3 tbsp olive oil
1 Spanish chorizo sausage (cubed)
1 large onion (chopped)
3 cloves garlic (chopped)
1 red pepper (chopped)
2 cups short grain rice
1/2 can diced tomatoes (drained)
4 cups chicken stock
pinch of saffron
pinch of salt
pinch of pepper
1 lb peeled cooked shrimp (you can use whatever size you like)
1 MSC certified lobster meat from one cooked lobster
1/4 cup frozen green peas
bunch of parsley washed for garnish

Steps:

  • In your cast iron pan (on medium heat), add olive oil, chorizo sausage, onion, garlic and red pepper . Saute until onions starts to soften up.
  • Add short grain rice and stir until the rice turns a little translucent
  • Add diced tomatoes, chicken stock (1 cup at a time), saffron, salt and pepper and turn the heat to medium low.
  • Stir and let rice cook in the chicken stock. Once the chicken stocks evaporates, continue to add the rest of the chicken stock in (one cup at a time until finish)
  • Add cooked shrimp, lobster, and frozen green peas. Stir to combine.
  • Taste the paella to ensure it has enough seasoning. Adjust if necessary. Add parsley as garnish.

Chicken:
1 tablespoon sweet or smoked paprika
2 teaspoons oregano
1 (3 pound) frying chicken, cut into 10 pieces
Paella:
1/4 cup extra-virgin olive oil
2 Spanish chorizo sausages, thickly sliced
Kosher salt and freshly ground pepper
1 Spanish onion, diced
4 garlic cloves, crushed
Bunch flat-leaf parsley leaves, chopped, reserve some for garnish
1 (15-ounce) can whole tomatoes, drained and hand-crushed
4 cups short grain Spanish rice
6 cups water, warm
Generous pinch saffron threads
1 dozen littleneck clams, scrubbed
1 pound jumbo shrimp, peeled and de-veined
2 lobster tails
1/2 cup sweet peas, frozen and thawed
Lemon wedges, for serving

Steps:

  • Combine the paprika and oregano in a small bowl. Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator.
  • Heat oil in a paella pan over medium-high heat. Saute the chorizo until browned, remove and reserve. Add chicken skin-side down and brown on all sides, turning with tongs. Add salt and freshly ground pepper. Remove from pan and reserve.
  • In the same pan, make a sofrito by sauteing the onions, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Then, add tomatoes and cook until the mixture caramelizes a bit and the flavors meld. Fold in the rice and stir-fry to coat the grains. Pour in water and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, chorizo, and saffron. Add the clams and shrimp, tucking them into the rice. The shrimp will take about 8 minutes to cook. Give the paella a good shake and let it simmer, without stirring, until the rice is al dente, for about 15 minutes. During the last 5 minutes of cooking, when the rice is filling the pan, add the lobster tails. When the paella is cooked and the rice looks fluffy and moist, turn the heat up for 40 seconds until you can smell the rice toast at the bottom, then it's perfect.
  • Remove from heat and rest for 5 minutes. Garnish with peas, parsley and lemon wedges.

1 tablespoon paprika
2 teaspoons dried oregano
salt and black pepper to taste
2 pounds skinless, boneless chicken breasts, cut into 2 inch pieces
2 tablespoons olive oil, divided
3 cloves garlic, crushed
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 pinch saffron threads
1 bay leaf
½ bunch Italian flat leaf parsley, chopped
1 quart chicken stock
2 lemons, zested
2 tablespoons olive oil
1 Spanish onion, chopped
1 red bell pepper, coarsely chopped
1 pound chorizo sausage, casings removed and crumbled
1 pound shrimp, peeled and deveined

Steps:

  • In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
  • Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
  • Spread rice mixture onto a serving tray. Top with meat and seafood mixture.

8 ounces hot Italian sausages or 8 ounces smoked sausage, sliced
1 medium onion, chopped
2 garlic cloves, minced
1 (19 ounce) can stewed tomatoes, undrained
1 (10 ounce) can chicken broth
1 medium green pepper, chopped
12 medium shrimp, cleaned
1/2 teaspoon turmeric
2 cups Minute Rice, uncooked
1/2 cup frozen peas
3 tablespoons lemon juice, freshly squeezed
2 tablespoons fresh parsley, chopped

Steps:

  • Combine chicken, sausage, onions, and garlic in a large microwaveable casserole dish. Microwave , uncovered, on High 10 minutes, stirring every 3 minutes.
  • Add tomatoes, chicken broth, peppers, shrimp and turmeric; stir. Cover. Microwave 6 minutes.
  • Stir in Minute Rice and peas; cover. Let stand 10 minutes. Drizzle with lemon juice; sprinkle with parsley.

400g can chopped tomatoes
600ml chicken stock
1 heaped tsp smoked paprika
2 pinches of saffron
1 onion , chopped
3 garlic cloves , crushed or finely chopped
4 tbsp olive oil
300g paella rice
4 skinless, boneless chicken thighs, cut in half
200g chorizo , sliced
85g frozen peas
150g raw king prawns , peeled if you like
250g mussels , cleaned
1 lemon , quartered (optional)

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Combine the tomatoes, stock, paprika and saffron in a large heatproof jug, then microwave for 5 mins on high, or until steaming hot. Or, heat in a pan on the hob.
  • Put the onion and garlic in a large ovenproof frying pan or roasting tin, drizzle over the olive oil and stir to coat. Roast for 20 mins, or until the veg is starting to brown.
  • Stir in the rice, chicken, chorizo and hot stock mix. Season and bake for 20 mins (don't cover the pan).
  • Gently stir in the peas, dot over the prawns and press the mussels in, hinged-side down, so they're standing up. Arrange the lemon wedges around the edge, if using. Bake for 5-10 mins more until the rice, chicken and prawns are cooked, and the mussels have opened (discard any that stay shut). Check for seasoning, and serve.

1 tbsp olive oil
1 onion, chopped
1 tsp each hot smoked paprika and dried thyme
300g paella or risotto rice
3 tbsp dry sherry or white wine (optional)
400g can chopped tomatoes with garlic
900ml chicken stock
400g frozen seafood mix
1 lemon, ½ juiced, ½ cut into wedges
handful of flat-leaf parsley, roughly chopped

Steps:

  • Heat the olive oil in a large frying pan or wok. Add the onion and soften for 5 mins.
  • Add the smoked paprika, thyme and paella rice, stir for 1 min, then splash in the sherry, if using. Once evaporated, stir in the chopped tomatoes and chicken stock.
  • Season and cook, uncovered, for about 15 mins, stirring now and again until the rice is almost tender and still surrounded with some liquid.
  • Stir in the seafood mix and cover with a lid. Simmer for 5 mins, or until the seafood is cooked through and the rice is tender. Squeeze over the lemon juice, scatter over the parsley and serve with the lemon wedges.

4 whole chicken breasts, halved
salt & freshly ground black pepper
1/4 cup butter, melted
1/4 teaspoon coriander powder
1/3 cup cooking sherry
4 garlic cloves, minced
1 1/2 cups long-grain rice
1/3 cup Spanish olive oil
1 green pepper, cut in 1/2 inch long strips
2 cups clam broth
1 cup chicken broth
1 lb tomatoes, ripe, chopped
1/2 teaspoon salt
1 1/2 teaspoons sugar
1 lb medium shrimp, shelled and deveined
1 dozen clam
1 dash cayenne pepper
3/4 cup pimento stuffed olive

Steps:

  • Place chicken breasts, skin side up, in greased 13x9x2" baking pan.
  • Season with salt and pepper. Brush with melted butter.
  • Sprinkle with coriander, cover with foil and bake at 350*F for 40 minutes.
  • Uncover; sprinkle with sherry and bake 20 minutes longer, basting occasionally with pan drippings.
  • Cook garlic, onion, and rice in hot olive oil in large skillet until golden.
  • Add green pepper, broth, tomatoes, salt and sugar. Cover and simmer gently for 25 minutes. Stir occasionally.
  • Stir in chicken, shrimp, clams, cayenne, and olives. Cover and continue cooking 5 minutes, or until clams pop open and liquid is absorbed.

There are as many Spanish recipes for paella as there are regions in Spain. Seafood paella is arguably the most famous, but many inland recipes use similar ingredients substituting pork or beef for the fish.

1 large Spanish onion
3 tablespoons olive oil
2 large garlic cloves
2 cups chicken broth
1 cup short-grain rice or 1 cup arborio rice
12 large cooked prawns or 12 large shrimp, in shells
1 lb mussels
1 lb clam
salt & fresh ground pepper

Steps:

  • Heat olive oil in large saute pan or paella pan. Chop onion and garlic and add to the pan. Saute until the onion is translucent. Slice chorizo and add to pan. Fry until golden.
  • If you have 11 ounces of small squid, add them whole; otherwise, cut the larger squid into rings and chop tentacles. Add squid to pan and saute for 2 minutes on high heat.
  • Seed and slice the bell pepper. Seed and dice the tomatoes. Add both to the dish and simmer gently for 5 minutes. Add broth and wine. Stir well and bring to a boil.
  • Add rice and saffron. Season to taste with salt and pepper. Spread the rice and other ingredients in an even layer across the pan. Bring liquid back to a boil, then lower the heat and simmer for 10 minutes.
  • Add peas, prawns, mussels and clams, stirring gently to incorporate. Cook for another 20 minutes until rice is tender and the shellfish has opened. Discard unopened shells and add more broth if the dish seems dry.
