BOBA (COCONUT MILK BLACK TEA WITH TAPIOCA PEARLS)
Boba tea, or bubble tea, is a popular drink that originated from Taiwan. I made this coconut variation because I had coconut cream on hand and wanted something different from the regular black milk tea variation. This coconut version tastes just like the one you'll find in a bubble tea cafe.

Steps:
- Bring water to a boil in a large stockpot. Pour in tapioca and simmer for 25 minutes. Stir occasionally to prevent sticking. Remove from heat and let balls sit in water for 25 minutes.
- Return stockpot to the heat; simmer and stir for 25 minutes more. Remove from heat and let rest again until centers of the balls are no longer powder, another 25 minutes. Drain.
- Combine brown sugar and white sugar in a large bowl. Pour tapioca balls into the sugar mixture. Cover with a damp cloth and let rest for 15 minutes while preparing the tea.
- Process tea, coconut cream, ice, milk, and sugar together in a blender until combined.
- Scoop 1/4 cup of the tapioca into each tall glass and fill with tea. Enjoy with large straws to suck up the tapioca, or use spoons.

MILK TEA TAPIOCA
Flavored tapioca pudding like you'd find in a Vietnamese fast food restaurant. To alter the consistency of the pudding, you can add or reduce the amount of tapioca.

Steps:
- Rinse tapioca, cover with water, and soak for 10 minutes.
- Boil 2 1/2 cups water and steep 4 tea bags.
- After 10 minutes, drain tapioca and let rest for 15 minutes.
- Just before the tapioca has finished resting, remove tea bags and pour tea, 1/2 cup sugar, and 1 cup Half & Half into a pot and heat until boiling.
- Reduce to a simmer and add pearls.
- Stir tapioca to heat evenly and prevent sticking to the bottom of the pan. The pudding will be done when the pearls are almost all translucent, with the slightest bit of white in a handful of balls, about 5-10 minutes.
- Remove from heat and let cool for 10 minutes.
- Add remaining 1 cup of Half & Half.
- Chill until ready to serve.

For my recipe, I decided to use Bantha Milk AKA 'Blue Milk', as my base. This drink is a sweet butterfly pea flower and lavender coconut milk (inspired by the Star Wars blue milk) and the combination of flavours with the pearls is delicious.
- To make the tapioca peals with brown sugar syrup, warm up the brown sugar over medium heat for a couple of minutes. The sugar only needs to be warmed up, not completely melted.

- Bring small pot of water to boil and add about 1/4 cup sugar. Add in tapioca and let them float to surface.
- Bring water to a low boil and place lid over pot, adjusting lid to allow steam to release. Boil for 5 minutes, then remove boba from water and place into a medium sized bowl with honey (about 1/4 to 1/2 cup so that all the boba touches the honey). Make sure the bowl is large enough so the boba are not all piled on top of each other because they will stick to each other once they cool.
- Let boba sit in honey until it is ready to be eaten, then put into your milk tea right before. Boba lose their consistency soon after sitting in milk tea so don't put in too soon. The boba stay chewy for a few hours if you just let them sit in the honey. Don't remove from the honey as they will end up sticking together. Don't refrigerate as they will completely lose their consistency and become brittle.
