon
2 teaspoons ground turmeric
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
Pinch salt
1 to 2 loaves gluten-free millet bread (or favorite bread), cut into crouton-size pieces
Maple syrup, preferably from Vermont, for serving

Steps:

  • For the ginger butter: Place the butter, agave and ginger in a food processor and process until smooth. (If no processor is available, you may use softened butter and whisk all ingredients instead.) The butter should have a smooth consistency, ready to be dipped into.
  • For the french toast puffs: Preheat the oven to 500 degrees F, using convection if available. Spray a large baking sheet with cooking spray.
  • Put the bananas, oat milk, coconut, sugar, cinnamon, turmeric, nutmeg, vanilla and salt in a blender and blend until smooth. If there are a few small chunks of banana, don't worry, it will add to the texture of the puffs.
  • Put 1 loaf's worth of bread chunks in a large mixing bowl, followed by the batter. With a spatula or fingertips, gently fold everything together. Take care not to overmix. Homogenous is boring, so we are looking for the bread to be mostly intact, moistened by the batter. Let sit for 5 minutes. The texture should now be soft and wet, not soupy (if it's soupy, add more bread).
  • When the correct texture is achieved, it will be easily scoopable with a golf-ball-sized cookie scoop. Scoop out all of the bread-batter mix onto the prepared baking sheet. Keep it funky and scoop larger amounts than the scoop can hold, like a scoop of hard ice cream. Bake until golden brown and crispy on the outside, 10 to 15 minutes. (Browned and slightly crunchy on the outside, and soft on the inside, is our goal.) Eat with hands, dipping into Vermont maple syrup and ginger butter.

FRENCH DONUTS--CREAM PUFFS

French Donuts--Cream Puffs image

These are so good! This is my g-ma's recipe. These are best the first couple of days after you make them; if you keep them for longer, they start to get soggy. These are best when they have completely cooled.

Provided by IAcupcake

Categories     Dessert

Time 45m

Yield 6-12 donuts

Number Of Ingredients 9

1 cup water
1/2 cup butter
1 cup flour
1/4 teaspoon salt
4 eggs
3 tablespoons butter, melted
1 teaspoon almond flavoring
1 -2 cup sifted powdered sugar
2 tablespoons milk

Steps:

  • In saucepan, boil the first 2 ingredients.
  • Combine 1 cup flour, and 1/4 t salt. Add this mix all at once to boiling water. Turn heat to low, cook and stir until ball forms.
  • Remove from heat, add 4 eggs, one at a time, beating well and fast until smooth.
  • Drop dough balls onto a greased pan, making a hole in the center with a spoon handle to resemble donuts.
  • Bake at 400 degrees for 25-30 minutes.
  • For the frosting, mix with a mixer all the ingredients, adding the milk 1T. at a time for desired consistency.
  • Have the frosting ready because donuts are easier to frost when warm.

GOUGERES (FRENCH CHEESE PUFFS)

Gougeres (French Cheese Puffs) image

Best served warm, these party-ready savory gougeres, or French cheese puffs, are baked golden and packed with Gruyere cheese.

Provided by Connie Salisbury Risner

Time 55m

Yield 6

Number Of Ingredients 7

½ cup water
3 tablespoons unsalted butter, cut into cubes
¼ teaspoon salt
1 pinch chili powder
½ cup all-purpose flour
2 large eggs
¾ cup grated Gruyere cheese, divided

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Heat water, butter, salt, and chili powder in a saucepan over medium-low heat until the butter is melted.
  • Dump in flour all at once and stir vigorously until the mixture pulls away from the sides into a smooth ball. Remove from heat and let rest for 2 minutes, to cool it down a bit. At this point, you can scrape the dough into the bowl of a stand mixer fitted with the paddle attachment. If you don't have a mixer, let it cool in the pan, stirring it a few times to let the heat escape.
  • Add eggs, one at a time, stirring quickly to make sure the eggs don't cook. The batter will first appear lumpy, but after 1 minute or so, it will smooth out. After the eggs have been added, let cool until tepid.
  • When the dough has cooled, stir in a generous 1/2 cup Gruyere cheese until well mixed. (If dough is not cool, the cheese will melt.)
  • Scrape the dough into a pastry bag fitted with a wide, plain tip. Pipe into mounds, evenly spaced apart, making each about the size of a small cherry tomato. Top each puff with a bit of the remaining cheese.
  • Bake in the preheated oven for 5 minutes, then turn the oven down to 375 degrees F (190 degrees C). Continue to bake until completely golden brown, 20 to 25 minutes.

FRENCH BREAKFAST PUFFS

French Breakfast Puffs image

I just discovered this in Betty Crocker's baking classics. This should be illegal. It's a cross between a donut, a muffin, and cinnamon toast. I used butter, and I rolled the entire thing (top, bottom, and sides) in butter and in cinnamon sugar when it came out of the oven. This is way too simple to make and way too delicious. This is dessert to me...I wouldn't make it for breakfast, but it's good no matter what.
