4 eggs
1 cup vegetable oil
1 (11 ounce) can mandarin orange segments
1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.

1 (8 ounce) can mandarin oranges in juice
4 eggs
1 (11 ounce) can crushed pineapple, undrained
1 (3 1/2 ounce) box instant vanilla pudding
8 ounces Cool Whip

Steps:

  • Preheat oven to 325.
  • Beat eggs.
  • Add cake mix, oil and oranges, beat well.
  • Bake 9x13 greased pan 30-35 minutes.
  • Cool.
  • Mix together pineapple and pudding til absorbed.
  • Stir in cool whip and frost cake.
  • Refrigerate.

1/2 cup oil

1 (11 ounce) can mandarin oranges in juice, pureed
1/2 cup raisins or 1/2 cup craisins
3 tablespoons lime juice
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
3 cups powdered sugar, sifted
2 tablespoons pureed mandarin oranges

Steps:

  • Using a food processor or blender, puree mandarin oranges ( with juice) and lime juice and measure 1 cup pureed mandarin orange for the cake.
  • Place cake mix, oil, eggs, 1 cup pureed mandarin orange in a large mixing bowl. Beat using an electric mixer and start with low speed and increase to medium speed to blend well.Fold in raisins.
  • Pour into 2 greased and floured 9 inch layer pans and bake at 350 degrees for 30 minutes. Cool.
  • In a large mixing bowl, using an electric mixer, blend together cream cheese and butter. Add powdered sugar, a little at a time, blending well on low speed. Then slowly mix in pureed mandarin orange and blend until smooth.Frost cake.
