MINI CAESAR SALAD ROLLS

Number Of Ingredients 10

1 small garlic clove, finely chopped
2 large egg yolks
2 tablespoons fresh lemon juice
3/4 teaspoon Dijon mustard
2 tablespoons olive oil
3 tablespoons grated Parmesan cheese
Kosher salt and freshly ground black pepper
8 ounces romaine lettuce, leaves finely chopped
Eight (8.5-inch) rice paper rounds
Crumbled pancetta, Parmesan cheese or chopped nuts, for garnish, if desired

Steps:

  • Whisk dressing ingredients together and season with salt and pepper.
  • Mix the lettuce with a small amount of dressing, just enough to barely coat the leaves. Place in a bowl to the side.
  • Pour some warm water into a large shallow dish. Submerge one rice paper round in water until it begins to soften, about 45 seconds. Place on a sheet of parchment paper. Place a small amount of lettuce in the center of the rice paper. Tightly roll into a cylinder, enclosing the lettuce. Repeat with the remaining rounds. Cover with a dampened paper towel or wrap in plastic. Chill. Can be made 4 hours ahead.
  • When ready to serve, remove from plastic and cut each roll into 2-inch-long pieces. Stand upright on a platter and top with a spot of dressing. You can put crumbled pancetta, Parmesan cheese, or chopped nuts on top for flavor and garnish.

1/4 cup mayonnaise
1/4 teaspoon Worcestershire sauce
1 clove garlic, minced
1 tablespoon lemon juice (1/2 lemon)
1/2 teaspoon anchovy paste or 1 anchovy, minced
1/4 teaspoon salt
2 tablespoons plus 1 cup freshly grated Parmesan
5 cups finely shredded romaine lettuce (2 romaine hearts)
Nonstick cooking spray, for skillet
36 tortilla chip scoops

Steps:

  • In a large bowl, whisk together the mayonnaise, Worcestershire, garlic, lemon juice, anchovy paste, salt and 2 tablespoons Parmesan. Add the lettuce to the dressing; toss well to coat.
  • Heat a medium skillet over medium heat and spray with nonstick spray. Sprinkle 1/4 cup of the remaining Parmesan evenly over the bottom of the pan. Cook until the cheese is bubbly and beginning to brown, 3 to 4 minutes. Remove from the heat, let cool for 1 minute, and then invert the cheese onto a parchment-lined baking sheet with the help of an offset spatula. Set aside to cool completely. Repeat with the remaining Parmesan. When all of the frico is fully cooled, break into bite-size pieces.
  • Scoop a small spoonful of the salad into each of the tortilla cups. Top with a piece of frico and serve.

A simple caesar salad served in individual garlic, buttery and crisp cups. No utensils required for consumption so it's perfect for a party or anywhere else you'd like a lovely, easy, fresh and unique hors d'oeuvre. I came up with this recipe because I wanted to serve a vegetable based appetizer but was tired of the standard veggie platter. I thought of regular salads, but they were too finicky for guests to deal with. (hard to juggle a glass of champagne and eat a salad) I needed something that people could easily pop into their mouths in one or 2 bites. Thus, this recipe was born! :)

45 wonton wrappers
5 tablespoons butter
1/4 teaspoon garlic salt
1 head romaine lettuce, chopped very finely
3/4 cup caesar salad dressing (adjust to taste and consistency)
1/4 cup parmesan cheese, freshly grated
nonstick cooking spray
lemon wedge (optional)

Steps:

  • Preheat the oven to 375 degrees F. Spray mini-muffin tins with cooking spray. Melt the butter in microwavable safe dish and stir in garlic salt. Set aside.
  • Place each wrapper into a section of a mini-muffin tin. Gently press each wrapper into the tin and arrange so that it forms a cup shape. The wrapper will overlap itself and stick up out of the cup. Brush insides with the garlic butter and bake for 8 to 10 minutes, until browned and crisp. (time may vary according to your oven, so keep a close eye on them) Remove from the tin and allow to cool while preparing salad.
  • Finely chop the romaine lettuce. If you have a food processor, use it. You really need a fine fine chop in order to fill the cups properly, so don't be lazy with this step!
  • Pour on caesar salad dressing and stir until all pieces are coated. Adjust dressing (adding more or less) to suit personal preference.
  • Spoon salad mixture into cooled wonton cups and sprinkle with freshly grated parmasan cheese. Garnish with fresh lemon, if desired.

  • Heat oven to 400°F.
  • In small bowl, mix chicken and dressing.

1 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
1 clove garlic, minced
1 1/2 thick slices hearty bread, cut into 1-inch cubes
1/4 cup grated Parmesan
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan
1 egg yolk
1 tablespoon fresh lemon juice
2 to 3 anchovies
2 cloves garlic, peeled
1 teaspoon Worcestershire sauce
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 romaine lettuce heart
1 cup cherry or grape tomatoes, halved
Grated Parmesan, for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • For the croutons: Combine the oil and garlic in a small bowl and whisk for 10 seconds. Add the bread cubes and toss to coat. Add the Parmesan, season to taste with salt and pepper and toss again. Transfer to a small baking sheet, drizzle with a little more oil and bake until golden and crisp, about 15 minutes.
  • For the dressing: Combine the Parmesan, yolk, lemon juice, anchovies, garlic and Worcestershire in a food processor. Pulse 3 to 4 times until well combined. While the processor is running, drizzle in the oil and process until a smooth emulsion forms, about 30 seconds. Season generously with salt and pepper.
  • For the bites: Tear the leaves from the romaine heart and arrange on a platter. Place a few croutons and tomato halves inside each leaf. Drizzle each leaf with about a tablespoon of dressing (you will have leftovers). Sprinkle the bites with Parmesan and salt and pepper to taste and enjoy.

  • Preheat oven to 350 degrees. Line a baking sheet with a nonstick Silpat, or parchment paper. Scoop one heaping tablespoon of cheese onto the baking mat and pat down slightly. Repeat until there are about 4 cheese mounds on the sheet. Leave at least 2 inches between each one to allow for spreading! Bake for 5-7 minutes until cheese is bubbly and just slightly golden.
  • Add the cubed bread to a food processor and pulse until large crumbs appear. Pour onto a baking sheet and toss with olive oil, and a pinch of salt and pepper. Toast in a 375 degree oven for 3-5 minutes until golden brown. Remove and let cool.
  • Whisk together the garlic, mayo, mustard, vinegar, lemon juice, worchestire, canola, and a pinch of pepper until smooth. Store covered in the fridge until ready to use. This make a lot of dressing! You will not use it all! Save the rest for later in the week!
  • Toss the chopped lettuce with a little bit of dressing. Spoon lettuce into cooled parmesan cups and top with croutons! Serve immediately!

  • Meanwhile, in the same bowl, using a spoon, mash the anchovies to a paste with the garlic and a pinch of salt. Whisk in the mayonnaise, lemon zest and lemon juice, then whisk in the remaining 2 tablespoons of olive oil and season with salt and pepper. Stir in the 1/4 cup of grated cheese.
  • Trim the endives and remove the 60 largest leaves from 6 of the heads. Stack the leaves and trim them to about 4 inches.
