BEEF AND BEAN BURRITOS

1 medium onion, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
12 burrito-size flour tortillas
1/2 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 170 to 180 degrees F.
  • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  • Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

These Mini Burritos are filled with seasoned meat, beans, and cheese. Serve these Mini Burritos as an appetizer and let your guests top their own.

1 lb ground beef
1/2 small onion, diced finely
1 (1 oz) packet Old El Paso™ taco seasoning mix
3 tablespoons water
1 (15 oz) can Old El Paso™ refried beans
1/2 cup salsa
1 1/2 cups shredded cheddar cheese
1 (11.5 oz) package Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
butter for basting
Toppings: sour cream, guacamole, salsa

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet, brown the beef and onion until beef is no longer pink. Drain.
  • Add the taco seasoning and 3 tablespoons of water. Stir and cook for a couple of minutes. Remove from heat and stir in the refried beans, salsa, and cheese. Feel free to add more salsa if you like it spicier.
  • Quarter each flour tortilla using a knife or pizza slicer making 4 wedges from each tortilla. Spoon about 2 tablespoons of meat mixture onto the wide part of each tortilla. Fold the sides in and roll up towards the small end creating a mini burrito. Place burritos on a cookie sheet. If preparing ahead of time cover and refrigerate until serving.
  • Brush burritos with melted butter if desired. Bake for 10-15 minutes or until burritos are warm.
  • Add your favorite toppings such as sour cream, guacamole, and salsa.

These sweet little mini beef and bean burritos are a great make-ahead snack or appetizer - perfect for a finger foods party. You can even make them ahead of time. Prepare them completely through step 4 and then, when you are ready to serve them, stack the burritos in the air fryer basket and air-fry at 350°F for 3 to 6 minutes to re-heat.

1 pound ground beef
½ onion (diced)
1 Jalapeño pepper (seeded and minced)
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon salt
freshly ground black pepper
¼ cup taco sauce
½ cup water
15 ounce canned black beans ( drained and rinsed)
24 8-inch tortilla shells
3 cups grated Cheddar cheese
canola oil
sour cream (guacamole, finely chopped tomatoes, chopped cilantro (for serving))

Steps:

  • Pre-heat a large sauté pan over medium-high heat. Add the ground beef and onion and cook until the meat is brown and the onions are soft. Drain the fat from the pan and add the Jalapeño pepper, chili powder, cumin, salt, pepper, taco sauce, water and black beans. Stir to combine and simmer for 2 minutes. Remove the pan from the heat and let the mixture cool.
  • Place the tortilla shells on a flat surface. Place two tablespoons of beef and bean mixture in the center of each tortilla and top with some Cheddar cheese. Fold the bottom half of the tortillas over the filling. Fold in both sides and roll the tortillas to seal the burritos shut. Repeat with all the tortillas to make 24 mini burritos and brush or spray them lightly with canola oil.
  • Pre-heat the air fryer to 400ºF.
  • Brush the bottom of the air fryer basket with oil. In batches, air-fry the burritos (seam side down) at 400ºF for 5 minutes. Turn the burritos over, brush or spray them with a little more oil and air-fry for an additional 5 minutes.
  • Top each burrito with a dollop of guacamole and sour cream. Garnish with some diced tomatoes and chopped cilantro.

1 lb ground beef
2 tablespoons taco seasoning
6 flour tortillas
16 oz refried bean, 1 can
1 cup shredded mexican cheese blend

Steps:

  • Add ground beef to a large skillet over high heat and sprinkle with taco seasoning. Cook, breaking up the meat, until browned. Drain the fat and set aside to cool.
  • Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked beef and cheese.
  • Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
  • To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.
  • Enjoy!

1 pound lean ground beef
1 onion, chopped
4 large garlic cloves, minced
3 tablespoons ground cumin
3 15-ounce cans black beans or pinto beans, rinsed, drained
1 14 1/2-ounce can beef broth
1 4-ounce can diced green chilies
4 green onions
Warm flour tortillas
Grated Monterey Jack cheese
Chopped fresh cilantro
Purchased salsa

Steps:

  • Heat heavy large skillet over medium-high heat. Add beef and cook until brown, breaking up beef with fork, about 6 minutes. Add chopped onion and garlic and cook until onion is transparent, stirring frequently, about 5 minutes. Stir in cumin and cook 1 minute. Add beans, broth and chilies and cook until beans are creamy and thickened, crushing beans with back of spoon, about 15 minutes. Mix in green onions.
  • Transfer beans to baking dish. Serve with tortillas, cheese, cilantro and salsa, allowing diners to assemble their own burritos at the table.

2 cans (16 ounces each) refried beans
3 cups shredded Mexican cheese blend or cheddar cheese
1-1/3 cups enchilada sauce
1/2 cup water
1/3 cup chopped onion

2 teaspoons dried oregano
1 teaspoon salt
16 flour tortillas (10 inches), warmed
Optional toppings: shredded Mexican cheese blend, sour cream, shredded lettuce, chopped tomatoes and sliced ripe olives

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Return to pan; add the beans, cheese, enchilada sauce, water, onion and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Spoon 1/2 cup filling off center on each tortilla. Fold sides and end over filling and roll up., Freeze option: Wrap individually in paper towels, then foil. Transfer to a resealable plastic bag. May be frozen for up to 2 months. To use, unwrap foil. Place paper towel-wrapped burritos on a microwave-safe plate. Microwave on high until heated through, 3-4 minutes. Serve with toppings of your choice.

These easy, homemade burritos are freezer-friendly and can be reheated in the microwave. Just a little bit of prep work yields a batch of the best grab-and-go burritos you'll ever have!

1 lb lean (at least 80%) ground beef
2/3 cup water
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 cup Old El Paso™ traditional refried beans (from 16-oz can)
1 cup hot cooked rice
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro leaves
8 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package)
1 cup shredded pepper Jack cheese (4 oz)

Steps:

  • In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened.
  • Heat beans as directed on can. In small bowl, add hot rice, lime juice and cilantro. Stir to combine.
  • Heat tortillas as directed on package. Spread 2 tablespoons of the beans in middle of each tortilla, leaving 1-inch border around edges. Sprinkle 2 tablespoons cheese over beans. Spoon 1/4 cup beef mixture and 2 tablespoons rice mixture evenly down center of each. Fold bottom of each tortilla 1 inch over filling. Fold sides in, overlapping to enclose filling. Fold top over sides.
  • To freeze: Wrap each burrito in foil. Label 1-gallon resealable freezer plastic bag. Transfer burritos in single layer to bag; remove as much air as possible, and freeze up to 1 month. To heat: Remove 1 burrito from foil, and wrap in lightly dampened paper towel. Place on microwavable plate; microwave uncovered on High 3 minutes to 4 minutes 30 seconds, turning once, until heated through (at least 165°F).

1 (16 ounce) can refried beans
1 1/2 cups Mexican blend cheese, shredded
6 (6 inch) flour tortillas (fajita size, about 6-inch)

Steps:

  • Preheat oven to 350 degrees.
  • Heat a tablespoon or so of Olive Oil in skillet and add garlic and onion. Saute for a minute or two.
  • Add ground beef and cook until browned; Drain.
  • Stir in seasonings and tomato sauce over medium heat; Add refried beans and mix thoroughly.
  • Generously spoon beef and bean mixture into floured tortillas, sprinkle with cheese, roll up and place seam side down in a lightly greased 8" x 8" square casserole dish.
  • Spread any remaining filling on top and bake in oven for 20-25 minutes, or until heated through.
  • Sprinkle remaining cheese on top a few minutes prior to removing from oven or immediately after removing from oven.
  • Serve with sour cream, guacamole, hot sauce, etc.
