The most fantastic, EASY candy you can make... sinfully delicious and habit forming. I have only seen this fail once, and then the disaster was the most marvelous gooey pecan praline ice cream topping.

1 pound light brown sugar
1 cup heavy whipping cream
2 tablespoons light corn syrup
1 tablespoon butter
2 cups chopped toasted pecans

Steps:

  • In a deep, microwave-safe bowl, mix together brown sugar, whipping cream, and corn syrup. Microwave on High for 13 minutes.
  • Mix in butter until well blended. Then stir, stir, and stir until mixture begins to cool and get creamy. Stir in chopped nuts. Drop by tablespoonfuls onto waxed paper to cool.

1/2 pint whipping cream
2 tablespoons butter
1 teaspoon vanilla
2 cups pecans, broken up

Steps:

  • Mix Brown sugar and whipping cream in 2 qt microwave bowl.
  • Place in Microwave on High for exactly 13 minutes.
  • Remove and add butter vanilla and nuts.
  • mix for about 1 more minute.
  • Using tablespoon place on wax paper until cool.
  • Walnuts can be used also.

This recipe came from Roma Jean. I had never tried to make pralines until now and these are so yummy. I was part of a ladies day workshop at my church and I made 9 different desserts. This was a favorite! And I brought my microwave to the classroom and made them on site.

2 cups brown sugar
1 cup half-and-half
2 tablespoons Karo syrup
2 cups pecans, chopped

Steps:

  • Mix brown sugar, half & half and Karo Syrup in mirowave safe bowl.
  • (Microwave 12 or 13 minutes).
  • Add 2 Tablespoons of Butter.
  • Stir and Stir and Stir and Stir...... until it starts thickening.
  • Add 2 cups chopped pecans and stir.
  • Drop in spoonfuls onto wax paper. Allow to cool.

Here's a recipe I adapted from a stove-top recipe in a church women's collection back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. Check out the companion recipe for Peanut Patties. These candies make great gifts----I can make up a batch in less time than it takes me to "run" to the store.

1/4 cup water
1/4 cup light corn syrup
1 cup white sugar
1 cup dark brown sugar
1/8 teaspoon salt (dash)
1 teaspoon oleo
1 teaspoon vanilla
2 cups pecans (halves and or or pieces)
1/4 cup powdered sugar (apx.)

Steps:

  • Put 1st six items in large glass bowl. Cover.
  • Cook on High 4 minute ( 5 ).
  • Stir. Cook on High 4 minute (6 ).
  • Add vanilla and pecans.
  • Stir, then cook on High 2min. (5).
  • Stir in powdered sugar.
  • Drop by teaspoonfuls onto waxed paper over newsprint. If candy gets too thick, reheat 20-30 secs.
  • Add more nuts at the end if you run out of nuts before candy, (but these don't taste as good as the cooked nuts.).
  • You can also drizzle the extra candy at the end over the first pralines which don't have as much because it was too hot at first.
  • It's the powdered sugar that makes the syrup crystalize as it cools.
  • You can cook on stove---get syrup to softball stage -234*; stir constantly.

I found this recipe when my stove was broken and I wanted to make pralines for my father, who loved them. These have turned out well for me, but the cooking time can be tricky, especially when the humidity is up--don't try to make them when it's humid. They are very good!

2 cups sugar
1 teaspoon baking soda
1 cup buttermilk
3/4 cup butter
1 teaspoon vanilla
1 cup pecans

Steps:

  • Combine sugar, soda, buttermilk and butter in large (3-4 quart) microwave or glass bowl. Microwave 5 minutes on medium, uncovered, to melt. Stir until butter is blended. Microwave on medium, uncovered, for 22-25 minutes or until soft ball stage. Add vanilla, beat with mixer until mixture forms soft peaks. Mix in pecans before finishing beating, if desired. Drop by teaspoons onto wax paper to make patties. If you prefer to have the pecans on top, place them on at this point instead of mixing them in before. If it gets stiff while dropping, heat briefly in the microwave. Cool until firm. Store in airtight container.

2/3 cup whipping cream, unwhipped
1/8 teaspoon salt
2 tablespoons margarine
1 1/2 cups coarsley chopped pecans
1 teaspoon vanilla

Steps:

  • In a large microwave-safe bowl combine brown sugar, whipping cream, salt, margarine and nuts; microwave on HIGH for 9 minutes, stirring once.
  • Remove from microwave and let rest 1 minute, then stir in vanilla; continue stirring with wooden spoon for 3 minutes more.
  • Drop by teaspoonfuls onto buttered waxed paper (if the mixture is "runny" allow to cool about 30 seconds more and then try dropping from the spoon again).

There are tons of microwave praline recipes out there, but this is the one that tastes like the ones my mawmaw made, before microwaves were a thought..LOLOL The ones in stores aren't like hers, they are dark brown and creamy. Her pralines were thinner, glassy looking surface, and very sugary!

1/3 cup evaporated milk
1 cup sugar
3/4 cup pecans
1 1/2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • combine all except for vanilla extract in a microwave safe 1 quart bowl or measuring cup.
  • Microwave on high for about 6 minutes, stirring every 2 minute.
  • Add Vanilla extract and stir quickly.
  • Drop by teaspoonfuls onto waxed paper and allow to harden.
  • If it sets up too fast while in the bowl just add a bit of evaporated milk.
  • My problem was always spooning them out before the sugary mixture was thick enough or had cooled enough. I solved that by stirring quickly and checking to see if it starts to harden around the edges of my spoon or bowl. That's when it's ready to spoon out. It's very humid here so unsure how different climates will affect the outcome.
