1 (9 inch) pie shell, baked
¼ cup butter
1 ¼ cups white sugar
2 tablespoons unsweetened cocoa powder
3 tablespoons all-purpose flour
2 egg yolks
1 cup milk
½ teaspoon vanilla extract
2 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a cast iron skillet over medium low heat, melt the butter.
  • Combine one cup of the sugar with cocoa and flour. Beat the egg yolks with the milk and add them to the sugar mixture.
  • Add the sugar and egg mixture to the skillet with the melted butter or margarine and cook gently, stirring constantly until thick. (Watch this mixture closely as it has a tendency to burn)! Add the vanilla. Pour the mixture into the baked crust.
  • Beat the egg whites until soft peaks form; add the remaining 1/4 cup sugar and beat until meringue is glossy and stiff peaks form. Spread beaten egg whites over the hot filling be sure the whites touch the edges of the crust. Bake in the preheated oven for 10 to 15 minutes (or until the meringue is golden brown).

1 sleeve graham crackers (9 whole crackers)
2 tablespoons granulated sugar
6 tablespoons unsalted butter, melted
1 cup milk
1 cup granulated sugar
3 tablespoons all-purpose flour
1 tablespoon unsweetened cocoa powder
3 large eggs, separated
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
Pinch of kosher salt
1/4 cup granulated sugar

Steps:

  • For the crust: In a food processor, pulse the graham crackers and sugar until crumbs form. Pour in the butter and continue to pulse until the crumbs are coated. Press the mixture firmly into the bottom of a 9-inch pie plate. Set aside.
  • For the filling: In a small saucepan, heat the milk until hot but not simmering. To a medium saucepan, add the sugar, flour and cocoa and whisk together well. Lightly beat the egg yolks (saving the whites for the meringue) and pour into the flour mixture. Slowly add the hot milk, stirring. This will create a paste in the beginning, ensuring that the chocolate and flour blend smoothly. Place over medium heat and cook, stirring constantly, until very thick, about 5 minutes. The mixture will start to bubble sporadically; continue to stir and cook for another 2 minutes. Remove the pan from the heat and stir in the butter, vanilla and salt. Stir until the butter is completely incorporated.
  • Pour the filling into the crust and chill in the refrigerator, about 45 minutes.
  • For the meringue: Preheat the oven to 325 degrees F. With an electric mixer, beat the egg whites with the salt until stiff. With the mixer running, gradually add the sugar and beat until the whites are smooth and glossy. Spread the meringue on the pie, reaching the edges of the crust to seal in the filling. Bake until brown, 15 to 20 minutes. Cool completely before serving.

6 tablespoons unsalted butter, melted, plus more butter for the pan
9 graham crackers (about 1 sleeve)
1/4 cup hot chocolate or cocoa mix
Pinch fine salt
Four 8-ounce packages cream cheese, at room temperature
1 cup sugar
2/3 cup hot chocolate or cocoa mix
1 cup sour cream
6 large eggs, at room temperature
1 tablespoon pure vanilla extract
10 marshmallows

Steps:

  • For the crust: Position a rack in the center of the oven, and preheat to 325 degrees F. Butter the inside of a 9-inch springform pan.
  • Pulse the graham crackers in a food processor until finely ground. Add the butter, hot chocolate mix and salt, and pulse until the mixture comes together and holds its shape when squeezed. Pour the mixture into the prepared pan, and press it into the bottom to make an even layer. Bake until the crust is just firm, about 10 minutes. Let cool completely. Place the pan on a large piece of foil, and fold the foil up the sides of the pan. (This helps seal the pan, to keep water out while baking.)
  • For the filling: Wipe out the food processor. Pulse the cream cheese, sugar, hot chocolate mix and sour cream until completely smooth, without any lumps, scraping down the side of the bowl a few times. Add the eggs and vanilla, and pulse until incorporated. Pour the filling into the crust, and set the pan inside a roasting pan. Fill the roasting pan with enough hot water to go halfway up the side of the springform pan (but not above the foil).
  • Bake the cheesecake until the edge is set but the center jiggles slightly (when you gently shake the pan, the cheesecake should move in a cohesive wave motion), 1 hour 10 minutes to 1 hour 20 minutes. Turn the oven off, and open the door for a few seconds to let out some heat. Close the door, and let the cheesecake sit in the oven until cooked completely through, 1 hour more.
  • Transfer the springform pan to a cooling rack. Run a knife around the edge, and let the cheesecake cool to room temperature. Wrap and refrigerate overnight or up to 2 days.
  • Before serving, cut the marshmallows on the diagonal, and arrange them, cut-side down, in a neat line all over the top edge of the cheesecake.

For ease, we call for a premade graham cracker piecrust to serve as a simple base that supports the flavor of the pie, but if you're feeling up to it, a homemade graham cracker piecrust would be even better! 1 teaspoon instant coffee granules
3/4 cup granulated sugar

Steps:

  • Combine milk, cocoa, powdered milk, and instant coffee in a medium-sized saucepan. Over medium heat, bring the mixture to a simmer, stirring occasionally. Reduce the temperature to low to keep the mixture warm.
  • In a heatproof bowl, whisk together the sugar, cornstarch, salt. Add the egg yolks and beat until the mixture is smooth and pale yellow.
  • Measure out 1 cup of the warm milk mixture and slowly stream it into the egg mixture while whisking.
  • Bring the heat under the saucepan back to medium, and while whisking constantly, slowly stream in the egg mixture. Continue whisking constantly over medium heat until the mixture thickens to the consistency of a thick pudding, 5 to 6 minutes.
  • Remove from heat and whisk in butter and vanilla extract. Allow to cool for 5 minutes, then pour the mixture into the piecrust. Cover and chill for 12 hours.
  • Dollop the surface with marshmallow creme and smooth across the pie surface. Garnish with crushed peppermint candies, if desired.

1 graham cracker pie crust
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container Cool Whip
2 (3/4 ounce) packets hot cocoa mix
3 -4 tablespoons marshmallow cream (optional)

Steps:

  • 1) In large bowl combine Cool Whip and can sweetened condensed milk until thoroughly mixed.
  • 2) Next, add 2 packets hot chocolate and continue mixing until smooth.
  • 3) If choosing to use Marshmallow Cream, heat in microwave safe bowl until for about 25-30 seconds.
  • 4) Quickly pour Marshmallow cream into bottom of pie crust and smooth out over bottom before it starts to thicken up again.
  • 5) Pour Hot Chocolate mixture over Marshmallow Cream.

1 cup chocolate chips (or melting chocolate wafers)
4 tbsp hot cocoa mix
4 tbsp mini marshmallows

Steps:

  • Melt the chocolate in a glass bowl in the microwave. Use 15 second bursts, stirring in between until everything is smooth and pourable. It will take about 1-2 minutes.
  • Scoop some chocolate into the mold and use the back of a spoon or pastry brush to push the melted chocolate around the molds, making it thick enough along the sides and edges.
  • Place the molds into the freezer for 5-10 minutes or in the fridge for 30 minutes to set. A couple of minutes into them setting, take them out and brush/spoon extra chocolate on the top edges to make it thicker. Let set completely, then carefully pop the chocolate dome out of the mold and set aside on a cold plate.
  • Microwave an empty plate for 30 seconds to 1 minute, until warm, but not hot. Take one chocolate dome and place it on the plate for a couple of seconds to melt the edges. Working quickly, flip it around and add 1 tablespoon hot cocoa powder and mini marshmallows and any other add-ins you want.
  • Take another dome and melt its edge on the warm plate. Join the two domes together into a sphere and hold until sealed. Let set in the fridge or freezer while you make the rest of your spheres.
  • To serve: Put into a mug, pour on warm milk (or hot chocolate!) and watch the magic! Stir everything up and enjoy.

That's how you make frozen chocolate "hot"! You can still make the recipe without it, but it just won't be the same.

1 (14 ounce) can sweetened condensed milk
1/4 cup milk (at room temperature)
1 (11 1/2 ounce) package milk chocolate chips
2 teaspoons vanilla
1 1/4 teaspoons ground cinnamon
1/8 teaspoon cayenne pepper
2 cups heavy cream
1 (6 ounce) package Oreo cookie pie crusts

Steps:

  • Place beaters and mixing bowl in freezer. (This is for the heavy cream.).
  • Melt chocolate chips in double boiler or microwave. (Two minutes at 50% power usually works.) Cool.
  • In separate bowl, whisk together sweetened condensed milk and milk.
  • Whisk in melted chocolate.
  • Stir in vanilla, cinnamon and cayenne pepper.
  • Take bowl and beaters from freezer. Beat heavy cream until stiff peaks form.
  • Fold in chocolate mixture.
  • Transfer 3 cups mixture to freezer-proof bowl. Cover.
  • Pour remaining mixture into crust.
  • Freeze bowl and pie 2 hours.
  • Top pie with mixture in bowl.
  • Freeze overnight.
  • Top with whipped cream and chocolate shavings, if desired.
  • The preparation time does not include the first 2 hours in the freezer.

This is a good ol' basic, can't-go-wrong, everyone-loves-it, super-easy-to-make, been-around-forever chocolate pie with pudding filling recipe.

1 whole pie crust, baked and cooled (or can use Oreo or graham cracker crust)
1 1/2 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
3 c. whole milk
4 whole egg yolks
6 1/2 oz. weight bittersweet chocolate, chopped finely
2 tsp. vanilla extract
2 tbsp. butter
Whipped cream, for serving

Steps:

  • Combine the sugar, cornstarch, and salt in a medium saucepan. Stir or whisk together.
  • Pour in milk and egg yolks, and whisk together.
  • Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes (maybe less, maybe more; just watch it!) The second it starts to bubble and thicken (note: It should be thick like pudding!) remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is beautifully combined.
  • Pour the pudding into the pie crust (if there is extra, spoon it into small dishes) and place in the fridge to chill for 4 hours uncovered.
  • Cut into slices and serve with whipped cream!

3 egg yolks
1 cup water ( divided )
2/3 cup milk
2 tablespoons butter (or margarine)

For the Topping:
1 cup heavy cream (or whipping cream, chilled)
2 tablespoons confectioners sugar
1/2 teaspoon vanilla extract
Optional: grated or shaved semisweet or bittersweet chocolate

Steps:

  • Gather the ingredients.
  • Heat the oven to 400 F / 200 C / Gas 6.
  • In a bowl, combine the graham cracker crumbs with the 1/4 cup of granulated sugar and 6 tablespoons of melted butter. Mix well.
  • Pat the crumbs firmly into the bottom and up the sides of a pie plate.
  • Bake the pie crust for 8 to 10 minutes. Cool completely before filling.
  • Make the filling: Mix cocoa and flour in top of a double boiler over hot water and whisk in about half of the 1 cup of water, just enough to make a smooth paste.
  • Blend in the 1 cup of granulated sugar and the beaten egg yolks and add remaining water and milk. Cook over low heat, stirring until the mixture is thick; add the 2 tablespoons of butter and vanilla.
  • Pour the filling into the chilled pie crust. Chill thoroughly.
  • Make the whipped cream: In a medium mixing bowl with an electric mixer , beat the chilled whipped cream until fluffy and almost stiff.
  • Sift the confectioners' sugar over the whipped cream and add the vanilla. Beat until the cream forms stiff peaks.
  • Spread the whipped cream over the chilled pie or serve individual slices of pie with a dollop of whipped cream. Return the pie to the refrigerator to chill until serving time. If desired, sprinkle with grated or shaved chocolate.

  • Ladle the batter into each cup until it's about 1/2 inch from the rim. Bake until the cakes puff and begin to crack but the centers are still a bit runny, 13 to 17 minutes. Remove from oven. Sprinkle with marshmallows, then return to oven for 2 to 4 minutes, until the marshmallow tops begin to crisp. Remove from oven; let cool about 5 minutes. Sift the cocoa on top.
