SNICKERDOODLE SKILLET COOKIE

Snickerdoodle Skillet Cookie image

The way we get this giant snickerdoodle to crack on top is to make one big ball of dough, roll it in cinnamon sugar and then put the whole thing in a cast-iron skillet without pressing it down. It spreads as it bakes, making the signature crack in the center while the sugar on the bottom caramelizes into an irresistible crust.

Time 1h

Yield 8 servings

Number Of Ingredients 9

1 cup (2 sticks) unsalted butter
2 cups plus 2 tablespoons all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon fine salt
1 cup plus 2 tablespoons granulated sugar
1/4 cup packed light brown sugar
1 large egg
2 teaspoons ground cinnamon

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Melt the butter in a 10-inch cast iron skillet over medium heat, then set aside to cool slightly, 5 minutes.
  • Whisk the flour, baking soda, cream of tartar and salt together in a medium bowl. Vigorously whisk 1 cup of the granulated sugar, brown sugar and egg together in a large bowl. Whisk in the melted butter. (Do not wipe out the skillet.)
  • Add the flour mixture and continue whisking until the dough comes together. Let the dough and buttered skillet rest, separately, in a cool place for 30 minutes. (This allows the dough to firm up and the skillet to cool.)
  • Mix together the remaining 2 tablespoons granulated sugar and the cinnamon in a large bowl. Shape the dough into a large ball and gently roll it in the sugar mixture until evenly coated.
  • Place the dough ball in the center of the prepared skillet. Bake until the sides are browned, the center is still soft, and the surface of the cookie cracks, about 35 minutes, rotating once halfway through. Cool on a wire rack at least 15 minutes. Cut into wedges and serve warm or room temperature. Store in a sealed container at room temperature for up to 3 days.

SOFT SNICKERDOODLE COOKIES

Soft Snickerdoodle Cookies image

These snickerdoodle cookies are so delicious, and they have the best texture. They are so fast to put together too! I actually got it from an old recipe that my Great Grandma had clipped out of a newspaper. Grandma always knows best!

SNICKERDOODLE COOKIE DOUGH

Snickerdoodle Cookie Dough image

Think of this eggless dough as cookie butter and use it as you would jam or peanut butter; just a little bit will enhance your toast, milkshake, ice cream - or make a cookie sandwich (smush some of the dough in between two vanilla wafers).

Time 10m

Yield about 1 cup

Number Of Ingredients 8

1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1/3 cup packed light brown sugar
1/3 cup granulated sugar
6 tablespoons unsalted butter, at room temperature
2 tablespoons plain yogurt

Steps:

  • Microwave the flour in a microwave-safe bowl for 1 minute. Remove and stir well. Microwave for an additional minute or until the temperature reaches 180 F. Sift into a medium bowl, then whisk in the cinnamon, baking soda and salt (see Cook's Note).
  • Beat the brown sugar, granulated sugar, butter and yogurt with an electric mixer on medium-high speed in a large bowl until well combined, about 2 minutes. Add the flour mixture and mix on low speed until well incorporated. Turn off the beaters and use your hands to help combine if needed. Refrigerate in an airtight container for up to 5 days.

  • In a small bowl or mug, combine melted butter, flour, 2 tbsp white sugar and egg. Mix together with a mini whisk until batter is completely smooth.
  • Line a large, round and microwave-safe plate with parchment paper. Using a spatula, scoop out cookie dough onto parchment paper. Make sure to use your spatula to really scrape the bowl/mug to get all of the sticky batter onto your parchment paper.
  • Using the spatula, shape the dough into a round circle. In a separate bowl, mix together the cinnamon and 1/2 tsp sugar. Sprinkle the mixture evenly across the surface of your cookie round.
  • Cook the cookie in the microwave at full power for about 50 seconds. I don't recommend going over 50 seconds as your cookie can quickly overcook and become hard. When you gently press the surface of the cookie with your finger, it should feel very soft and not quite done, however, no raw dough should stick to your finger.
