BEEF SHAWARMA RECIPE

Beef Shawarma Recipe image

Easy beef shawarma recipe with homemade shawarma seasoning! Serve it up in pita pockets with my tomato and cucumber salad and a good drizzle of tahini sauce.

Provided by Suzy Karadsheh

Categories     Main Course

Number Of Ingredients 18

1 tsp ground cumin
1 tsp ground coriander
1 tsp Sweet Spanish paprika
3/4 tsp ground turmeric
1/2 tsp ground cloves
1/2 tsp cayenne pepper
1/2 tsp ground cinnamon
1/4 cup extra virgin olive oil
1/4 cup white wine vinegar
1 lemon
1 1/2 lb beef flap steak or flank steak, (cut very thinly against the grain into bite size pieces )
Kosher salt and black pepper
4 garlic cloves, (minced )
1 medium yellow onion, (halved and sliced )
4 Pita bread loaves, (halved (8 pita pockets) )
3-Ingredient Mediterranean salad, ((or sliced tomatoes and cucumbers, and chopped parsley) )
1 Homemade Tahini Sauce,
Pickled Cucumbers, (optional. )

Steps:

  • In the bottom of large mixing bowl, add the shawarma spices. Add the olive oil, vinegar, and zest and juice of one lemon. Using a spoon, mix to combine.
  • Using a chef's knife, cut the flap steak against the grain into thin bite-size slices (no more than ¼-inch in thickness).
  • Add the sliced meat to the bowl. Season with kosher salt and black pepper. Add the garlic and onions. Using a pair of tongs, toss very well to make sure the meat is well-coated with the marinade. Set aside to marinate at room temperature for a few minutes (or, if you have the time, cover and refrigerate for a couple of hours).
  • Heat a large cast iron grill pan or skillet over high heat. Using a pair of tongs, add the meat pieces, spreading them as much as you are able. Cook over high heat for anywhere between 8 and 15 minutes, until the meat is fully cooked. (If you like less liquid in your pan and extra char on the meat, you'll likely cook it for about 15 minutes. And if your pan is not large enough, cook the meat in batches).
  • While the meat is cooking, prepare the pita pockets and fixings. Make my 3-ingredient Mediterranean salad with tomatoes, cucumbers, and parsley. Make the tahini sauce. And prepare your pickled cucumbers, if using.
  • Assemble the shawarma sandwiches. Open up your pita pockets and load them up with the beef shawarma, salad, and finish with a generous drizzle of tahini sauce. Serve immediately!

MOROCCAN OLIVES WITH HARISSA RECIPE

Moroccan Olives with Harissa Recipe image

If you think harissa is a condiment only to be used on the side, think again! It makes a terrific marinade for olives.

Provided by Christine Benlafquih

Categories     Condiment     Side Dish

Time 9h50m

Yield 6

Number Of Ingredients 14

12 oz. or 1 1/2 cups/250 g. whole olives with pits (all black or all green; or a mix of green, tan, red and black)
2 to 3 tablespoons parsley (or cilantro, chopped fresh)
1/4 to 1/2 of a preserved lemon
2 teaspoons olive oil (more as needed)
Harissa, to taste (recipe follows)
For the Harissa:
8 to 10 dried red chili peppers (about 75 g)
3 cloves garlic
1/2 teaspoon salt, or to taste
1/2 teaspoon cumin seeds
1/2 teaspoon coriander seeds
1/2 teaspoon caraway seeds
2 to 3 teaspoons lemon juice, or to taste
Olive oil, to taste or as needed

Steps:

  • Soak the olives in a bowl of water for a few hours or overnight; drain. (Or, if the olives are hard, soften them by soaking in boiling water for 15 minutes.) For better infusion of the marinade, make one or two small incisions in each olive (or gently crush them to crack the flesh of the olive).
  • While the olives are soaking, make the harissa if it's not already prepared: Remove the seeds from the chile peppers then soak in hot water for a half hour or until tender enough to mash. Drain. Lightly toast the seeds in a skillet (just until fragrant) and grind them with a mortar and pestle. Add the softened chile peppers, garlic, salt, lemon juice and olive oil to the mortar and grind to a paste. Thin as desired with additional lemon juice and olive oil. Store in a covered container in the refrigerator until needed.
  • Seed the preserved lemon and cut it into thin strips.
  • Combine the preserved lemon with the drained olives, parsley. lemon juice and as much harissa as desired.
  • If you like, a little additional olive oil or garlic can be mixed in to the olives.
  • Cover and refrigerate for 6 to 8 hours (overnight is best) before serving. The olives will keep in the fridge for several weeks. Leftover harissa may be stored in the fridge as well for use as a condiment with other foods.

WARM MEDITERRANEAN OLIVES

Warm Mediterranean Olives image

Olives are little fat bombs and when they're heated they become that much more delicious. The balance here of the sweet brown sugar and the sharp red wine vinegar makes these olives so addictive, you may never go back to eating them cold.

MARINATED OLIVES

"These olives can be eaten straight out of the jar, but I recommend warming them in the oven for a few minutes. The flavors get even better!" says Stephanie.

Categories     appetizer

Time 55m

Yield 8 cups

Number Of Ingredients 13

2 heads garlic, cloves separated and peeled
1 tablespoon extra-virgin olive oil
Kosher salt
Zest (in wide strips) and juice of 2 oranges
2 tablespoons sugar
1 tablespoon sherry vinegar
2 shallots, thinly sliced (about 1 cup)
1 Anaheim chile pepper, halved, seeded and thinly sliced

2 pounds assorted olives (such as Cerignola, Manzanilla and Arbequin

Steps:

  • Preheat the oven to 400 degrees F. Put the garlic cloves on a sheet of aluminum foil, drizzle with the olive oil and season with 1/4 teaspoon salt. Fold the foil over to create a sealed pouch and roast the garlic until the cloves are lightly browned and very tender, 30 to 45 minutes.

GO-TO MARINATED OLIVES

Go-To Marinated Olives image

These olives get better with age, but the world will never know how good they can get since they don't last very long. I prepare all my olives this way. I mix them all up in a large jar and just pick out the ones I want for a particular recipe or just use a medley. They are stored in the refrigerator and the olive oil may harden; this does not affect flavor or quality. If you prefer your olives less oily, run under running water to rinse.

Provided by threeovens

Categories     < 15 Mins

Time 15m

Yield 1 jar

Number Of Ingredients 9

32 ounces olives (assorted Kalamata, Manzilla, Pimento stuffed, etc)
1/2 cup olive oil
1/2 cup balsamic vinegar
2 garlic cloves, minced
1 tablespoon red pepper, cut into thin strips
1 tablespoon orange peel, cut into thin strips
1 tablespoon lemon peel, cut into thin strips
1 sprig fresh oregano or 1 tablespoon dried oregano
1/4 teaspoon dried red pepper flakes (optional)

Steps:

  • Drain brining liquid and rinse assorted olives of your choice. Place in large jar. Combine olive oil and balsamic vinegar in a separate bowl or jar. Add remaining ingredients to olives. Pour in enough oil/vinegar mixture to just cover. Place cover on jar and shake to mix ingredients.
  • Store in refrigerator. Olives can be used right away, but the flavors will be optimal after about 2 weeks or so. These are terrific eaten as is or add to salads and other dishes. Disregard nutritional info since you won't be eating the liquid, I hope.
