MCDONALD'S HAMBURGER COPYCAT RECIPE

You can make some of your favorite fast food restaurant dishes in the comfort of your own home, including a classic: a McDonald's hamburger.

1 sesame seed bun
1/8 pound beef patty (roughly 1/4 inch in thickness)
Pinch of salt
1 tablespoon finely diced white onion (or rehydrated dried minced onion)
3 dill pickle slices
1 tablespoon ketchup
1 tablespoon yellow mustard

Steps:

  • Bring a skillet or non-stick frying pan to medium heat, then place the bun halves into the dry skillet to toast. Once the buns reach a light golden color and the texture feels toasted, remove from the skillet and set aside.
  • McDonald's burger product photos show fresh white onion pieces, but it's thought that the company uses rehydrated dried minced onion, which provide a more "authentic" McDonald's copycat. To rehydrate dried minced onion, add 1/2 tablespoon of the dried onion to 1 cup of boiling water, then cut the heat and allow the onion to set and absorb the water until there is no longer a hard center. Drain and set aside.
  • Salt one side of your burger patty, then place the patty with the salted side down into your skillet.
  • Salt the upward-facing patty as the other side cooks, and cook for 2 to 3 minutes on each side, then remove from heat.
  • Assemble the hamburger by starting with the bottom bun and the burger patty. On the top half of the bun, add ketchup, then mustard, then onions, and lastly the sliced pickles. Then close the burger up with the top bun.
  • Optionally, to closely mimic the texture of the wrapped burgers, microwave your burger for 10 to 15 seconds to get that "steamed bun" effect.

2 large eggs, beaten
3/4 cup minced onion, divided
2 teaspoons garlic powder
1 teaspoon salt

1 package (17 ounces) dinner rolls
1/2 cup Thousand Island salad dressing, divided
10 slices American cheese
12 sliced dill pickles
1-1/2 cups shredded Iceberg lettuce
1 tablespoon butter, melted
1 tablespoon sesame seeds, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. Bake until a thermometer reads 160°, 15-20 minutes., Meanwhile, without separating rolls, cut rolls in half horizontally. Spread 1/4 cup of dressing evenly over bottom halves of rolls., Blot meat with paper towels to remove excess fat; top meat with cheese and return to oven. Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

1 pound ground chuck
2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
American or pimento cheese
6 buns, split
Mustard

Steps:

  • Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
  • With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
  • Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.

1 small onion, diced
500g good-quality beef mince
1 egg
1 tbsp vegetable oil
4 burger buns
All or any of the following to serve: sliced tomato, beetroot, horseradish sauce, mayonnaise, ketchup, handful iceberg lettuce, rocket, watercress

Steps:

  • Tip 500g beef mince into a bowl with 1 small diced onion and 1 egg, then mix.
  • Divide the mixture into four. Lightly wet your hands. Carefully roll the mixture into balls, each about the size of a tennis ball.
  • Set in the palm of your hand and gently squeeze down to flatten into patties about 3cm thick. Make sure all the burgers are the same thickness so that they will cook evenly.
  • Put on a plate, cover with cling film and leave in the fridge to firm up for at least 30 mins.
  • Heat the barbecue to medium hot (there will be white ash over the red hot coals - about 40 mins after lighting). Lightly brush one side of each burger with vegetable oil.
  • Place the burgers, oil-side down, on the barbecue. Cook for 5 mins until the meat is lightly charred. Don't move them around or they may stick.
  • Oil the other side, then turn over using tongs. Don't press down on the meat, as that will squeeze out the juices.
  • Cook for 5 mins more for medium. If you like your burgers pink in the middle, cook 1 min less each side. For well done, cook 1 min more.
  • Take the burgers off the barbecue. Leave to rest on a plate so that all the juices can settle inside.
  • Slice four burger buns in half. Place, cut-side down, on the barbecue rack and toast for 1 min until they are lightly charred. Place a burger inside each bun, then top with your choice of accompaniment.
