- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
- After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
- Roll dough into a 16x21-inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
- Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

- Put yeast in bread machine first on bottom, then flour, sugar and salt.
- Then melt butter in microwave. Add beaten egg, milk and water.
- Pour onto dry ingredients in bread machine on the dough setting.
- When dough is done, put it onto a lightly floured surface.
- Knead in enough flour to make it easy to handle.
- If it is too elastic, cover and leave 10 minutes.
- Use floured rolling pin to roll out dough on floured surface.
- Roll out into rectangular shape to approx 1/4-inch thick.
- Use filling and spread over entire surface of dough with spoon.
- Roll up dough.
- Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
- Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
- Bake in a 350° oven for about 25 minutes, light brown on top.
- When done, make glaze and swirl over buns.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Unroll crescent roll dough onto a silicone baking mat or lightly greased work surface and separate into 4 rectangles; firmly press diagonal perforations with your fingers to smooth them out.
- Mix brown sugar and cinnamon together in a small bowl; sprinkle mixture evenly over rectangles.

- Lightly grease 2 round cake pans with butter.
- Roll bread dough out to an 18x6-inch rectangle and brush with melted butter. Mix brown sugar, walnuts, and cinnamon in a bowl; sprinkle over dough. Roll dough into a log, starting at the long edge. HONEY BUNS
Steps:
- In a stand mixer fitted with the dough hook, add in the flour, sugar, and salt.
- In a microwave-safe bowl, add in the milk. Microwave for 30 seconds. You'll want the milk to be at 105 - 110 degrees F.
- Add in the yeast, cooled melted butter, and egg. Using a fork, whisk the egg into the mixture.
- Pour the wet mixture into the stand mixer and mix on medium for 10 minutes. The dough will be pretty sticky.
- Grease your hands and a large bowl with vegetable oil.
- Remove the dough from the mixer and shape it into a ball.
- Place the dough in the bottom of the bowl and coat it in the oil. Cover the bowl with plastic wrap and let the dough rise until doubled. This will take about 1 to 2 hours.
- Line a cookie sheet with parchment paper. Spray the parchment paper with nonstick baking spray.
- Once the dough has doubled, press it down.
- Place the dough on a lightly floured work surface.
- Press the dough out into a 6-inch by 14-inch rectangle. You can use a rolling pin, but I prefer to use my hands.
- Sprinkle the cinnamon on top of the dough. Using your hand, rub the cinnamon all over the dough.
- Begin rolling the dough from the long side.
- Once the dough is rolled up, you'll need to seal the edge. Do this by rubbing the edge of the dough with water. Pinch the wet edge into the roll of dough to form the seam. If the dough isn't staying pinched together, rub a little more water on the edge and pinch again. Leave the dough seam side up since it will be sticky from the water and will likely stick to the counter if it touches it.
- Measure out 1/2-inch thick slices if you want thinner honey buns or 1-inch slice for thicker slices.
- Slide a piece of floss under the dough and cross both sides of the floss at the 1/2-inch or 1-inch line. Pull until the floss has cut completely through the dough.
- Place the slice of dough, cut side up, on the prepared cookie sheet. Repeat with the remaining pieces slices of dough. If you plan on baking these, you'll want to space them 2 inches apart. If you plan on frying them, they can be 1/2 inch apart.
- Spray the slices with nonstick baking spray so they don't dry out and cover with plastic wrap. Let rise for 30 minutes in a warm place.
- Preheat the oven to 350 degrees F.
- Place the cookie sheet in the oven and bake for 15 to 18 minutes until the edges begin to turn golden brown.
- Prepare the glaze while the honey buns are baking.
- Remove the honey buns from the oven and let cool for 10 to 20 minutes. While they're still warm, dip the tops in the glaze. Tap the wrist that's holding the honey bun to remove the excess glaze.
- Place on a piece of wax paper and let the glaze set up.
- Heat 3 cups of vegetable oil until it reaches 320 degrees F.
- Prepare the glaze while you wait for the oil to come up to temperature.
- Place the honey buns in one or two at a time into the oil. I did one at a time to keep my oil temperature from dropping.
- Flip once the donuts become golden brown.
- Once the other side becomes golden brown, place on a plate lined with paper towels. Let cool for 5 to 10 minutes.
- Dip the warm honey bun in the glaze. Give your wrist a tap to help any excess glaze to drip off.
- Place on a piece of wax paper and let the glaze set up.
- In a medium mixing bowl, add in the butter, powdered sugar, milk, and vanilla extract. Whisk together until the glaze is smooth.

- Line a baking sheet with a silicone mat or parchment paper.
- Place yeast into bowl of a large stand mixer; whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10 to 15 minutes.
- Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flour (about 3 cups).
- Fit a dough hook onto stand mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula; if large amounts of dough stick to the spatula, add a little more flour.
- Transfer dough onto a floured work surface; dough will be sticky and elastic but not stick to your fingers. Form the dough lightly into a smooth, round shape, gently tucking loose ends underneath.
- Wipe out stand mixer bowl, drizzle olive oil into the bowl, and turn dough over in the bowl several times to coat surface thinly with oil. Cover bowl with aluminum foil. Let dough rise in a warm place until doubled, about 2 hours.
- Transfer dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5x10 inches and about 1/2 inch thick. Dust dough lightly with flour if needed. Cut dough into 8 equal pieces. Form each piece into a round shape, gently tucking ends underneath as before.
- Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on prepared baking sheet. Dust buns very lightly with flour. Drape a piece of plastic wrap over the baking sheet (do not seal tightly). Let buns rise until doubled, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Beat 1 egg with milk in a small bowl, using a fork, until mixture is thoroughly combined. Very gently and lightly brush tops of buns with egg wash without deflating the risen dough. Sprinkle each bun with sesame seeds.
- Bake in the preheated oven until lightly browned on top, 15 to 17 minutes. Buns will stick together slightly where they touch. Let cool completely, tear the buns apart, and slice in half crosswise to serve.

- In a large bowl or the bowl of a stand mixer, combine the flour, yeast and salt.
- In a small microwave safe bowl (or glass measuring cup), combine the sugar, butter, water and milk. Heat in the microwave until the mixture is hot and the butter is almost melted (it took about 1 minute on HIGH in my microwave). Let the mixture come down to 120 degrees. Gradually add the milk mixture into the flour mixture. Add the egg and mix until a soft and sticky dough forms.
- Preheat the oven to 200 degrees.
- If using a stand mixer, switch to the dough hook and set on the lowest mixing setting for 4 minutes or until the dough becomes elastic or knead by hand on a lightly floured surface for 3-4 minutes. Cover the dough with plastic wrap and allow it to rest on the counter for 10 minutes.
- Once the dough has rested, roll it out on a lightly floured surface until it measures a 24x16 inch rectangle. Prepare the filling by combining all of the ingredients in a small mixing bowl except for the butter. Spread the butter over the top of the rolled dough, then cover with the filling. Using a pizza roller/cutter, cut out 24 strips of dough (show in pictures below). Roll each up into a tight roll.
- Place the rolls into a lightly greased 9x13 baking dish and gently place a piece of aluminum foil over top. Turn OFF your oven and place the covered rolls inside to rise for 45 minutes.
- Remove the rolls from the oven and turn ON your oven to 375 degrees. Once heated, remove the foil and bake the rolls for 15-18 minutes or until the centers are lightly golden brown in color.
- Remove from the oven and allow to cool for a few minutes before frosting. While rolls are cooling, prepare the frosting by combining all of the ingredients in a small mixing bowl and beating by hand or with a hand mixer until smooth. Spread over the tops of the rolls.

BREAD MACHINE BUNS
Super soft bread machine buns - a sweet dinner roll recipe that's easy to make. The secret is in how you form them!

- Make sure to add all of the ingredients in order to your bread machine pan.
- Measure 1 cup of milk and add the egg. Warm both in the microwave until luke-warm (about 30 seconds). Add to your bread machine pan.
- Next add the 2 tablespoons of butter - cutting it into pieces.
- Then add all of the dry ingredients in order: 3 cups flour, ¼ cup sugar, 1 tsp salt and 1 ½ teaspoons of active dry yeast (room temperature).
- Set the bread machine on the dough/pizza dough setting and press start. (This cycle is about 1 hour and 40 minutes.)
- Once the bread machine is done, let the dough rise to the top of the bread machine pan.
- Prepare a baking sheet by greasing it with shortening.
- Now on to the fun part - forming the buns. Grease your hands with shortening. Take a little more than a golf ball size piece of dough, pinching it off the rest of the dough. Then work the edges and push up in the middle at the same time to make a bump. The center should be smooth. Gather the outer edges in one hand. Squeeze the dough at the bottom with your opposite hand, pinching off the very end.
- Put it on the pan and flatten it with your hand.
- Place about 5 or 6 to a pan, depending on the size of the pan.
- For the remaining dough, prepare sheets of aluminum foil with shortening. Form the rest of the buns.
- Let the buns rise until they have almost doubled in size.
- Bake one pan at a time at 350 degrees for about 12 minutes (time may vary depending on your oven). The buns should be golden brown on the top and bottom.
- Once you remove it from the oven, rub butter on the top of each bun. Enjoy!

My Mom's Homemade Buns are the perfect dinner roll for any occasion! Incredibly soft and fluffy, use all purpose or whole wheat flour, make a big batch and freeze for later.

- In a small bowl or liquid measuring cup, whisk together the warm water, yeast and sugar.
- Let sit for 10 minutes or until bubbly -- this is how you know your yeast is working. This step is technically not required when using instant yeast, but I do it always anyways, so that I know my buns will be a success.
- In the bowl of a stand mixer (or a very large bowl if you are kneading by hand), whisk together the 2 cups warm water, butter, 1/3 cup sugar and salt.
- Add the bubbly yeast mixture and stir to combine.
- Place the bowl in the stand mixer and put the dough hook on the machine. You can also knead by hand.
- Add the flour, one cup at a time, and mix until nearly combined before adding more. You can use all purpose or whole wheat or a combination. Start with 4-5 cups flour, mixing until each is incorporated.
- The closer you get to your dough being ready, the less flour you will add at once. We want a smooth, soft dough, never stiff, so we need to watch and stop adding flour at just the right moment.
- Add up to 6-7 cups flour total, very gradually at the end, until the dough comes together in a smooth, soft ball and does not stick to the sides of the stand mixer. When you touch it, it should be smooth and slightly tacky but not sticky.
- Place dough in a large lightly greased bowl (you can use the same bowl and grease it), and cover with plastic wrap or a clean kitchen towel.
- Set in a warm spot (I use the oven with the light on -- turn the oven on to preheat for 2-4 minutes before turning off and adding the dough) and let rise until doubled, about 1.5 hours.
- Uncover dough, punch down, and roll out 20-24 rounds -- smoothing the top and pinching the seam in the back to smooth (see video for additional details).
- Place on a parchment lined baking sheet and let rise (you don't have to cover them) in a warm spot for 30 to 90 minutes (instant yeast will be quicker) until doubled.
- Bake at 350 degrees for 15-20 minutes, until light golden brown.

- For dough, add all ingredients in a bread machine pan in the order listed.
- Select the Dough/Pasta setting. Press Start.
- When beeps to "Add ingredients", don't do anything. Let it go all the way.
- When dough is finish, remove from machine.
- Knead dough for about 10 minutes using flour if sticky.
- Roll out into a rectangle (about 14 by 16 inches). Cut dough into 4 rectangles.
- For each smaller rectangle, spoon 1/4 of the mixture on the dough.
- Roll into a long pinwheel. Pinch the end the dough to keep in place.
- Cut into 1/2 inch pieces; makes about 18.
- Do the same thing for the other 3 pieces of dough and the rest of the filling.

- Generously grease a large bowl with butter or oil. Gather the dough into a ball and place it into the greased bowl. Turn it over a few times to coat the dough thoroughly.
- Cover the bowl with plastic wrap and let the dough rise for 1 to 1 1/2 hours, or until it has doubled in bulk.
- Line 2 large baking sheets with parchment paper or lightly grease the pans.
- Punch down and pat the dough into a rectangle.
- Cut the dough into 18 pieces, about 1 1/2 to 1 3/4 ounces each (or smaller).
- Shape the dough pieces into firm balls, flatten slightly with your hand, and place on the prepared baking sheets 2 to 3 inches apart.
- Cover the buns with a lightweight kitchen towel and let them rise in a draft-free spot for about 30 minutes.
- Preheat the oven to 375 F and arrange racks in the lower and upper thirds of the oven. If using the egg wash , whisk the egg white with 1 tablespoon of water until blended.
- Before placing in the oven, brush each roll with the egg wash and sprinkle with sesame seeds or poppy seeds if using.
- Bake for 15 to 18 minutes, or until golden brown.
- If you didn't use the egg wash and seeds, brush with melted butter if desired. Let the buns cool on a rack.
- Split the buns apart and stuff them with sandwich fillings.
- Gather the ingredients.
- In a small bowl, whisk together the water, milk, melted butter, and egg.
- Place the milk mixture along with the flour, sugar, salt, and instant or bread machine yeast in the bread machine in the order suggested by the manufacturer.
- Set to the dough cycle.
- Remove the finished dough to a lightly floured surface. Flatten into a rectangle, cut into pieces, and shape the dough into balls. Place on 2 parchment-lined baking sheets, cover with a kitchen towel, and let rise for 30 minutes.
- Brush with the egg wash and seeds, if using, and bake in a 375 F oven for 15 to 18 minutes.
- If desired, brush with melted butter if the egg wash and seeds weren't used. Let the buns cool on a rack.
- Split the buns in half, add sandwich fillings, and enjoy.
