4 ounces shelled walnuts, minced
12 ounces Nice biscuits or any light, crisp sugared biscuit cookie, ground
8 ounces unsalted butter, softened and more to grease pan
1 pound split peas
14 egg whites
1/8 cup cold water
1/2 teaspoon salt
1 1/4 cups sugar
4 drops vanilla extract
1/2 gallon round container vanilla ice cream
1/2 gallon round container strawberry ice cream
16 ounces chocolate sauce

Steps:

  • Combine walnuts and biscuits. Add butter and mash thoroughly.
  • Preheat oven to 325 degrees F. Butter a 10-inch diameter springform pan and press biscuit crust into base and 2-inches up side. Cover this crust with waxed paper, cut to fit bottom exactly. Fill pan with split peas, up to height of sides and bake "blind" for 1 hour. Let cool while still filled.
  • When crust is cooled, removed pea weights and paper. Meanwhile, whip egg whites with cold water and salt until peaked. Fold in sugar a little at a time. Add vanilla and keep cool.
  • Unmold ice cream from containers and cut horizontally through middle of each to yield 4 discs total. Place disks in pie crust, alternating strawberry and vanilla flavors. Top with meringue, letting it fall all around the ice cream. Set in freezer for 2 hours.
  • Preheat oven to 450 degrees F. Remove pie from freezer and place in oven to brown meringue tips. You may also use a blowtorch instead. Serve with chocolate sauce.

2 quarts (4 pints/1/2 gallon) coffee ice cream, softened
2 cups chopped pecans
2 quarts (4 pints/1/2 gallon) chocolate ice cream, softened
2 1/2 cups chocolate-coated toffee pieces
50 chocolate sandwich cookies
1 1/2 sticks (12 tablespoons) butter, melted
2 quarts (4 pints/1/2 gallon) vanilla ice cream, softened
2 1/2 cups chocolate shell ice cream sauce, such as Magic Shell
Store-bought caramel sauce, warmed, for serving

Steps:

  • Line an 8-quart bowl with overhanging plastic wrap.
  • Tip the coffee ice cream into the bowl and smooth the surface. Sprinkle over the chopped pecans and freeze until the ice cream is firm, at least 1 hour.
  • Tip the chocolate ice cream into the bowl and smooth the surface. Sprinkle over the chocolate-coated toffee pieces and freeze until firm, at least 1 hour.
  • Meanwhile, make the crust: Put the sandwich cookies in a food processor and pulse until fine crumbs. Pour in the melted butter and pulse to combine.
  • Tip the vanilla ice cream into the bowl and smooth the surface. Tip the crust on top of the vanilla ice cream, spread it evenly and press down firmly. Freeze again until completely set, 4 hours and up to overnight.
  • Turn out the pie onto a board or serving platter lined with 4 squares of parchment arranged so that the paper overhangs the edges of the platter. Peel off the plastic wrap and pour over the chocolate shell ice cream sauce to coat the entire pie. Carefully slide out the sheets of parchment and discard.
  • To serve, cut big slices of pie, drizzle over some warm caramel sauce and stick a steak knife into the center standing up.

4 Granny Smith apples, peeled, cored and quartered
4 McIntosh apples, peeled, cored and quartered
1 tablespoon lemon juice
2 tablespoons unsalted butter
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
5 tablespoons all-purpose flour, plus more for dusting
Perfect Pie Dough, recipe follows
One 7-ounce tube marzipan almond paste
1 egg, beaten, for egg wash
3 cups flour, plus more for dusting
1 teaspoon salt
1 1/2 cups (3 sticks) unsalted butter, cut into small pieces, chilled or frozen

Steps:

  • Preheat the oven to 400 degrees F. Cut the quartered apples into 1/2-inch slices and mix with the lemon juice in a large bowl. Melt the butter in a large skillet over medium-high heat. Add the apples, toss to coat and cook, 5 to 7 minutes. Sprinkle the sugars, cinnamon, salt, nutmeg and allspice over the apples and toss to coat evenly. Sprinkle the flour over the mixture to thicken, and then let cool completely. Roll out one of the Perfect Pie Dough discs on a floured surface. Fit into a 9-inch pie plate, giving yourself a 1/2-inch overhang. Roll the marzipan between 2 pieces of parchment paper into a 9-by-1/8-inch-thick circle. Place the marzipan over the bottom crust. Dock the bottom crust, using a fork, and fill the pie with the apple mixture. Roll out the second pie dough disc to fit on top of the apples. Place on top of the pie and trim the edges to about 1/2-inch overhang. Pinch the top crust to the bottom, fluting the edge or pressing to seal with the tines of a fork. Vent the pie by cutting 4 slits in the top, and brush with the egg wash. Transfer the pie to a sheet tray and bake until the crust is golden brown and the filling is bubbly, 45 to 50 minutes. Let cool 20 minutes before serving.
  • Mix the flour and salt together in a food processer. Add the butter into the flour mixture and pulse until you have large pea-size chunks scattered throughout. Add 8 to 10 tablespoons ice water slowly, while stirring with a fork, just until combined. Transfer to a floured surface, divide in half, shape into 2 discs and wrap separately in plastic wrap. Refrigerate at least 30 minutes.

1 package (8 oz) cream cheese, softened
1/2 cup Jif® Creamy Peanut Butter
1 cup powdered sugar
1 container (8 oz) frozen whipped topping, thawed
2 tablespoons Fisher® Party Peanuts, chopped
2 tablespoons Hershey's® mini chips semi-sweet chocolate

Steps:

  • Heat oven to 350 degrees F. Unroll pie crust; place in ungreased 9-inch glass pie plate as directed on box for One-Crust Filled Pie; flute edge.
  • In medium bowl, stir brownie mix, peanut butter chips, oil, water and egg 50 strokes with spoon. Pour batter into crust-lined pie plate.
  • Bake 30 to 40 minutes, covering edge of crust with strips of foil after 15 to 20 minutes, until crust is golden brown and center of brownie is set. Cool slightly, about 20 minutes. Refrigerate 1 hour or until completely cooled.
  • In medium bowl, beat cream cheese, peanut butter and powdered sugar with electric mixer on medium speed until smooth. Fold in whipped topping. Spread mixture over brownie. Sprinkle with peanuts and chocolate chips. Refrigerate 30 minutes before serving. Store covered in refrigerator.

2 tablespoons cornstarch
3 large eggs plus 2 egg yolks
3/4 cup dark brown sugar
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 stick plus 5 tablespoons unsalted butter, softened
1/3 cup plus 1/4 cup maple syrup
1/3 cup plus 3 tablespoons light corn syrup
1 3/4 teaspoons kosher salt
1 cup heavy cream
4 cups pecans
1 frozen unbaked 10-inch deep-dish pie shell

Steps:

  • Place a sheet pan in the oven and preheat to 375 degrees F.
  • Whisk together the cornstarch with 2 tablespoons cold water in a small bowl to form a slurry. In a food processor, blend together the eggs, yolks, brown sugar, vinegar, vanilla, 1 stick butter, 1/3 cup maple syrup, 1/3 cup corn syrup, 1 teaspoon salt, 1/2 cup heavy cream and the cornstarch slurry. Once smooth, add 1 1/2 cups pecans and pulse in 5-second increments until they are chopped into small pieces.
  • Pour pie filling into shell and place on preheated sheet pan. Bake until the very center of the pie is barely set, 40 to 45 minutes.
  • Roughly chop the remaining 2 1/2 cups pecans. Heat a large skillet over medium heat and melt the remaining 5 tablespoons butter, then add 1/4 cup maple syrup and 3 tablespoons corn syrup. Cook, stirring with a wooden spoon, until bubbly, then stir in the remaining 1/2 cup cream and 3/4 teaspoon salt. Reduce heat to low, stir in pecans, and continue cooking, stirring, for about 2 minutes. Pile pecans onto pie and return to oven until you can smell the pecans toasting, about 5 minutes. Allow to cool to room temperature before serving.

What a great tasting pie especially in the summer at the height of berry season, but just as good with frozen berries. Instead of using fresh berries, substitute 1 package (600g) frozen mixed berries, thawed. Drain berries well, reserving1/4 cup juice to replace water. Measure out 1 cup berries to replace blueberries.

  • Prepare and bake pie shell.
  • FILLING:.
  • In medium saucepan, combine cornstarch and sugar; stir in water and 1 cup blueberries. Bring to a boil, stirring constantly. Simmer 2 minutes or until very thick and clear, stirring constantly. Remove from heat. Stir in lemon rind and juice. Cool 5 minutes.
  • Stir in remaining berries. Spoon into pie shell. Refrigerate until set, about 3 hours. At serving time, sprinkle with icing sugar.

2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup vegetable shortening
5 tablespoons butter, chilled
4 -5 tablespoons cold water
12 granny smith apples, peeled, cored and thinly sliced
1 cup sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup brown sugar
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup pecans, chopped
confectioners' sugar

Steps:

  • Prepare pastry: In large bowl, combine flour and salt. Cut vegetable shortening and butter into flour mixture until coarsely blended. Slowly add water, mixing, until dough binds. Form dough into two balls, one slightly larger than the other; wrap and refrigerate.
  • Make apple filling: Cook apple slices in a large pot over medium-low heat, stirring occasionally, until barely tender-about 10 minutes. Watch so they don't burn! Drain apple slices completely. Transfer to large bowl and add sugar, cinnamon, nutmeg, and vanilla; stir to blend. Set aside.
  • Prepare Pecan Crumb Topping: In medium-sized bowl, combine flour, brown sugar and salt. Cut butter into flour mixture until mixture resembles cornmeal. Add pecans and mix.
  • Preheat oven to 400 degrees. Roll out out both pieces of dough. Place the smaller round in bottom of dish. Carefully fill pie dish with apple filling. (It will be quite full!) Roll our larger piece of dough to a 12-inch round and cover top of pie. Trim and pinch together edges of bottom and top crusts.
  • Brush top crust lightly with water. Top with crumb topping and carefully press into crust. Make several slits in top pie crust.
  • Put a tray beneath the pie to catch any overflow during baking. Bake 45-50 minutes or until crust is golden brown. Cool at least 25 minutes, sift confectioners' sugar over top, and serve.

We could find no precedent for this particular recipe and had to rely on Barbara to give us a few clues as to its origin: "As a young homemaker on a tight budget, I became very inventive when it came to stretching a pound of meat to feed my family. This recipe was a spin-off of the Michigan Pasty, a ground beef, potato, and onion combination wrapped in pie crust. My first version did not include a crust. I cooked the ingredients in an electric fry pan and served it from the pan. Some time later, I decided to change its presentation and piled the browned and partially cooked ingredients into a pie plate, added a top crust, and baked it. My creation became Mile High Bologna Pie. When my daughter-in-law asked me how to make this dish, I knew my son, who is fussy about his food, really liked it."   • Adjust an oven rack to the middle position.
  • Preheat oven to 425 degrees Fahrenheit.
  • Heat 1 Tablespoon oil in a large nonstick skillet until shimmering.
  • Working in two batches, cook the bologna in a large skillet over medium heat until lightly browned on both sides, about 6 minutes.
  • Transfer to a large plate.
  • Heat the remaining 1 Tablespoon oil in the now-empty skillet until shimmering.
  • Cook the onion until softened, about 3 minutes.
  • Add the potatoes and carrots and cook, tossing occasionally, until just beginning to brown, about 8 minutes.
  • Add the garlic and cook until fragrant, about 30 seconds.
  • Stir in the water, cover, and cook until the potatoes and carrots are just tender, about 15 minutes.

5-Ingredient Fix Contest Entry. Have you ever made cabbage pockets? Some people call them Kraut Burgers. My mom calls them German Hamburgers. I am referring to the little buns of dough filled with hamburger and cabbage. I used to make the dough from scratch - let it rise, punch it, and all that. Too much work for this girl! I have an easier way... a casserole that tastes like cabbage pockets. This is much easier to make because you don't have to roll out the dough to make individual burgers.

1 (16 ounce) bag coleslaw mix (cabbage and carrots)

2 (8 ounce) cans refrigerated crescent dinner rolls

Steps:

  • Pre-heat oven to 350°F.
  • In stockpot, brown ground beef over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Add coleslaw mix. Cover pan and cook, stirring often, until cabbage softens, about 10 minutes. Mix in potatoes. Stir in soup. Cover and reduce heat to low to keep warm.
  • Unroll 1 can of dough. Press in 13x9-inch glass baking dish to form bottom crust. Spread cabbage mixture evenly over crust. Unroll second can of dough on wax paper. Press seams together to make one sheet. Place over top to form top crust. Press and tuck edges to seal.
  • Bake 25 minutes or until golden brown. Let stand 5 minutes. Cut into 8 squares.

15 ounces folded refrigerated pie crusts
1 1/2 cups sugar, divided
5 tablespoons cornstarch
1/4 teaspoon salt
1 cup water
1/2 cup milk
1 tablespoon butter
1/2 cup fresh lemon juice
1/4 teaspoon cream of tartar

Steps:

  • Unfold the pie crust and place in a 9-inch pie plate, pressing the crust firmly into the plate, then flute if desired. Bake the pie shell according to the package directions; let cool.
  • Meanwhile, in a medium saucepan, combine 1 cup sugar, the cornstarch, and salt; mix well. Gradually whisk in the water and milk, stirring until the cornstarch is dissolved. Cook over medium heat, whisking until the mixture comes to a boil.
  • In a medium bowl, lightly beat the egg yolks. Gradually whisk in about 1/2 cup of the milk mixture, then whisk the yolk mixture back into the saucepan. Simmer over low heat for 2 to 3 minutes,whisking occasionally.

I spent this past Thanksgiving in the mile-high city of Denver with my daughter and her boyfriend, just the three of us. Her boyfriend is from the South and he requested two items, Spinach Madeline and Pecan Pie. This is a simple and delicious pecan pie - I should have made two!

1 unbaked 9-inch pie crust
3 eggs
1 cup sugar
2/3 cup Dark Karo syrup
2 tablespoons butter, melted
1 teaspoon vanilla
1 tablespoon brandy
1/4 teaspoon salt
1 3/4 cups pecan pieces

Steps:

  • Preheat oven to 400°. Lightly beat eggs and add all remaining ingredients except pecans, stirring to blend well.
  • Add pecan pieces to the mixture and toss to coat thoroughly. Pour into unbaked pie shell and cover piecrust rim with shield or foil and bake at 400° for 10 minutes .

2 1/2 cups ginger snaps, Crushed
1/3 cup butter, Melted
1 (6 ounce) package unflavored gelatin
2 tablespoons brandy (Can substitute water or alcohol free brandy flavouring)
3/4 cup light brown sugar, firmly packed
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
14 ounces canned pumpkin
1/2 cup milk
3 large eggs, Separated
1 teaspoon orange zest, fine
1/3 cup granulated sugar
1/2 cup sour cream
6 egg whites
1/2 teaspoon cream of tartar
1/3 cup granulated sugar
1 tablespoon cornstarch
1/4 cup gingersnap cookie, coarse ground (optional)

Steps:

  • CRUST:.
  • Preheat oven to 350°F.
  • Combine ginger snap crumbs and melted butter in a bowl. Stir to Blend. Press into the bottom and up the sides of a deep dish 9-in (23cm) pie plate. Bake in the centre of the oven for 15 minutes, or until crisp and golden around the sides. Move to a rack to cool.
  • FILLING:.
  • Sprinkle gelatin over brandy in a small bowl. Let stand until softened.
  • Scrape brandy mixture into a saucepan along with sugar, spices, pumpkin, milk, egg YOLKS, and orange zest. Cook over medium heat, stirring constantly, until mixture "mounds when dropped from a spoon".
  • Transfer filling to a metal bowl and set in a larger bowl of ice and cold water. Cool, stirring Constantly.
  • Beat egg whites and sugar until stiff peaks form. Fold into pumpkin mixture with sour cream until no streaks remain.
  • Spoon filling into cooled crust and chill until set, preferably overnight. (You can cook from this point and skip the meringue if you don't like it. Bake at 350F for 10 minutes or until the filling looks cooked. Refrigerate until served).
  • MERINGUE:.
  • Preheat oven to 350°F.
  • Whip egg whites and cream of tartar with an electric mixer at medium speed until foamy.
