Perfect Microwave Rice image

A different way to make Perfect Rice in the microwave. I didn't believe that it would cook till tender without being covered, boy was I wrong. From cookbook author Kathleen Daelemans.

2 cups long grain rice
3 1/2 cups canned broth or 3 1/2 cups homemade stock
1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
salt

Steps:

  • Place all ingredients except salt in a large microwave safe bowl.
  • Rice doubles in size during cooking so choose a container large enough to accommodate final product.
  • Microwave uncovered on high for 10 minutes.
  • Then microwave uncovered on medium-low for 15 minutes.
  • Do not stir rice at anytime during cooking process.
  • Season with salt and fluff with a fork before serving.

But if you are planning ahead you can cook a little more than you are going to eat at dinner so you have the makings of the next day's lunch. This combination of cooked rice, vegetables and meat can accompany virtually any sauce you can imagine putting on it: vinaigrette, sesame dipping sauce, tahini sauce, pico de gallo, onion chutney, pesto, hummus. Simply pop it in the office microwave for a couple of minutes and eat.

1 1/2 cups cooked rice
1 cup (more or less) leftover cooked vegetables or meat

  • Toss ingredients in a large bowl, stir to combine and season with salt and pepper. Microwave for 1 minute.

Steps:

  • In a bowl, combine the rice, water, soy sauce, sesame oil, and bacon. Stir, then microwave, covered, for about 6-8 minutes until the rice is fully cooked.
  • Mix the frozen peas and carrots into the rice.
  • In a microwaveable mug, beat the eggs with the salt.
  • Microwave the eggs and the rice again for about 1-2 minutes, until the eggs are fully cooked.
  • Break up the egg into small bits, then mix it in with the rice.

Steps:

  • Put rice in a micro-safe bowl.
  • Add water.
  • Swirl for 2 seconds.
  • Add salt.
  • Swirl again.
  • Cover with vented plastic wrap or a loose plastic cover.
  • Nuke on high for 12 minutes.
  • Let rest for 5 minutes.
  • Dump rice into a strainer and rinse under cold water.
  • Place in micro-safe serving dish (or back in the rinsed out bowl), add seasonings to taste (onion soup mix, salt and pepper, hot chilles, whatever you like in your rice) and heat on medium for 5 minutes until it reaches desired serving temperature.
