Every Christmas I looked forward to eating handfuls of my Great Aunt Catherine's sugar cookies (oh, if my parents only knew!) These truly are the most fantastic sugar cookies I have ever eaten.

1 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 egg
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup nuts, FINELY chopped

Steps:

  • Cream butter, sugars and vanilla together.
  • Add egg and mix well.
  • Add flour, baking soda and salt, mix well.
  • Add nuts and stir.
  • Form balls the size of walnuts.
  • Then roll in sugar and press flat with the bottom of a glass or the tines of a fork -dipped in sugar.
  • Bake at 350 degrees for 10 min or until edges are a light brown.

Sugar cookie with a delightful blend of flavors and crispy edges. The first time I tasted this cookie I just said "wow". It's my favorite cookie jar cookie and I highly recommended it. If you bake and ship to loved ones, this cookie travels very well even in summer heat. I use bubble wrap between layers and they survive the trip to Iraq.

4 tablespoons butter, soft
3/4 cup Crisco, butter flavored
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 1/2 teaspoons almond flavoring
1/2 teaspoon salt
2 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda

Steps:

  • Oven 350° for 12-15 minutes until edges are slightly brown.
  • Cream fats and sugars until fluffy.
  • Add egg and beat until absorbed.
  • Add flavorings to creamed mixture.
  • Sift dry ingredients together into separate bowl and blend together.
  • Add dry to creamed mixture and mix just until flour is incorporated; do not over mix.
  • Chill dough.
  • Roll into balls and flatten on cookie sheet with glass bottom dipped in sugar.
  • My addition of some butter allows the fats and sugars to crème to a fluffy consistency superior to Crisco alone. Butter has a small percentage of water that helps build volume and break down the sugars. The use of all butter will result in a softer cookie if this is your preference. This important 1st stage of preparation will make good cookies, blue ribbon winners.

A crispy cookie that does not need frosting. The dough is easy to work and does not need to be refrigerated before you roll the cookies out.

2 cups solid shortening
1 cup sugar
1 cup brown sugar
2 teaspoons vanilla
2 eggs
1 teaspoon baking soda
1 teaspoon salt
4 cups flour
1/2 cup sugar (for top of cookies)

Steps:

  • Cream together the first four ingredients until smooth.
  • Add baking soda and salt.
  • Add flour one cup at a time and mix until well blended.
  • Using a soup spoon, scoop out some dough and place it in your palm. Using both hands, roll into a ball and place on a cookie sheet, leaving room for it to spread.
  • Once you have filled the sheet with balls, place 1/2 cup sugar into a little container, and dip the bottom of a drinking glass into it and use it to flatten dough balls. Flatten each ball until it is about 1/3 inch thick. Dip the glass into the sugar again after you flatten each ball.
  • Bake at 350 degrees for 10 minutes.

1/2 cup Crisco
1/2 cup butter, softened
1/2 teaspoon vanilla
1 large egg
1/4 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar

Steps:

  • Preheat oven to 350*.in large mixing bowl, combine 1 cup of the sugar, crisco and butter -- beat until light and fluffy.add vanilla, almond extract and egg.blend well -- add flour, baking soda and cream of tartar, mix well.shape dough into 1" balls.roll balls in remaining 1/3 cup sugar -- place 2" apart on ngreased cookie sheet with bottom of glass dipped in sugar.
  • flatten balls to 1/8" thickness --
  • bake at 350* for 7-12 minuts or until edges are light golden brown.
  • cool 1 minute on rack on cookie sheet --
  • remove from sheets to wire racks to cool completely.

2 cups crisp rice cereal

  • Mix ingredients in the order given.

1/2 cup packed brown sugar
1 egg

Steps:

  • Preheat oven to 350F.
  • Place the butter, sugar, and brown sugar in a large bowl and mix with an electric mixer on low speed for 1 mintue or until creamy. Add the egg and vanilla and mix on medium speed for 2 minutes or until fluffy. Add the baking soda and flour and mix on low speed for 1 minute or until completely combined.
  • Drop teaspoonfuls of the dough onto ungreased baking sheets at least 2 inches apart. Pour a little sugar in a small bowl. Press the bottom of a glass in the dough to get it sticky and then dip it into the sugar. Press the cookies about 1/4 inch thick with the sugared glass, dipping the glass in the sugar after each cookie. Bake for 10 to 12 minutes or until lightly golden brown. Remove the cookies from the pan and cool on parchment or waxed paper.
