1 pound lean ground beef
1 medium onion, chopped (1/2 cup)
1 package (1 ounce) Old El Paso™ taco seasoning mix
1 can (4.5 ounces) Old El Paso™ chopped green chiles, drained
1 cup milk
2 eggs
1/2 cup Original Bisquick™ mix
3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces)
Old El Paso™ salsa (any variety)
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry). Spoon into pie plate; top with chilies.
  • Stir milk, eggs and Bisquick mix until blended. Pour into pie plate.
  • Bake about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool 5 minutes. Serve with salsa and sour cream.

1 pound lean (at least 80%) ground beef or chopped boneless skinless chicken breasts
1 package taco seasoning
4 (8"-10") flour tortillas
1 can (15 ounce) pinto beans, rinsed
1 can (15 ounce) refried beans
1 jar (16 ounce) Old El Paso™ Thick 'n Chunky salsa
2 cup Monterey Jack cheese, shredded (4 ounces)

Steps:

  • Heat oven to 400°F. In 10-inch nonstick skillet, cook beef or chicken, stirring occasionally, until thoroughly cooked; drain. Stir in seasoning mix and cook as directed. Heat to boiling over high heat, stirring occasionally. Reduce heat to medium-high. Simmer uncovered 4 minutes, stirring occasionally. Stir in kidney beans and refried beans; heat until hot. In un-greased 2-quart casserole, place 1 tortilla in pan, layer with 1/4 of the salsa, beef mixture and shredded cheese. Repeat layers, using up ingredients and ending with cheese on top. Cover; bake 17 to 22 minutes or until cheese is melted. Let stand 5 minutes.

4 ounces shelled walnuts, minced
12 ounces Nice biscuits or any light, crisp sugared biscuit cookie, ground
8 ounces unsalted butter, softened and more to grease pan
1 pound split peas
14 egg whites
1/8 cup cold water
1/2 teaspoon salt
1 1/4 cups sugar
4 drops vanilla extract
1/2 gallon round container vanilla ice cream
1/2 gallon round container strawberry ice cream
16 ounces chocolate sauce

Steps:

  • Combine walnuts and biscuits. Add butter and mash thoroughly.
  • Preheat oven to 325 degrees F. Butter a 10-inch diameter springform pan and press biscuit crust into base and 2-inches up side. Cover this crust with waxed paper, cut to fit bottom exactly. Fill pan with split peas, up to height of sides and bake "blind" for 1 hour. Let cool while still filled.
  • When crust is cooled, removed pea weights and paper. Meanwhile, whip egg whites with cold water and salt until peaked. Fold in sugar a little at a time. Add vanilla and keep cool.
  • Unmold ice cream from containers and cut horizontally through middle of each to yield 4 discs total. Place disks in pie crust, alternating strawberry and vanilla flavors. Top with meringue, letting it fall all around the ice cream. Set in freezer for 2 hours.
  • Preheat oven to 450 degrees F. Remove pie from freezer and place in oven to brown meringue tips. You may also use a blowtorch instead. Serve with chocolate sauce.

3 tablespoons vegetable oil
8 corn tortillas, halved
1 small onion, chopped
2 cloves garlic, minced
Pinch of cayenne pepper
3/4 pound ground pork
Kosher salt
1 15-ounce can crushed tomatoes
2 4.25-ounce cans chopped green chiles
1 cup frozen corn
1/2 cup chopped fresh cilantro
1 cup shredded mozzarella (preferably reduced sodium)

Steps:

  • Preheat the oven to 400 degrees F. Heat the vegetable oil in a large skillet over medium-high heat. Add the tortillas and cook, flipping a few times, until golden, about 3 minutes. Remove with tongs and transfer to a paper towel-lined plate to drain. Add the onion to the skillet and cook, stirring, until soft, about 3 minutes. Add the garlic and cayenne and cook 30 seconds. Add the pork and 1/4 teaspoon salt and cook, breaking up the meat, until browned, about 4 minutes. Stir in the tomatoes, chiles and corn. Bring to a simmer and cook until slightly thickened, about 3 minutes. Season with salt. Remove from the heat and stir in the cilantro. Arrange half of the tortillas in the bottom of a 9-to-10-inch pie plate. Top with half of the meat mixture, then half of the cheese. Repeat with the remaining tortillas, meat and cheese. Cover loosely with foil and bake until the cheese melts, about 10 minutes.

1 1/2 pounds lean ground beef
1 envelope taco seasoning (1 ounce)
10 ounces Rotel diced tomatoes & green chiles (drained)
1 cup shredded cheddar cheese
1/2 cup Bisquick mix
1 cup milk
3 large eggs

Steps:

  • Preheat the oven to 400º Fahrenheit. Spray a 9" round deep dish pie plate (or cake pan) with cooking spray.
  • Using a skillet over medium heat, brown the ground beef until the beef is no longer pink. Drain off any fat.
  • Add in the taco seasoning and drained Rotel. Mix well and heat through.
  • Spread the beef mixture in the bottom of the prepared pie plate. Sprinkle the shredded cheese over the top.
  • In a small bowl, whisk together the Bisquick mix, milk and eggs.
  • Pour evenly over the beef and cheese.
  • Bake for 25-30 minutes or until the middle of the pie is set and the top is golden brown. A knife inserted in the center should come out clean.
  • Serve immediately.
  • Store leftovers in the refrigerator for up to 3 days.

1 (8 2/3 ounce) box Old El Paso Soft Taco Bake Dinner Kit
1 cup water
1 (15 ounce) can kidney beans, drained, rinsed
1 (16 ounce) jar chunky salsa
1 cup shredded monterey jack cheese (4 oz)

Steps:

  • 1. Heat oven to 400°F In 10-inch nonstick skillet, cook beef or chicken, stirring occasionally, until thoroughly cooked; drain. Stir in seasoning mix (from dinner kit), water and half of the cheese sauce (from dinner kit). Heat to boiling over high heat, stirring occasionally. Reduce heat to medium-high.
